1 cup chopped pecans
3 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
2 tablespoons strong brewed coffee, room temperature
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine the chocolate chips, milk, coffee, cinnamon and salt. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and pecans. Immediately spread into the prepared pan. , Cover and refrigerate until firm, about 2 hours. Remove from pan; cut into 1-in. squares. Cover and store at room temperature (70°-80°).

COFFEE AND FUDGE SEMIFREDDO

2 tablespoons instant coffee (I use decaf)
1 teaspoon coffee extract
1 teaspoon vanilla extract
1 pint plus 1 tablespoon heavy cream
One 14-ounce can sweetened condensed milk
3/4 cup jarred hot fudge
2 tablespoons chopped chocolate-covered espresso beans

Steps:

  • Line a loaf pan (9-by-5-inch works best) with plastic wrap, letting the edges hang over and allowing enough extra plastic to wrap the semifreddo.
  • In a large bowl, combine the instant coffee, coffee extract, vanilla and 1 pint of the heavy cream. Use an electric mixer to whip until medium to firm peaks form. Use a spatula to gently fold in the condensed milk. Transfer half of the mixture to the prepared loaf pan and freeze until just beginning to set, about 20 minutes.
  • Microwave 1/2 cup of the hot fudge with the remaining 1 tablespoon heavy cream in a microwave-safe bowl for 20 to 25 seconds, just to loosen it slightly. Spoon it lengthwise down the center of the pan, from end to end.
  • Transfer the remaining cream mixture to the loaf pan on top of the fudge. Use a butter knife to make swirls going through the mixture. (This will move the fudge throughout the mixture.) Wrap with plastic wrap and place in the freezer for 6 hours.
  • Before serving, let stand at room temperature for 5 minutes.
  • Meanwhile heat the remaining 1/4 cup fudge. Unwrap the plastic, invert onto a serving plate and remove the plastic entirely. Drizzle with the hot fudge and sprinkle with the chopped espresso beans. Slice and serve immediately.

1/4 cup Kahlua
2 1/2 tablespoons instant coffee granules
1 (12 ounce) package semisweet chocolate morsels
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • Line a 8 or 9-inch square baking dish with aluminum foil, overlapping the sides slightly for easy removal; butter the foil on the insides, set aside.
  • In a large, heavy saucepan, combine condensed milk, Kahlua, and coffee granules.
  • Bring to a simmer over medium heat; simmer for 2 minutes, stirring constantly until mixture thickens slightly.
  • Remove from heat. Stir in the chocolate morsels, stirring until melted and smooth. Add the pecans and vanilla, stirring well to combine.
  • Spread evenly into aluminum lined pan.
  • Refrigerate for 2 hours or more.
  • Lift foil onto cutting board, peel fudge from foil and cut into uniform squares to serve.

3 c sugar
3/4 c evaporated milk
1/3 c Baileys Irish cream
1 Tbsp instant coffee crystals
7 oz jar marshmallow cream
1 pkg vanilla morsels or butterscotch chips, 11 oz
1 tsp vanilla extract

Steps:

  • 1. In a small bowl, combine Baileys and coffee crystals. Microwave on high for 10 seconds or until melted and dissolved.
  • 2. In a medium saucepan, over medium heat, melt butter, evaporated milk, sugar, and marshmallow cream.
  • 3. Slowly add the Baileys coffee mixture; stir well.
  • 4. Boil for 5 mins.
  • 5. Remove from heat. Stir in chips and vanilla extract. Stir for approx. 3-4 mins until smooth.

½ cup light corn syrup
1 cup heavy cream
10 ounces semisweet chocolate, chopped
16 graham crackers, broken into 1/2-inch pieces
1 cup toasted almonds
3 tablespoons white sugar
½ cup melted butter
1 ½ quarts coffee ice cream, softened
1 (7 ounce) jar marshmallow creme
2 cups miniature marshmallows

Steps:

  • To make fudge sauce, combine heavy cream and corn syrup in heavy saucepan. Bring to a boil, remove from heat, add chocolate and whisk until smooth. Refrigerate until cool, about 45 minutes.
  • To make ice cream cake, preheat oven to 350 degrees F (175 degrees C). Finely grind graham crackers and almonds in food processor or blender. Stir in sugar. Add butter and process until moist crumbs form. Press mixture into bottom and sides of 9 inch spring form pan. Bake until golden, about 12 minutes. Allow to cool, then spread 2 cups softened ice cream over crust. Spoon 3/4 cup fudge sauce over ice cream. Freeze until set, then repeat layering. Cover and freeze 8 hours or overnight. Refrigerate remaining fudge sauce.
  • The next day, preheat the oven broiler. Warm the remaining fudge sauce in the microwave or a small saucepan. Place the cake pan on a cookie sheet. Spread the marshmallow creme over cake and sprinkle miniature marshmallows on top. Place under broiler until marshmallows are deep brown. Loosen cake with knife and remove sides of pan. Serve immediately with warmed fudge sauce.

Steps:

  • Line 8-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray.
  • Bring sugar, milk, 1 tsp. coffee granules and butter to full rolling boil in large saucepan on medium heat, stirring constantly. Cook 5 min. (Do not stir.) Remove from heat.
  • Add chocolate and remaining coffee granules; stir until chocolate is completely melted and mixture is well blended. Stir in nuts. Pour into prepared pan; spread to evenly cover bottom of pan.
  • Let stand at room temperature 2 hours or until firm. Use foil handles to lift fudge from pan before cutting into squares.

1/2 teaspoon ground cinnamon (or more if you like)
1 cup whole milk
3 cups granulated sugar
1/2 cup unsalted butter, cubed
4 ounces unsweetened chocolate, finely chopped

Steps:

  • Butter an 8" square baking dish and set aside.
  • Dissolve the instant espresso powder and cinnamon in 3 teaspoons of hot water. Stir until a paste forms, and set aside.
  • In a saucepan, heat milk, sugar, butter and chocolate over a medium heat until it reaches a boil. Do not stir or scrape down sides.
  • Lower heat, add a candy thermometer and heat (without stirring) until mixture reaches softball stage (238°F).
  • Remove from heat; allow to cool to 110°F, then with a rubber spatula scrape in espresso mixture. In an electric mixer, using paddle attachment, beat mixture until it loses its gloss and thickens.
  • Spread fudge evenly into prepared 8" square pan. Let cool for 20 minutes, then cut into 12 pieces.

2 1/2 c granulated sugar
2/3 c your favorite liquid coffee creamer
12 oz bag semi-sweet chocolate chips
7 1/2 oz jar marshmallow fluff
1/2 tsp salt
1 tsp vanilla extract

Steps:

  • 1. In an 8 inch square dish or pan insert a piece of foil that hangs over ends of pan for easy lifting out of pan, and butter or spray foil well. --- Combine the butter, sugar and coffee creamer in a medium heavy bottomed saucepan. Cook over medium heat, stirring occasionally to 248^ on a candy thermometer.
  • 2. Remove from heat; stir in the chocolate chips, marshmallow fluff, salt and vanilla. Mix well and pour into prepared pan (8x8-inch). Let cool completely before cutting. I let mine set overnight..only because it was late when I made it!
  • 3. Note: Remember if you change up the flavor of the creamer you need to add flavor to compliment it..such as mocha creamer, add a bit of instant coffee powder(1/2 to 1 teaspoon) etc...

1 c chopped pecans or walnuts

Steps:

  • 1. Line an 8-8 inch square pan with foil for better removal. Lightly grease foil.
  • 2. Mix sugar, cocoa, cinnamon, and salt in medium mixing bowl.
  • 3. Heat butter, cream, and coffee granules in a small saucepan until butter melts.
  • 4. Remove from heat and add vanilla.
  • 5. Pour into sugar mixture.
  • 6. Combine thoroughly.
  • 7. Stir in pecans or walnuts.
  • 8. Place mixture in prepared pan; spread with spoon or pat lightly with oiled hands.
  • 9. Chill a minimum of 1 hour.

Fudge Sauce
1 1/2 cups heavy whipping cream
6 tablespoons dark corn syrup
18 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 tablespoon instant espresso powder
1 teaspoon ground cinnamon
Crust and Filling
12 whole cinnamon graham crackers, coarsely broken
2 cups whole almonds, toasted
1 cup coarsely chopped English toffee candy bars (such as Skor or Heath)
1 1/2 teaspoons ground cinnamon
3/4 cup (1 1/2 sticks) unsalted butter, melted, warm
4 pints coffee ice cream, softened slightly

Steps:

  • For Vanilla Caramel Sauce:
  • Combine all ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves and butter melts, about 3 minutes. Increase heat to medium-high. Boil sauce without stirring until thick enough to coat spoon or attach candy thermometer and boil until thermometer registers 224°F, about 7 minutes. Strain sauce into medium bowl. (Can be made 1 week ahead. Cool, cover, and chill. Rewarm before using.)
  • For Fudge Sauce:
  • Bring cream and corn syrup to simmer in heavy medium saucepan over medium heat. Remove from heat. Add chocolate, espresso powder, and cinnamon. Whisk until chocolate melts and sauce is smooth. Cool.
  • For Crust and Filling:
  • Preheat oven to 350°F. Finely grind first 4 ingredients in processor. Add warm butter. Using on/off turns, blend just until crumbs are evenly moist. Firmly press half of crust mixture (about 3 cups) over bottom of 10-inch springform pan; press remaining crumb mixture up sides of pan. Freeze crust 10 minutes. Bake crust until slightly golden, about 14 minutes. Cool crust completely.
  • Spread 1/3 of ice cream (about 1 2/3 cups) evenly over bottom of crust. Spread 1 cup fudge sauce over. Freeze 10 minutes. Spread 1/3 of ice cream, then 1 cup fudge sauce over. Freeze 10 minutes. Spread remaining ice cream over. Drizzle with remaining fudge sauce. Freeze torte until firm, about 2 hours. (Can be made 2 days ahead. Cover and keep frozen.)
  • Let torte stand 10 minutes at room temperature. Cut around pan sides to loosen. Remove pan sides. Cut torte into wedges. Serve with warm vanilla caramel sauce.

3 tbsp instant coffee granules
210g pot coffee sauce
8pieces of dairy fudge , squashed into smaller chunks
1 plump vanilla pod
300ml full-fat milk
300ml double cream
4 egg yolks
100g golden caster sugar

Steps:

  • Place a container in the freezer. Split the vanilla pod lengthways, scrape the seeds out with the point of the knife and tip into a pan with the milk, cream and pod. Bring to the boil, then remove from the heat and leave to infuse for at least 20 mins. For the best flavour, this can be done a few hours beforehand and left to go cold (see tip, below).
  • In a large bowl, whisk the sugar and egg yolks together for a few minutes until they turn pale and fluffy. Put the vanilla cream back on the heat until it's just about to boil. Stir through the coffee granules then carefully sieve the liquid onto the yolks, beating with the whisk until completely mixed.
  • At this point, get a large bowl of iced water and sit a smaller bowl in it. Pour the custard back into the pan and cook on the lowest heat, stirring slowly and continuously, making sure the spoon touches the bottom of the pan, for about 10 mins until thickened (see rules, below). Strain the custard into the bowl sitting in the iced water and leave to cool, then churn until scoopable (see methods, below).
  • Layer the cold container with ice cream and spoonfuls of coffee sauce and fudge pieces. Freeze overnight and serve.

Fudge Sauce
1 7-ounce jar marshmallow creme
2 cups miniature marshmallows

Steps:

  • Preheat oven to 350°F. Finely grind graham crackers, toasted almonds and 3 tablespoons sugar in processor. Add 1/2 cup melted butter; process mixture until moist crumbs form. Press graham cracker mixture onto bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Bake crust until edges are golden, about 12 minutes. Cool graham cracker crust completely.
  • Spread 2 cups softened ice cream in crust. Spoon 3/4 cup cooled Fudge Sauce over. Freeze until sauce is just set, about 10 minutes. Refrigerate or freeze remaining ice cream as necessary to prevent ice cream from melting. Repeat layering with 2 cups ice cream, then 3/4 cup sauce. Freeze until sauce is just set. Spread remaining 2 cups ice cream over. Cover and freeze cake overnight. Refrigerate remaining Fudge Sauce.
  • Preheat broiler. Warm remaining Fudge Sauce in small saucepan over low heat. Remove from heat. Place cake in pan on baking sheet. Spread marshmallow creme over top of cake. Sprinkle miniature marshmallows over in single layer. Broil just until marshmallows are deep brown, watching closely to avoid burning, about 1 minute. Run knife between pan sides and cake to loosen. Remove pan sides. Cut cake into wedges. Serve cake immediately with warm Fudge Sauce.

Steps:

  • In a microwave safe cup, cook Irish Cream on HIGH 30 to 45 seconds until hot enough to dissolve the instant coffee.
  • In a large pan or Dutch oven, on medium heat, melt the butter, add sugar, evaporated milk, Irish Cream and coffee mixture, marshmallow creme, then mix well.
  • Bring to a full boil, stirring constantly, for 5 minutes.
  • Remove from heat and stir in vanilla chips until completely melted and mixed thoroughly.
  • Stir in the vanilla, then the hazelnuts until mixed well.
  • Pour into a greased 8-inch square pan and spread evenly.

1 c almonds, toasted
3 Tbsp sugar
1/2 c unsalted butter, melted
1 1/2 qt coffee ice cream (softened till spreadable)
2 jar(s) hot fudge sauce
7 oz marshmallow creme
2 c miniature marshmallows

Steps:

  • 1. PREHEAT OVEN TO 350F. FINELY GRIND GRAHAM CRACKERS, TOASTED ALMONDS AND 3 TABLESPOONS OF SUGAR IN A FOOD PROCESSOR. ADD 1/2 CUP MELTED BUTTER; PROCESS MIXTURE UNTIL MOIST CRUMBS FORM. PRESS GRAHAM CRACKER CRUST ONTO BOTTOM AND UP SIDES OF 9-INCH DIAMETER SPRINGFORM PAN WITH 2 3/4 INCH HIGH SIDES. BAKE CRUST UNTIL EDGES ARE GOLDEN, ABOUT 12 MINUTES. COOL GRAHAM CRACKER CRUST. COOL GRAHAM CRACKER CRUST COMPLETELY.
  • 2. SPREAD 2 CUPS OF SOFTENED ICE CREAM IN CRUST. SPOON 3/4 CUP OF FUDGE SAUCE OVER. FREEZE UNTIL FUDGE SAUCE IS JUST SET, ABOUT 10 MINUTES. FREEZE REMAINING ICE CREAM TO PREVENT ICE CREAM FROM MELTING. REPEAT LAYERING WITH 2 CUPS ICE CREAM, THEN 3/4 CUP OF SAUCE. CONTINUE LAYING TILL ICE CREAM IS GONE. COVER AND FREEZE OVERNIGHT. REFRIGERATE REMAINING FUDGE SAUCE.
  • 3. PREHEAT BROILER. WARM REMAINING FUDGE SAUCE IN SMALL SAUCEPAN OVER LOW HEAT. REMOVE FROM HEAT. PLACE CAKE ON BAKING SHEET. SPREAD MARSHMELLOW CREME OVER TOP OF CAKE. SPRINKLE MARSHMALLOWS OVER IN A SINGLE LAYER. BROIL JUST UNTIL MARSHMALLOWS ARE DEEP BROWN, WATCHING CAREFULLY NOT TO BURN, ABOUT I MINUTE.
  • 4. RUN KNIFE BETWEEN PAN SIDES AND CAKE IS LOOSEN. REMOVE PAN SIDES. CUT CAKE IN WEDGES. DRIZZLE SOME OF THE REMAINING FUDGE SAUCE ON CUT PIECES. SERVE CAKE IMMEDIATELY AND IF YOU HAVE ANY LEFTOVERS WHICH I DOUBT YOU WILL FREEZE!!

150 ml Baileys Irish Cream, with a hint of
coffee
50 ml milk
30 g butter
350 g caster sugar
300 g white chocolate
butter, for greasing

Steps:

  • Grease the cake tin with butter and chop up your white chocolate into small pieces, the smaller the better. Put both to one side.
  • Measure out 125ml of Baileys and pour it into the saucepan.
  • Add the milk, butter and caster sugar and put the pan over a low heat. Stir occasionally, until the sugar has dissolved and the butter melted - this will take about 10 minutes, and it's best not to rush it.
  • Turn up the heat to medium and let the mixture gently simmer while stirring constantly. You want the bubbles to be calmly breaking the surface for 10 minutes.
  • Remove the pan from the heat and stir in your chopped-up chocolate and last 25ml of Baileys. Keep stirring until the chocolate has melted and you have a beautifully smooth consistency; this will take about 3-5 minutes.
  • If the chocolate is being a bit slow to melt, put the pan back over a low heat and stir until silky smooth.
  • Transfer to the tin and chill in the fridge for at least two hours, or until it has set completely.
  • Remove from the fridge, run a knife around the edge and push the bottom out to release the fudge from the tin. Cut into pieces and enjoy!

1 pkg 2 layer size devil's food or german chocolate cake mis
1 8 oz. carton dairy sour cream
1/2 c cooking oil
1/2 c water
4 eggs
1 box 4-serving size instant chocolate fudge pudding mix
1/4 c coffee liqueur
2 Tbsp finely shredded orange peel
1 tsp ground cinnamon
1 pkg 12 oz. semi-sweet chocolate chips
powdered sugar, optional

Steps:

  • 1. Grease and flour a 10-inch fluted tube pan. Heat oven to 350°.
  • 2. In large mixer bowl combine cake mix, sour cream, oil, water, eggs, pudding mix, liqueur, orange peel, and cinnamon. Beat with an electric mixer on low speed until blended, Scraping sides of bowl constantly. Beat on medium speed for 4 minutes. Stir in chocolate chips.
  • 3. Pour into prepared pan. Bake in 350° oven for 50-60 minutes or until a toothpick inserted near the center comes out clean.
  • 4. Cool on wire rack 10 minutes. Remove from pan, and cool on rack. Sprinkle with powdered sugar, if desired.
  • 5. To make this a gluten free recipe, use a good quality 2 layer gluten-free chocolate cake mix, and make sure the ingredients used are also gluten free. There are GF substitute ingredients for every item in this recipe. I hope you like it. Something different and rich, and people do not know it is GF unless you tell them!

4 brownies or pound cake slices
1 pint coffee ice cream
1 cup prepared hot fudge sauce
2 tablespoons dark roast coffee beans
1/4 cup strong coffee
1/2 cup salted Spanish peanuts (the small peanuts with skins)

Steps:

  • Line dessert bowls with brownie squares or pound cake. Set coffee ice cream out to soften a bit. Heat hot fudge sauce over low heat or in the microwave. Place dark-roast coffee beans in a heavy duty plastic food storage bag and crush them with a small heavy skillet or mallet. If you have a coffee grinder, grind the beans on coarsest setting. Add beans to sauce with 1/4 cup (2 ounces), strong coffee. Scoop coffee ice cream on cake or brownies. Top with coffee fudge sauce and salted nuts and serve. WOW!
