Steps:
- Mix the dressing - and let it sit a while. (couple hours or overnight is best, but I've used it after an hour or so -- ).
- Keep separate from the cabbage and mix as you need it.
- Mixes with 4C shredded Cabbage.
CLASSIC DELI COLE SLAW DRESSING
A very good dressing I found on the back of a pre-mixed cole slaw package. Tasty, easy to throw together and just like what you would find in a deli. You can make extra dressing if you like your cole slaw "extra creamy" as well as use your own mixture of shredded green cabbage, carrots and red cabbage....We love it!!!

- Combine the cabbage, carrots, apples, onion, and pecans in a large bowl. Mix well with your hands and set aside.
- In a small bowl, stir together the mustard, sugar, mayonnaise, ground chipotle, and lemon juice until blended. Season with salt and pepper. Pour the dressing over the cabbage mixture and toss well to coat. Taste again for seasoning, then mound onto a platter and garnish with mint leaves.
CAROLINA COLE SLAW W/ VINEGAR DRESSING
Steps:
- Combine coleslaw vegetable ingredients; chopped cabbage, chopped bell pepper, chopped onions, and grated carrots in a large serving bowl. In a saucepan over medium heat, combine remaining ingredients; bring to a boil. Simmer, stirring, until sugar is dissolved; pour over vegetables and toss well. Cover and refrigerate until thoroughly chilled. Enough slaw for 8 to 10 servings.

- 1. Put all ingredients together in a mixing bowl and mix well until smooth and creamy in consistency. Have your Cole Slaw veggies shredded and ready. (Should be about 2 quarts)... Pour dressing over mixed cole slaw veggies and blend together very well, cover and refrigerate. I recommend you refrigerate at least 2 hours before serving, stirring the slaw to blend flavors every 20 minutes or so.. This may look as if it is not enough, but if you keep stirring it often, it will be plenty.

- Combine the mayonnaise, sour cream, brown sugar, and vinegar. Whip with a fork and set aside while you prepare the salad.
- Shred or finely slice the cabbage.
- I used 1 sweet-tart Jonagold and 1 sour Granny Smith apple, but you can use any variety you like. Core and chop (I did not peel them).
- Peel and coarsely grate the carrots.
- I used half golden and half black raisins. I think dried cranberries would be even better. You can use more than 1 cup if you like.
- Toss cabbage and fruits in a large bowl. Dress and toss again to coat everything in mayonnaise-sour cream mixture. Allow to marinate in the refrigerator for a few hours.
- Garnish with nuts just before serving. (The nuts will get soggy if you add them at the same time as everything else.)

Mom was a fabulous cook, and was famous for her cole slaw. I have never been able to "shave" the cabbage as finely as she could, so I buy the Angel Hair shredded cabbage in the produce section. This is the same dressing Mom made for her sliced cucumber in sour cream......Heavenly!!
