1/4 cup coffee grounds (from brewed coffee)
1/4 cup balsamic vinegar
2 cloves garlic, chopped
1/2 large shallot, chopped
Kosher salt and freshly ground black pepper.

Steps:

  • Combine the coffee grounds, balsamic vinegar, garlic, shallots, some salt and pepper and 1/4 cup water in a bowl.
  • Use as a marinade for steak. Marinate for 30 minutes to 4 hours, then cook the steak as desired.

My dad-a big steak lover-got this recipe form a friend, and now we never eat steak without using this marinade. It makes the meat so juicy and adds a great flavor.

2 tablespoons sesame seeds
6 tablespoons butter
1 medium onion, chopped
4 garlic cloves, minced
1 cup strong brewed coffee
1 cup soy sauce
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 pounds beef top sirloin steak (1 inch thick)

Steps:

  • In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture. , Pour half into a shallow dish; add steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Warm reserved marinade; serve with steak.

1 cup strong coffee, cooled
3 tablespoons balsamic vinegar
2 tablespoons minced white onions
2 tablespoons minced garlic
1 chipotle chile in adobo, finely chopped
2 teaspoons chopped fresh sage
1 teaspoon ground cumin
3 tablespoons soy sauce
2 teaspoons Worcestershire sauce
2 teaspoons dark brown sugar
2 teaspoons Tabasco sauce or 2 teaspoons hot sauce
2 teaspoons fresh ground black pepper
1/4 cup canola oil

Steps:

  • Pour the coffee into a small bowl and stir in the remaining ingredients.
  • Place the steaks of your choice in a large zipper-lock bag. Pour in the marinade, seal the bag, and turn to ensure the steaks are coated with the marinade. Marinate for 2 hours at room temperature or, better still, refrigerate overnight. (For a 2- to 3-inch-thick bone-in steak, it's best to marinate overnight.) Turn the bag from time to time to redistribute the marinade. Let the steaks sit at room temperature for 2 hours and pat dry before grilling.
