COLORFUL GUMDROP CAKE
I remember liking a gumdrop cake my Mom used to make, I do not have her recipe, so when i saw this one in a magazine i hung onto it,have not made it yet, but it sounds good. Would be nice at Christmas time for the kiddies. The intro to the recipe recommends using sugar coated gumdrops that you can find in the bulk food stores and using only the red, green, white & yellow ones.

Yield 1 9x5 inch loaf.

Steps:
- Grease a 9x5 (2 L) loaf pan.
- Line with parchment paper, cutting to fit.
- In large bowl,beat sugar& butter until light& creamy,beat in the eggs,lemon rind& vanilla until fluffy.
- In a separate bowl,stir together flour,baking powder& salt.
- Gradually beat the flour mixture into sugar mixture alternately with the milk until mixture is smooth.
- Stir in gumdrops& coconut until well combined.
- Spoon into prepared pan and bake at 350 for 1-1 1/4 hrs.
- or until tester in centre comes out clean.
- DON"T OVERBAKE.
- Let cool in pan for 5 minutes.
- Turn out and let cool on wire rack completely.
- Lemon Glaze: In small bowl,whisk icing sugar& lemon juice until smooth.
- Drizzle glaze evenly over top of the cake& sprinkle with the chopped gumdrops.
- Can be refrigerated loosely covered for up to 1 week.
- If you would like to store longer, freeze the cake UNWRAPPED, then wrap carefully& store in freezer up to three months.

Steps:
- 1. Cake: Sift flour, salt, and baking powder, in medium mixing bowl, set aside. Grease and flour 10 inch tube pan. Preheat oven to 300 degrees F.
- 2. Combine sugar and cocoa. Cream sugar / cocoa mixture with Crisco, and butter until fluffy in a Large mixing bowl. Add Vanilla. Add eggs one at a time beating well after each one. (EGGS SHOULD BE AT ROOM TEMPERATURE). Add the dry ingredients and milk alternately beating after each addition. Pour batter into tube pan and bake in 300 degree oven for 1 hour and 40 minutes.
- 3. After cake is done, remove from oven and let it sit in pan 10-15 minutes before turning it out on cake plate. This makes a large cake. Place the cake on a pretty and large cake plate. Let it cool.
- 4. FROSTING: Place the glass inside the hole of the tube cake, make the bottom of the glass face up. Frost the top two-thirds of the cake, leaving the 1/3 at bottom exposed with no icing. Using a small spatula, swirl the frosting in an upward motion to give it a fluffy, nest like appearance. Sprinkle the toasted coconut over top of cake and spill down sides but do not pat it on. Just a little sprinkle where ever it hits is fine. Place the foil colored eggs on top of the glass and sprinkle some jelly beans on them. On the cake plate and around the bottom of cake, place a few jelly beans but don't pile them up. THAT'S ALL FOLKS !! FIND THE PRIZE EGG !!!

- Prepare and bake cake according to package directions, using two greased 9-in. round baking pans. Cool for 10 minutes before removing from pans to wire racks to cool completely., Spread frosting between layers and over top and sides of cake. Cut Fruit Roll-Ups into strips of desired widths. Lightly press onto sides of cake. Arrange jelly beans around edges of cake. Decorate with icing as desired.

This is one of my favorite cakes ever! If you don't own four 9-inch layer cake pans, you'll need to bake these in shifts. DO NOT use grape Jell-O mix!

Steps:
- Preheat oven at 350.
- Divide prepared white cake batter equally into 4 bowls.
- Mix 1 tablespoons Jell-O powder into each bowl, one color per bowl.
- Stir until blended.
- Additional Jell-O powder may be added at this time for brighter colors.
- Pour batter into greased and floured cake pans, 1 color per pan.
- Bake 15 minute or until cake springs back when lightly touched in the center.
- Cool 5 minute and remove from pans.
- when cake is completely cool, spread yellow frosting between layers.
- Scoop 3/4 of your white frosting into a bowl, add 6 drops blue food coloring.
- Whisk until blended.
- Cover outside of cake with blue frosting.
- spread the remaining white frosting atop the blue frosting as clouds.
COLORFUL CAKE
Steps:
- Preheat oven to 350. Prepare cake mix following directions on package, then divid into 4 different bowls (about 2 cups per bowl) Mix 2 table spoons of jello power into each bowl, color per bowl. Add a few drops of food dye to richen the color. For more flavor add extracts or liqueurs that matche the flavors of jello you used. (Like midori for melon or cointreau for orange) Pour batter into greased cake pans, 1 color per pan. Bake for about 15 minutes (until cake springs back when touched lightly in center). Cool for about 5 minutes befor removing from pans. Tip you can bake one or two colors at a time if you don't have 4 pans. When Cake is totaly cooled spred frosting between layers of cake then cover outside of cake in frosting. Add colored sugar crystals for decoration.
