From the Caribbean...a deliciously sweet way to fix plaintains, also known as cooking bananas. Plaintains are sweet and soft when their skins are almost black! But in this recipe, with the sugary syrup, you can use fruit not quite at this point! YUM!

2 plantains
1/3 cup brown sugar
1/2 cup butter
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup water

Steps:

  • Peel, slice and arrange plaintains in baking dish.
  • Combine all remaining ingredients in saucepan and slow boil until syrupy.
  • Pour sauce over plaintains.
  • Bake at 325 until tender, about 30 minutes or so.
  • Lower heat and keep warm until ready to serve.

1 very ripe plantain (black skin)
1 teaspoon margarine or 1 teaspoon olive oil
1/8 teaspoon allspice
shredded coconut or cheese
3 -6 whole cloves
1 teaspoon raw sugar

Steps:

  • Preheat oven to 350 degrees.
  • Make a cut lengthwise on the plantain peel; open it and cut the plantain into two halves, again lengthwise.
  • Grease a baking sheet or cover a sheet with foil; place the plantain over is peel on the tray.
  • Insert the cloves, distributing them evenly along the two halves.
  • Sprinkle some of the raw sugar and allspice over.
  • Put small amounts of butter or oil on the plantain halves and sprinkle the coconut or cheese over top.
  • Bake about 45 minutes or until the plantain become golden.
  • Remove from oven and discard cloves.

¼ cup peanut oil for frying
2 tablespoons butter
3 yellow plantains (very ripe), peeled and cut in 1-inch-thick slices
3 tablespoons brown sugar
¼ teaspoon salt

Steps:

  • Heat peanut oil and butter in a large skillet over medium-high heat until the butter begins to sizzle. Gently toss plantain slices with brown sugar, then place into hot oil. Fry until the plantains begin to turn golden brown, then turn over, and continue frying until they have caramelized, about 2 minutes per side.
  • Drain plantains on a paper towel-lined plate and sprinkle with salt before serving.

1 tablespoon unsalted butter
1 tablespoon sugar
2 plantains (sweet), cut into 1/3-inch slices
1/3 cup apple juice
1 1/2 teaspoons ground cinnamon

Steps:

  • In a 9-inch skillet, melt the butter over medium heat. Add the sugar and cook, stirring, until the syrup is a light caramel color, about 2 minutes.
  • Add the plantains, tossing to coat, and cook until tender, about 3 minutes. Add the apple juice and boil 1 minute, or until thickened slightly. Stir in the cinnamon and remove from the heat.
  • Divide the plantains among 4 dessert plates and spoon the juices over each.

cooking spray

Steps:

  • Preheat oven to 450°F.
  • Coat a nonstick cookie sheet with cooking spray.
  • Cut the ends off of the plantains and peel.
  • Cut each plantain on the diagonal into 1/2 inch slices.
  • Arrange in single layer and coat tops with cooking spray.
  • Bake, turning occasionally, for 10-15 minutes, until plantains are golden brown and very tender.
