Such a pretty and yet so easy and great tasting potato salad my whole family loves. Even a little seeded and diced chilli can be added and pine nuts can be used in place of sesame seeds if you prefer. I use different colour capsicums for colour but you can use just one colour, and it still tastes great!!!

750 g potatoes, peeled & cut into large cubes
2 carrots, finely diced
2 stalks celery, thinly sliced
3 spring onions, sliced
1/4 red capsicum, diced
1/4 green capsicum, diced
1/2 cup corn kernel, drained
1/2 cup mayonnaise
1/2 cup cheddar cheese, grated
1/2 cup light sour cream
1 tablespoon sweet corn relish
1 tablespoon parsley, finely chopped
2 tablespoons toasted sesame seeds

Steps:

  • Cook potatoes in boiling water until tender (do not overcook), drain and cool.
  • When cool combine potatoes with carrots, celery, spring onions, capsicum and corn.
  • Mix together mayonnaise, cheddar cheese, sour cream, corn relish and parsley.
  • Toss the vegetables with mayonnaise mixture until well coated, sprinkle with toasted sesame seeds and serve.

I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

4 large potatoes (about 3 pounds)
2 large eggs, lightly beaten
1/2 cup all-purpose flour
1/2 cup finely diced onion
1 teaspoon salt
1/8 teaspoon pepper
Oil for frying
Optional: Maple syrup or applesauce

Steps:

  • Peel and shred potatoes; place in a bowl of cold water. Line a colander with cheesecloth or paper towels. Drain potatoes into cloth and squeeze out as much moisture as possible. In a large bowl, combine the potatoes, eggs, flour, onion, salt and pepper., In an electric skillet, heat 1/4 in. oil over medium heat. Drop batter by 1/4 cupfuls into oil, about 3 in. apart. Press lightly to flatten. Fry until golden brown, about 4 minutes on each side. Drain on paper towels. Repeat with remaining batter. If desired, top with maple syrup or applesauce.

1/2 cup chopped yellow onion
1 (10 3/4 ounce) can condensed cream of mushroom soup
16 -20 ounces chunk-style frozen hash brown potatoes, thawed
1/2 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
1 1/4 cups milk
1 small green bell pepper, cut into thin strips
1 cup sharp cheddar cheese, grated
2 tablespoons chopped pimiento (drained)
1 1/4 cups crumbled cheese crackers, divided (i.e., cheese-its, cheese nips, etc.)

Steps:

  • Preheat oven to 375 degrees F. Grease an 11x7" or 9x13" pan and set aside.
  • In a medium skillet, melt butter over medium heat. Saute onion until tender, about five minutes.
  • In a large bowl, combine soup and milk. Add potatoes, onions, cheese, peppers, pimentos, salt and pepper, and 1/2 cup of the cracker crumbs.

1 yellow onion
1 egg, beaten
1 teaspoon salt
2 tablespoons all-purpose flour

½ yellow onion, grated

1 package frozen organic O'Brien potatoes
1/2 package organic mixed baby peas and carrots
1/4 package organic corn
0.25 (16 ounce) package green beans, 16 oz. (you may need to chop these smaller for younger kids before you cook)
1/8 teaspoon turmeric or 1/8 teaspoon favorite curry powder
olive oil, to coat

Steps:

  • 1. Combine oil and spice in large (I mean LARGE) mixing bowl.
  • 2. Add all ingredients into the bowl, stirring to coat all veggies with oil and spices.
  • 3. You now have a choice in cooking methods:.
  • a. You can dump all into a large skillet and fry on stove top until crispy and cooked through, or.
  • b. You can pour the mixture into a baking pan (or I like to use my big cast iron skillet) and bake at 350 degrees for about 30-45 minutes, stirring once after 10 minutes, then leaving alone so a crunchy top will form.
  • Tip: shivasgirl's kids think this is Indian food, so she usually serves with pooris (a deep fried bread), but they have devoured this dish all by itself.
