1 Tbsp. instant coffee
1 c. boiling water
2 c. sifted all-purpose flour
2 tsp. double acting baking
powder
1/2 tsp. salt
6 egg whites and yolks,
separated
1/2 tsp. cream of tartar
2 c. sugar
1 tsp. vanilla
1 c. finely chopped pecans or
walnuts

Steps:

  • Stir coffee into water until dissolved. Cool. Heat oven to 350 degrees. Sift together flour, salt and baking powder. In large bowl, beat egg whites with cream of tartar until mounds begin to form, then add 1/2 c. sugar, 2 tablespoons at a time, continuing to beat until very stiff and straight peaks are formed. Do not underbeat. In large bowl, beat egg yolks until blended. Gradually beat in 1 1/2 cups sugar and vanilla. Now beat at high speed until thick and lemony colored. To this mixture, add flour mixture alternately with coffee. Fold in 1 cup nuts. Fold in stiff egg whites, 1/4 at a time, using no more than 15 strokes each time. Pour into ungreased 10-inch tube pan. Bake 60 to 70 minutes.

1/2 cup all-purpose flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon instant coffee powder
Pinch salt
4 tablespoons unsalted butter, melted
1 3/4 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cardamom
1/2 cup strong brewed coffee
1/3 cup sour cream
2 sticks (1 cup) unsalted butter, room temperature
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Spray and line with parchment a 9-by-9-inch baking pan; spray the parchment as well.
  • For the crumb topping: In a medium bowl, mix the flour, brown sugar, cinnamon, instant coffee powder and salt. Add the melted butter and mix until crumbs form that you can clump together in your hand. Set aside.
  • For the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt and cardamom. In a smaller bowl, whisk together the coffee and sour cream until smooth.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing until each is well combined. Then add the vanilla extract and beat until the mixture is light and fluffy.
  • Starting and ending with the dry ingredients, alternate adding the flour mixture and the coffee mixture to the stand mixer; mix each addition well, scraping the bowl each additions.
  • Pour the batter into the prepared baking pan and top with crumb topping, spreading it evenly. Bake for 45 minutes or until a toothpick comes out clean.
  • Remove the cake from the oven and allow to cool for 20 to 30 minutes before cutting and serving.

1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1-1/4 cups sugar
2 eggs
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 cup milk
1 cup chopped walnuts
TOPPING:
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold butter
1/2 cup finely chopped walnuts

Steps:

  • In a large bowl, cream the cream cheese, butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, cinnamon and baking soda; add to the creamed mixture alternately with milk, beating well after each addition. Stir in walnuts. Pour into a greased 13x9-in. baking pan., For the topping, combine the flour, sugar and cinnamon; cut in butter until coarse crumbs form. Stir in walnuts. Sprinkle over coffee cake. , Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

Unsalted butter, room temperature, for pans
1 1/2 cups sugar
3 tablespoons cornstarch
1/4 teaspoon coarse salt
6 large egg whites, room temperature
Pinch of cream of tartar
1/3 cup sugar
1/4 cup all-purpose flour
Pinch of coarse salt
1 1/2 cups buttermilk
3 large egg yolks
1/2 vanilla bean, split lengthwise and seeds scraped
Nonstick cooking spray
1/3 cup sugar
2 tablespoons corn syrup
Whipped cream, for serving

Steps:

  • Meringue: Preheat oven to 275 degrees. Butter three 8-inch round cake pans. Line bottoms and sides with parchment, leaving at least 1/2 inch extra on sides; butter parchment. Pulse sugar, cornstarch, and salt in a food processor until finely ground.
  • With a mixer on medium-high speed, beat egg whites and cream of tartar until soft peaks form. Beat in sugar mixture, 1 tablespoon at a time, then beat until stiff, glossy peaks form, about 5 minutes more. Divide mixture among pans; smooth tops. Bake 1 hour, then turn off oven and prop open door. Let cool 1 hour. Transfer pan to a wire rack; let cool completely.
  • Cream: In a bowl, whisk together sugar, flour, and salt. In a saucepan, combine buttermilk, yolks, and vanilla pod and seeds; place over medium heat. Gradually whisk in sugar mixture. Cook, stirring, until just boiling, about 9 minutes. Strain through a fine-mesh sieve, pressing on solids; press plastic wrap directly on surface and refrigerate until cold, at least 1 hour and up to 3 days.
  • Caramel: Coat a baking sheet with cooking spray. Stir together sugar and corn syrup in a microwave-proof bowl. Microwave on high 3 minutes, stirring after each minute. Stir again, then microwave just until golden and caramelized, about 15 seconds more. Immediately pour mixture onto prepared sheet and let cool until firm. Remove from sheet; finely chop.
  • Using parchment, lift meringue cakes from pans; discard parchment. Carefully place one cake on a platter or cake stand. Spread half of cream on top. Sprinkle with 3 tablespoons caramel. Repeat with second cake layer, remaining cream, and 3 more tablespoons caramel. Top with whipped cream and remaining caramel; serve immediately.
