Posted in response to a "Lasagna" Talk Thread. This recipe is from my friend's mother in law. This recipe is perfect for using up leftover turkey after Thanksgiving or Christmas.

9 lasagna noodles, cooked
2 cups mozzarella cheese, grated
1/4 cup butter
2 cups sliced mushrooms
1 onion, diced
4 cups tomato sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon italian seasoning
1 teaspoon basil
1 teaspoon oregano
1 teaspoon garlic powder
1/3 cup butter
1 cup chicken broth
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups milk
2 cups cooked turkey
2 cups chopped fresh broccoli
1/2 cup parmesan cheese

Steps:

  • Place 1/2 Tomato sauce mixture on the bottom of a 9x13 inch pan.
  • Top with 3 noodles.
  • Then 1/2 of the broccoli sauce.
  • Followed by 3 more noodles.
  • Add rest of the broccoli sauce, add the last 3 noodles.
  • Top with the last of the tomato sauce and finish with the mozzarella cheese.
  • Bake at 350 degrees for 30 to 40 minutes.

1/2 pound sliced baby portobello mushrooms
2 shallots, chopped
2 teaspoons olive oil
2 cups cubed peeled butternut squash
1 cup chopped sweet red pepper
1/2 cup sliced fennel bulb
2 cups reduced-sodium chicken broth, divided
1/3 cup all-purpose flour
1/2 cup 2% milk
3 cups cubed cooked turkey breast
2 tablespoons sherry or additional reduced-sodium chicken broth
1 teaspoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
10 sheets phyllo dough (14x9-inch size)
Refrigerated butter-flavored spray

Steps:

  • In a large skillet, saute mushrooms and shallots in oil until tender. Add the squash, red pepper and fennel; saute 5 minutes longer. Add 1/4 cup broth. Cover and cook over medium-low heat until vegetables are tender, about 15 minutes. , Sprinkle flour over vegetables; cook and stir for 1 minute. Gradually add milk and remaining broth. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in the turkey, sherry and seasonings; heat through. Transfer to a 2-qt. baking dish coated with cooking spray. , Stack all 10 phyllo sheets. Roll up, starting with a long side; cut into 1/2-in. strips. Place strips in a large bowl and toss to separate; spritz with butter-flavored spray. Arrange over turkey mixture; spritz again. Bake, uncovered, at 425° until golden brown, 10-15 minutes.

ROASTED TURKEY STOCK

When you're making a turkey, making stock with the bones is the logical next step. This recipe, from the Los Angeles chef Suzanne Goin, has the usual aromatics - carrots, celery, onions - plus a concentrated shot of white wine and a dried chile, which add a welcome breath of freshness. (Sometimes poultry stock can taste flat.) Roasting the bones and the vegetables in the same pan streamlines the process and adds depth of flavor. You can use this stock in virtually any recipe that calls for chicken stock (except for chicken soup).

1 leftover carcass from a 10- to 15-pound roasted turkey, preferably including neck, wing and leg bones
4 or 5 onions, quartered (no need to peel; just rub off any papery skins)
2 large or 3 small carrots, peeled and cut into chunks
4 large or 5 small celery ribs, cut into chunks
2 cups white wine
2 large or 3 small garlic cloves, smashed and peeled
4 sprigs fresh thyme
2 bay leaves
1 teaspoon black peppercorns
1 whole arbol (or another small dried red) chile
Kosher salt

Steps:

  • Heat oven to 450 degrees. Using a sturdy knife or your hands, cut or tear turkey carcass into large pieces. Arrange in a single layer in a roasting pan and roast until brown and sizzling, 20 to 25 minutes.
  • Remove from oven and transfer pieces to a stockpot.
  • Add onions, carrots and celery to the empty roasting pan and place over medium heat. Sauté briefly, just to loosen the crusty turkey bits from bottom of pan.
  • Return pan to oven and cook until vegetables are browned around the edges, 20 to 25 minutes.
  • Remove pan from oven and place it over medium heat. Add white wine and cook, stirring, until wine is reduced to a syrup, about 3 minutes.
  • Add wine-vegetable mixture to stockpot. Add garlic, thyme, bay leaves, black peppercorns and chile. Add 6 quarts water and place over medium-high heat just until mixture comes to a boil.
  • Immediately reduce heat to low, skim any foam floating on top and simmer, skimming as needed, for 3 hours. Add 1 teaspoon salt and taste. If stock tastes watery, keep simmering until stock is flavorful. Taste for salt again and add more if needed.
  • Strain stock through a sieve into a large container or containers. Discard solids. Let stock cool slightly, then refrigerate. Skim off any fat from the top of the stock. Use within 4 days or freeze.

1 lb lean ground beef
1 cup finely diced onion
2 tsp garlic salt
1/2 tsp black pepper
2 cans (8 oz. each) tomato sauce
1 tsp dried Italian seasoning
1 tsp sugar
1/2 cup dry white wine or water
1 pkg (8 oz.) cream cheese
2 cups sour cream
1 cup small curd cottage cheese
oz 12 to 16 egg noodles, cooked
1/2 cup grated parmesan cheese
cups 1 to 2 crushed garlic croutons
3 Tbsp butter, cut in small pieces

Steps:

  • In a large skillet, brown beef with onion. Drain any grease. Season with garlic salt and pepper. Stir in tomato sauce, Italian seasoning, sugar and wine or water. Cook for a few minutes and remove from heat.
  • Use a mixer to beat together the cream cheese, sour cream and cottage cheese.
  • Spoon 1/2 of the noodles into a 9 x 13" casserole dish that has been sprayed with cooking spray. Cover noodles with the cheese mixture, then the rest of the noodles. Pour the meat-tomato mixture over the top. Sprinkle with parmesan cheese, croutons and then dot the top with butter.
  • Bake in a preheated 350 degrees F oven for 35 to 45 minutes.

2 teaspoons garlic powder
2 teaspoons seasoned salt
1-1/2 teaspoons paprika
1 teaspoon ground ginger
3/4 teaspoon pepper
1/2 teaspoon dried basil
1/4 teaspoon cayenne pepper
1 turkey (13 to 15 pounds)

Steps:

  • Preheat oven to 325°. In a small bowl, combine the first nine ingredients. Place turkey, breast side up, on a rack in a roasting pan; pat dry. Brush with butter mixture., Bake, uncovered, until a thermometer inserted in thickest part of thigh reads 170°-175°, 2-3/4 to 3-1/4 hours. (Cover loosely with foil if turkey browns too quickly.) Cover and let stand 20 minutes before carving.
