MAMA'S BLACKBERRY COBBLER

Alabama has some tasty fresh blackberries. Decades ago, my mama was heading out to pick blackberries to make a cobbler, but she ended up going to the hospital to have me instead. This is her mama's recipe. The blackberries start on top, but then end up tucked under a golden brown crust after it's baked. -Lisa Allen, Joppa, Alabama

1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract
3 cups fresh blackberries or frozen unsweetened blackberries

Steps:

  • Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

1 cup butter or 1 cup margarine, divided
1 cup sugar
1 cup water
1 1/2 cups self-rising flour
1/3 cup milk, at room temperature
2 cups fresh blackberries or 2 cups frozen blackberries
1/2 teaspoon ground cinnamon
2 tablespoons sugar

Steps:

  • In a 10 inch round or oval baking dish, melt 1/2 C butter; set aside.
  • In a saucepan, heat sugar and water until sugar melts; set aside.
  • Place flour in a mixing bowl; cut in remaining butter until fine crums form.
  • Add milk to flour mixture, stirring with a fork until dough leaves side of bowl.
  • Turn out flour mixture onto a floured surface; knead 3 or 4 times.
  • Roll out dough to an 11 x 9 rectangle 1/4 in thick.
  • Spread berries over dough; sprinkle with cinnamon.
  • Roll up dough, jelly-roll style.
  • Cut dough into 1/4 in thick slices.
  • Carefully lay slices of dough in baking dish over butter.
  • Pour sugar syrup around slices(syrup will be absorbed).
  • Bake at 350 degrees F for 45 minutes.
  • Sprinkle sugar over top and bake 15 minutes more.
  • Serve warm or cold.

When blackberries are in season, there is nothing that says summer like this simple, delicious cobbler. Adapted from The Pioneer Woman Cooks, this easy cobbler will work with a multitude of fresh (or frozen if you must)fruits. Incredible with homemade vanilla ice cream!

1/2 cup butter, melted
1 1/4 cups sugar
2 tablespoons sugar
1 cup flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 cup milk
2 cups fresh blackberries (or frozen)

Steps:

  • Preheat oven to 350 degrees. Grease a 3-quart baking dish.
  • In a medium bowl, whisk 1 cup of the sugar with the flour, baking powder, salt and milk. Whisk in melted butter.
  • Meanwhile, rinse the blackberries and pat them dry. Pour the batter into the greased baking dish and sprinkle blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries.
  • Bake for one hour, or until golden brown and bubbly. When 10 minutes of cooking time remain, sprinkle the remaining two tablespoons of sugar over the top, and let that get all mouth-wateringly crispy and carmelized.
  • Try to stop drooling.
  • Serve with vanilla ice cream and enjoy!

½ cup white sugar
2 tablespoons cornstarch
6 cups fresh blackberries
¼ cup melted butter
2 ½ cups all-purpose flour
1 ½ cups white sugar

¼ cup melted butter

Steps:

1 pinch salt

2 cups boiling water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Whisk 1 1/2 cups sugar, cornstarch, and a pinch of salt together in a small bowl; set aside.

I told her I was, so she proceeded to give me tips and recipes for her favorite desserts to serve her husband. This is one I did try and it was delicious. I tend to adore people at both ends of the life spectrum - infants and the very elderly.

1 (18 ounce) package yellow cake mix
3/4 cup melted butter

Steps:

  • Place frozen blackberries in bottom of 9X13 baking dish.
  • Sprinkle cake mix over blackberries.
  • Cut butter into little 1/2 inch cubes and"dot" the butter over the cake mix.
  • Bake at 350 for about 40 minutes until brown and bubbly.
