Smoked turkey legs and a touch of sugar bring sweet and smoky flavor to these classic Southern-style collard greens. My favorite smoke-injection system for a pot of collards is smoked turkey legs, which are surprisingly simple to make (but also available at most megamarts). They impart just the right amount of smoky goodness without overwhelming the natural flavor of the greens, and they contribute a fair amount of collagen, which of course breaks down into gelatin to provide considerable lip-smacking body. 1 quart water
1 1/2 pounds smoked turkey legs
2 pounds stemmed collard or turnip greens
1 teaspoon kosher salt, plus extra to taste
1 teaspoon sugar
1 teaspoon red pepper flakes (optional)

Steps:

  • Place the water and turkey legs in an 8-quart pot over medium-high heat. Cover, bring to a boil, and allow to simmer for 10 minutes.
  • In the meantime, remove any large stems from the greens and wash them thoroughly in a sink filled with at least 5 inches of water. Move the leaves around in the water, then let them sit for a few minutes to allow any sand or dirt to fall to the bottom of the sink. Once clean, chop pieces in half. You should have 2 pounds of greens once they are stemmed. (Weigh the greens after stemming, but before washing.)
  • Once the turkey legs have simmered for 10 minutes, add the greens, salt, and sugar, reduce the heat to low, cover, and allow to simmer gently until the greens are tender, about 45 minutes, stirring the greens every 10 to 15 minutes. Taste and season with additional salt, if desired. Remove the turkey legs and save for another use or shred into the greens, if desired. Serve immediately.

Cornbread dressing with herbs, collard greens, and smoked turkey meat. This amazing holiday southern style dressing is packed with veggies and is the perfect addition to your holiday dinner table.

2 24 oz bags of herb cornbread dressing
1 stick unsalted butter (plus more for buttering the bake dish)
6 cup turkey broth
1.5 lb smoked turkey leg or wing
2 stalks of celery (diced)
1 medium sized red bell pepper (diced)
1 medium sized onion (diced)
tbsp fresh minced garlic
10 oz bag of collard greens (cut & stems removed( clean greens thoroughly!))
1 tsp salt
1 tsp freshly ground black pepper
1 tsp dried thyme
1 tsp ground sage

Steps:

  • Place the turkey wing or leg in the slow cooker, along with 6 cups turkey broth.
  • Let the turkey cook on high for 3 hours.
  • Remove the turkey from the broth ( but reserve the broth), and shred the meat, then set aside.
  • Next, melt down 4 tbsp of salted butter over medium heat, then toss in the chopped veggies, and minced garlic.
  • Season with the salt & pepper, then cook until translucent.
  • Remove the veggies from the pan, and set aside.
  • Next toss in the collard greens, and cook until tender.
  • Remove the greens from the pan, and melt down the 4 more tbsp of butter.
  • Add the cornbread dressing mix into a large mixing bowl, then pour in 6 cups of broth, and the melted butter.
  • Let sit for 15 minutes to soak up all the flavor.
  • Next, add in the minced veggies & garlic, collard greens, and smoked turkey.
  • Fold the ingredients.
  • Sprinkle in the sage, thyme, and red pepper flakes, then fold the ingredients some more.
  • Butter up a 9x13 bake dish, then add in the dressing.
  • Cover the dish with foil, and bake on 350 F ( make sure the oven is preheated!) for 50 minutes.
  • Once done, remove from the oven, and let sit for 10 minutes before serving.
  • Serve & enjoy!

1 1/2 tablespoons vegetable oil
1 teaspoon crushed red pepper
1 smoked turkey wing
2 cups chicken stock

1/4 cup cider vinegar

Steps:

  • Saute onions and garlic in oil until soft and add turkey wing. Add chicken stock and chopped or torn greens. As greens cook down, add water as needed and season with salt, pepper and crushed red pepper. Cook until tender, about 45 minutes. Serve with vinegar on the side.

2 cups water
1 (14.5 ounce) can chicken broth
1 medium jalapeno pepper, seeded and minced
¼ teaspoon seasoned salt
¼ teaspoon lemon-pepper seasoning

Steps:

  • Place turkey necks and collard greens in a 4-quart or larger pot over medium heat. Pour water and chicken broth over top. Add jalapeno, salt, and lemon-pepper seasoning; bring to a boil.
  • Boil until greens are tender, about 1 hour.

My father is from North Carolina, and this is the true TRADITIONAL way to cook some greens, You may substitute the PORK for SMOKED TURKEY.

3 -4 bunches collard greens
1/2 cup water
1 (8 ounce) package salt pork or 6 large smoked turkey necks
6 garlic cloves
4 (1 g) packets Splenda sugar substitute or 1 tablespoon sugar
1 tablespoon crushed red pepper flakes
1 tablespoon kosher salt (IF USING SMOKED TURKEY)
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon black pepper

Steps:

  • Since Collard Greens are VERY SANDY you must cut of the ends and rinse 3-4 TIMES.
  • Stack leaves on top of each other about 15 roll up then cut.
  • Cut up salt pork into strips and fry in a pan -- Do not add any OIL or GREASE it will make it's own.
  • If your using the smoked turkey, just add to the pot with 1/2 cup of water.
  • Smash garlic with knife (do not chop up).
  • Add water, red pepper, smashed garlic, onion & garlic powder and black pepper (add the SALT if your using the smoked turkey & add the smoked turkey) to large pot; bring to a boil.
  • Add collard greens to pot (water level should be very low--DON'T ADD ANY MORE!).
  • Bring back to a boil add salt pork and the grease it made into the pot.
  • BE CAREFUL OIL WILL POP WHEN IT HITS THE WATER.
  • Stir & cover and bring to very low heat.
  • Cook greens for about 1 hour stirring occasionally, then add sugar/Splenda.
  • Cook for another 30 minutes stirring occasionally.
  • Now you have TRUE Southern Collard Greens.

1 medium jalapeno pepper, very thinly sliced
3 cloves garlic, minced
4 tablespoons salt, or more to taste

3 cups water
3 tablespoons chicken base
5 bunches collard greens - rinsed, trimmed, and chopped

  • Remove meat from turkey legs and cut. Set aside with bones.
  • Heat oil in a saucepan over medium heat. Add jalapeno and garlic; saute until soft, about 5 minutes. Add turkey meat and bones; cook for 3 to 4 minutes.
  • Add salt, red pepper flakes, and black pepper. Add water and chicken base; bring to a boil.
  • Boil for 3 minutes, then reduce heat to a simmer. Add greens, cover, and simmer until greens are limp and tender, about 5 more minutes. Remove bones before serving.
