This is a great starter. You can make it with a bit more water and you get somewhat of a soup, or let it cook and eat it with a plate of rice.

½ cup lentils
1 ½ cups water
1 small tomato, chopped
1 small onion, chopped
2 teaspoons ground cumin
1 teaspoon salt
1 tablespoon vegetable oil
2 small yellow potatoes, cubed

Steps:

  • Combine the lentils, water, tomato, onion, cumin, salt, and vegetable oil in a pot over medium heat; bring to a boil. Cook and stir at a boil until the lentils are soft, about 30 minutes. Add the potatoes and cook until the potatoes are tender, about 15 minutes more.

1 medium onion, chopped
3 tablespoons olive oil
1 cup red lentil
2 cups rice
2 teaspoons salt
500 ml coconut milk
1 1/2 cups water

Steps:

  • Sauté the onion in the oil until soft and golden (5-8 minutes).
  • Add the lentils and 1 cup of water, and cook, covered, for about 30 minutes.
  • Stir in the rice and the salt. Stir in the coconut milk.
  • Cover and simmer for about 20 minutes more, until rice is tender and the liquid has been absorbed.
