The best spaghetti sauce! We had this every Wednesday when I was growing up. The secret ingredient is the nutmeg. Just a pinch. Delicious! Serve over spaghetti.

2 tablespoons olive oil
1 onion, diced
¼ cup chopped celery
1 small garlic clove, minced
1 pound ground beef
40 ounces Italian-style stewed tomatoes
2 (6 ounce) cans tomato paste
1 (8 ounce) package sliced mushrooms, or to taste
½ cup grated Parmesan cheese, or to taste
¼ cup parsley
1 ½ teaspoons salt
1 teaspoon white sugar
¼ teaspoon ground nutmeg
½ teaspoon dried oregano
⅛ teaspoon ground black pepper
¼ teaspoon baking soda, or to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Saute onion, celery, and garlic in hot oil until softened, about 5 minutes; add beef and cook, stirring to break into small chunks, until no longer pink, 5 to 7 minutes more.
  • Stir stewed tomatoes and tomato paste with the beef mixture until smooth; add mushrooms, Parmesan cheese, parsley, salt, sugar, nutmeg, oregano, and black pepper. Cook, stirring occasionally, until the sauce is flavorful, about 10 minutes.
  • Stir baking soda into the sauce. Continue cooking until you can taste a reduction in acidity of the sauce, about 10 minutes more.

4 cups imported canned tomatoes
1/4 cup olive oil
1 teaspoon finely minced garlic
1/2 cup finely chopped onion
1 cup chopped cooked pork or stewed beef
Salt to taste, if desired
Freshly ground pepper to taste
1/4 cup tomato paste
1/4 cup finely chopped parsley
2 tablespoons finely chopped fresh basil or half the amount dried
1/2 teaspoon dried hot red pepper flakes

Steps:

  • Put the tomatoes in a saucepan and cook 30 minutes or longer until reduced to three cups.
  • Heat the oil in a casserole and add the garlic and onion. Cook, stirring, until wilted. Add the meat and cook, stirring, about one minute.
  • Add the tomatoes, salt, pepper and tomato paste. Stir to blend. Add the parsley, basil and pepper flakes. Cook, stirring, 10 minutes.

2 pounds lean ground beef
1 pound ground pork
2 tablespoons olive oil
2 onions, chopped
1 clove garlic, crushed
3 cups red wine
2 pounds fresh mushrooms, sliced
¼ teaspoon dried rosemary
4 tablespoons chopped fresh oregano
¼ teaspoon chopped fresh thyme
3 (29 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons grated Parmesan cheese

Steps:

  • In a large skillet, brown beef and pork over medium heat until no longer pink; set aside.
  • In a large skillet, warm olive oil over medium heat and saute onions and garlic until tender; add about 1/2 cup of wine; mix well.
  • Add mushrooms, rosemary, oregano and thyme to skillet and add another 1/2 cup wine; saute until tender.
  • Add browned meat, tomato sauce and tomato paste to mixture; simmer for 1 hour and add the remaining 2 cups of wine.
  • Simmer sauce on low for 2 to 3 hours, stirring occasionally; serve.

1/4 cup extra-virgin olive oil
1/4 teaspoon red pepper flakes
1 large onion, diced
6 cloves garlic, minced
1/4 cup Italian tomato paste
Four 28-ounce cans whole peeled tomatoes, with liquid
2 teaspoons Kosher salt plus to taste
Freshly ground black pepper
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground pork
1 tablespoon dried savory or rosemary, crumbled into small pieces
1 tablespoon dried thyme
1 tablespoon dried oregano
1 tablespoon fennel seeds, cracked
2 bay leaves
Rind of Parmesan, about 2- to 4-inches long (optional)
1/2 to 1 cup grated Parmesan

Steps:

  • In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the pepper flakes and cook for 15 seconds. Add the onion and cook, stirring occasionally, until golden brown, about 15 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the tomato paste and cook, stirring constantly, for 1 minute. Add the tomatoes one at a time, crushing them by hand as you go. Season with 1 teaspoon salt and pepper to taste. Simmer the sauce over low heat, covered. Heat a large skillet over medium-high heat. Add the beef, pork, veal, savory, thyme, oregano, and fennel seeds. Season with 1 teaspoon salt and pepper. Break up the meat with a wooden spoon, and cook until it loses its raw color, about 7 minutes. Add the meat to the sauce, holding back any excess fat. Add the rind of the Parmesan, if using. Simmer the sauce, covered, over low heat, for 1 1/2 hours. (If the sauce gets too thick adjust the consistency with water.) Taste and season with salt and pepper to taste. Just before serving, remove the Parmesan rind and add the grated cheese. Cook's Note: 3 to 4 cups of this sauce will dress 1 pound of pasta, like spaghetti or rigatoni. It is also perfect for lasagna. This sauce freezes very well.

6 cloves garlic, minced
1/2 cup chopped onion
1 lb ground beef, 85% lean
29 oz canned tomato sauce (such as Hunt's tomato sauce)
1 tsp Italian seasoning

Steps:

  • First, add chopped onions, minced garlic and olive oil to a large frying pan. Cook on med/high heat for 5 minutes. Stir midway through.
  • Next, add the ground beef and break up into small pieces. Brown for 5-10 minutes.
  • Then, add Italian seasoning, salt, pepper and canned tomato sauce. Cook, covered, on high for 15-20 minutes. Stir occasionally.

2 tablespoons olive oil
1 cup chopped onion
1 garlic clove, minced
1 lb lean ground beef
1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1 whole bay leaf
1 -2 cup coarsely cut up mushroom
2 1/2 cups diced carrots
2 1/2 cups diced celery
2 1/2 cups diced green peppers
3 1/2 cups red wine

Steps:

  • Heat oil in a large heavy saucepan; add onion; sauté over low heat, stirring, until tender and golden, about 5 minutes.
  • Add the garlic, sauté 1 minute.
  • Meanwhile, brown the ground beef in a skillet, stirring to crumble meat; drain off fat; add the onion mixture.
  • OPTIONAL: now is when you would add the mushrooms, vegetables or red wine.
  • Sauté until tender or until the wine is reduced by half.
  • Add the tomatoes, tomato sauce and paste, 1 tsp salt, the basil, oregano, pepper and bay leaf.
  • Heat over medium-low heat to simmering.
  • Simmer, uncovered, over low heat, stirring occasionally until sauce is thickened and flavourful, about 1 hour 15 minutes.

This is a recipe I got from my father who got it from a little old lady he knew from Italy. I always simmer this sauce with my meatballs (recipe posted). You can also add sausage if you like. This sauce is to die for!!!!

1 (28 ounce) can peeled plum tomatoes
2 cloves garlic
1 small onion, diced
6 cloves
1 teaspoon basil
1 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
2 tablespoons sugar
1/4 cup extra virgin olive oil
1/4 cup grated cheese

Steps:

  • In a large pot, sauté onion and garlic in olive oil.
  • Empty plum tomatoes into large bowl and squash with your hands.
  • Add all ingredients (including any meatballs or sausage you want to add) to pot and simmer for 3 hours.
