This is a great dish that easily doubles for big parties or potlucks. Also it is a great and different change to mashed potatoes.

Steps:
- Preheat oven to 350 degrees.
- Mix all ingredients except the cornflakes or crackers and the 1/2 stick of melted butter together in a bowl.
- Grease 9x13 inch pan (you can use cooking spray) and add all ingredients from the bowl to the pan.
- Just before baking, mix the cornflakes or crackers and the 1/2 stick of melted butter together and then sprinkle on the top.
- Bake for 1 hour at 350 degrees.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
- In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
- Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

This recipe came from my Nana (aka one of my best-friends) who has made it for every special occasion. It is so good but so bad but an absolute must for a comfort food recipe collection. Note: don't eat these first or you won't be able to finish your meal!

Steps:
- Peel and chop potatoes and boil in water until fork tender.
- Drain and mash potatoes in large bowl.
- Add cream cheese, sour cream, onion powder butter, egg, and garlic powder.
- Beat with hand mixer until fluffy.
- Scrape mixture into large casserole dish, and for nice appearance use back of spoon to "peak" potatoes like meringue.
- Dot with butter and sprinkle with paprika.
- *Mixture may be refrigerated at this point until needed, let stand at room temperature 1 hr before baking*.
- Bake in preheated 350°F oven for 30 minutes or until peaks slightly brown.
- Enjoy *this dish really holds its heat so be careful*.

ROASTED BABY POTATOES
Quick and easy recipe for roasted baby potatoes. Bake them at the same time as you cook your main dish! Can also be used as a quick appetizer! These were so good you don't even need butter or salt to taste. Made the mistake of having them done before the main dish and they were almost all gone by the time dinner started!

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine potatoes, olive oil, garlic, rosemary, sea salt, and pepper in a bowl. Toss until potatoes are covered and garlic is evenly distributed. Transfer to a rimmed baking sheet.
- Bake on the bottom rack of the preheated oven, shaking every 5 minutes to prevent burning, until fork-tender, about 20 minutes.

CREAMY COMPANY POTATOES
These are my daughters all time favorite potatoes. There are a few recipes that are close to this one, but I need to put this online so she can always find the right recipe...I cut this out of the Saginaw News years ago when I lived downstate... I have made these with the frozen southern style shredded potatoes too and they turn out great.
