APPLE-RAISIN COLE SLAW

1/2 cup golden raisins
1/2 teaspoon celery seeds
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons apple cider vinegar
1 head savoy cabbage, shredded or sliced thin
1 cup carrots, shredded (about 4 small or 2 medium carrots)
2 Granny Smith apples, cored and shredded
Kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, stir together the raisins, celery seeds, mayonnaise, sour cream and apple cider vinegar. Add the cabbage, carrots, and apples, then toss to combine. Taste and season with a pinch of salt and a grind or two of pepper. Cover and refrigerate at least 1 hour before serving.

Scrumptious. Slightly sweet. A bit different from traditional coleslaw. I like the "angel hair" coleslaw cabbage, but the mixture with carrots and red cabbage is great too. Try it with dried cranberries instead of raisins. Inspired from a recipe received from a friend.

1 (10 ounce) bag coleslaw mix, of your choice
1/3 cup pine nuts or 1/3 cup unsalted sunflower seeds
1/3 cup raisins, seedless
1/3 cup onion, chopped
3/4-1 cup mayonnaise
1 tablespoon malt vinegar
2 tablespoons sugar
1/2 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Open the bag of coleslaw cabbage into a large mixing bowl.
  • Add raisins, onions and nuts. Combine gently.
  • In a small bowl, whisk together the remaining (dressing) ingredients until very well blended.
  • Pour the dressing over the cabbage mixture and gently combine until evenly blended.
  • Refrigerate for a minimum of 2-hours.
  • Garnish with a sprig of cilantro or parsley leaf (optional).

Prepared shredded coleslaw mix is one of our favorite items in the produce aisle because it's so easy to toss in a bowl-all the work's already done. You can bring this slaw to a potluck supper and get raves, and it takes less than ten minutes to put together. It's no surprise that this is also terrific with Sweet and Spicy Pork (page 128), and kids will love it with Mini Macaroni Pies (page 168).

One 16-ounce bag coleslaw mix
1/2 cup plus 2 tablespoons mayonnaise
1/2 cup golden raisins
1/2 cup thinly sliced scallions (white and light green parts)
Finely grated zest of 1 lemon
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, combine the coleslaw mix, mayonnaise, raisins, scallions, lemon zest, lemon juice, salt, and pepper. Toss well before serving.

Recipe from California Raisins website. . .by Chef Roy Harland. It states that you can substitute 1 lb of coleslaw mix for the green cabbage, red cabbage and carrots. They suggest serving this with BBQ. WOW this is good stuff!!! Note that I only used half of the dressing for 1 lb of coleslaw, so you may want to cut the recipe in half so as not to be wasteful!

1/4 cup granulated sugar
1 cup mayonnaise
1 teaspoon celery seed
2 teaspoons prepared horseradish
sea salt
fresh ground black pepper
6 cups shredded green cabbage
3/4 cup shredded red cabbage
3/4 cup grated carrot
1/3 cup golden raisin
1/4 cup coarsely chopped salted peanuts
sea salt

2 hard-boiled eggs, peeled and chopped
1 tablespoon minced fresh chives

Steps:

  • Make the dressing by combining the vinegar and sugar in a small mixing bowl.
  • Stir in the mayonnaise, celery seed and horseradish.

  • (Be sure sugar is dissolved before serving.).
  • Toss the cabbages, carrots, raisins and peanuts in a large mixing bowl with desired amount of dressing.
  • Season to taste with salt and pepper.
  • Arrange in a serving bowl and garnish with the chopped eggs and chives.

1 head green cabbage, finely shredded
1 large onion, finely chopped
2 carrots, shredded
1/2 cup rough chopped walnuts
1/2 cup raisins
1/2 cup sugar
1/2 cup apple cider vinegar
1 teaspoon celery seed
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon black pepper
1/2 cup vegetable oil (2/3 Canola and 1/3 Walnut)

Steps:

  • Place prepared cabbage, onion, carrot, walnut& raisins into large mixing bowl; set aside.
  • In saucepan heat to boiling the sugar, salt, celery seed, dry mustard, pepper and vinegar.

1 small head savoy cabbage, cored
1 large carrot
3 tablespoons mayonnaise
1 tablespoon finely minced ginger (from one 1-inch piece)
1 1/2 teaspoons finely minced garlic (from 1 small clove)
1 tablespoon unsalted butter
1/4 cup golden raisins
1 tablespoon sherry vinegar
Fine sea salt
Sugar
Freshly ground black pepper

Steps:

  • Shred the cabbage and julienne the carrot (cut into thin slivers). Combine in a bowl with the mayonnaise, ginger and garlic and mix well.
  • Heat the butter in a medium skillet over a medium flame. Add the raisins and cook until soft and golden brown, about 2 minutes. Mix the warm raisins into the slaw and add the vinegar and salt, sugar and pepper to taste. Cover and refrigerate until ready to serve.
