Number Of Ingredients 12

2 cups all-purpose flour
2 teaspoons instant coffee granules
2 cups firmly-packed brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup butter, cut into pieces (cold)
2 tablespoons butter, cut into pieces (cold)
1 cup sour cream
1 teaspoon baking soda
1 large egg, slightly beaten
1/2 cup chopped walnuts or 1/2 cup pecans
1/2 cup mini chocolate chip

Steps:

  • Set oven to 350°.
  • Grease a 9-inch square baking dish.
  • In a large bowl, combine the flour, coffee granules, brown sugar, cinnamon and salt; mix well with a spoon to combine.
  • With a pastry blender/knife cut in the COLD butter until crumbly and well blended.
  • Press half of the mixture into a prepared baking pan; set aside.
  • In a medium bowl whisk together the sour cream and baking soda; add in the egg, and whisk until combined.
  • Add sour cream/egg mixture to the remaining crumb mixture, stiring gently JUST until combined.
  • Pour over the crumb crust in the pan.
  • In a small bowl, combine the nuts and chocolate chips.
  • Sprinkle over the top of cake.
  • Bake for 30-35 minutes or until done.

1 cup butter, softened
2-3/4 cups sugar, divided
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sour cream
2 tablespoons ground cinnamon
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. Combine cinnamon, nuts and remaining sugar; sprinkle a third over batter in pan. Repeat layers 2 more times. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

This is the cake I've reserved all through 2002, just to welcome 2003! My guests are in for a treat and can you imagine, I've waited the whole year long to post this:) Try it! It lives up to its name, IMO.

Number Of Ingredients 10

2 cups all-purpose flour
2 teaspoons instant coffee granules (heaped)
1 teaspoon cinnamon, ground
2 cups light brown sugar, firmly packed
1/2 teaspoon salt
1/2 cup butter, melted
1 (8 ounce) carton sour cream, beaten
1 teaspoon baking soda
1 large egg, beaten
3/4 cup walnuts or 3/4 cup pecans, chopped

Steps:

  • Combine flour, coffee granules, salt, baking soda, cinnamon and brown sugar in a large sized bowl.
  • Mix well.
  • Keep aside.
  • In another bowl, beat an egg until light and frothy.
  • Add butter and mix well.
  • Add the dry ingredient mixture alternating with the sour cream.
  • Mix well.
  • Add nuts.
  • Mix.
  • Pour into a greased 9 inch cake tin.
  • Bake at 180C for 40 minutes or till a wooden toothpick inserted in the center comes out clean.
  • Allow to cool completely on wire racks.
  • Slice and serve for a wonderful breakfast dish to go with your morning or afternoon coffee.
