This recipe came from a Cambridge, Maryland Fire Department cook book of the 1960s. My mother used to make it almost everytime we had company. Her children liked it so much they put it into the cookbook they put together for our parent's 50th Wedding Anniversary.

1 lb backfin crab meat
1 pint oyster, undrained
1/4 cup butter
1/4 teaspoon Old Bay Seasoning
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped pimiento, drained
2 cups long grain white rice, cooked
1 cup wild rice, cooked
1 (10 1/2 ounce) can cream of mushroom soup
6 ounces dry sherry
4 ounces Smithfield Ham, julienne sliced
1/2 cup fresh parsley, chopped

Steps:

  • Drain oysters and reserve liquor.
  • Cook oysters in melted butter till edges just begin to curl. Remove from heat.
  • Add crab meat and fold gently.
  • Add Old Bay, salt, pimento, crushed red pepper flakes, and 1/4 cup fresh parsley.
  • Gently sir in rice and wild rice. Set aside.
  • In another bowl, combine soup, sherry, reserved oyster liquor and mix well.
  • Turn mixture into well greased 2 quart casserole.
  • Pour liquid over mixture.
  • Top with ham. Sprinkle with parsley. Dot with butter.
  • Bake at 350 till heated through, approximately 25-30 minutes.

Company Crab Casserole
Ingredients:
1 pound lump crab meat
1 can (15 ounce) artichoke hearts (drained)
1 cup Half & Half cream
1 can (4 ounce) sliced mushrooms (drained)
2 tablespoons cereal crumbs
1 tablespoon grated Parmesan cheese
2 1/2 tablespoons flour
dash cayenne pepper
2 tablespoons sherry
2 tablespoons butter or margarine
dash paprika
1/2 teaspoon salt

Steps:

  • Preparation Instructions: Cut artichoke hearts in half and place in a well greased, shallow 1 1/2 quart casserole. Cover with mushrooms and crab meat. Melt butter. Blend in flour and seasonings. Add cream gradually and cook until thick, stirring constantly. Stir in sherry. Pour sauce over crab meat. Combine crumbs and cheese. Sprinkle over sauce. Sprinkle with paprika. Bake in a very hot oven (450 degrees) for 12 to 15 minutes or until bubbly. Serves 6. This takes about 45 minutes to prepare. ยป

1 lb crabmeat
1 1/2 cups milk, scalded
1 cup soft breadcrumbs
1 cup cheddar cheese, grated
1/4 cup butter, melted
1 tablespoon onion, grated
2 tablespoons green peppers, chopped
1/2 cup pimiento, chopped
1 1/2 teaspoons salt
3 eggs, beaten

Steps:

  • Preheat oven to 375.
  • Pour milk over bread crumbs to soften; add remaining ingredients except eggs.
  • Stir in eggs.
  • Pour mixture into a well-greased loaf pan or a 6x8 inch casserole.
  • Set the dish in a container of hot water and bake for about 45 minutes or until an inserted knife come out clean.
