COFFEE CUP EGG SCRAMBLE
Here's a recipe that is easy enough for your older child to make on his or her own, while you're getting the younger ones out of bed.

Steps:
- 1. Coat a 12-ounce microwave-safe coffee mug with cooking spray. Add eggs and milk, and beat until blended. Microwave on HIGH 45 seconds. Take mug out of the microwave and stir. Add cooked crumbled sausage or bacon or ham. Place mug back into the microwave and cook for another 30 to 45 seconds longer, or until eggs are set. Top with cheese and season with salt and pepper.
- 2. Microwave ovens vary. Cooking times may need to be adjusted. You can make it lower in fat by using a low fat cheese, skim milk, one whole egg and a three egg whites or 1/3 a cup of liquid egg whites. Instead of cheese, add a few spoonfuls of salsa or add cooked small chunk potatoes to it as well. You can eat the eggs right out of the mug or pop it out on a plate and serve with a couple of pieces of whole wheat toast.

I don't know where I got this recipe but I really like it. My daughter-in-law makes this every now and then to take to work. She gets it together the night before and cooks it...

- 1. Put 2 cracked eggs in plastic bag or container Add 2 tablespoons milk Cook bacon ahead of time and put in separate plastic bag after break up into small pieces...sprinkle as much as you want on your eggs before adding cheese..
- 2. Instructions 1.Coat a 12-ounce microwave-safe coffee mug with cooking spray. Add eggs and milk; beat until blended. (They will be already blended in your plastic bag).
- 3. 2.Microwave 45 seconds at high power; stir. Microwave 30 to 45 seconds more, or until eggs are almost set (see Note). Top with cheese, bacon and season with salt and pepper, and serve.

- 2)Microwave on HIGH 45 seconds, carefully remove from microwave and stir in seasonings. Return to microwave. Microwave until eggs are almost set, 30-45 seconds longer.
- 3) TOP with cheese. Serve with favorite condiments or by itself.
- Personal note: We top with homemade salsa and often add dehydrated onions to the first Microwave step. There was also some interesting nutritional information at the bottom of this recipe which I will now also include.
