1 ⅔ cups all-purpose flour
¾ teaspoon baking soda
½ cup white sugar
2 cups semisweet chocolate chips
½ cup packed brown sugar

Steps:

  • Combine the flour, baking soda, white sugar, and the chocolate chips. Place 1/2 of the mixture in a clean quart sized glass jar, and pack firmly. Place the brown sugar on top, again packing firmly. Place the remaining flour mixture on top. Cover with a lid.
  • Attach an index card with the following directions: Empty contents of jar into a large bowl. In separate bowl combine 3/4 cup of butter, 1 1/2 eggs, and 1 teaspoon vanilla. Beat until creamy. Add to dry mixture. Drop by tablespoonful onto an ungreased cookie sheet, and bake in a preheated 375 degrees F (190 degrees C) oven for 8 to 10 minutes.

¾ cup blanched slivered almonds
⅓ cup instant coffee granules
2 tablespoons hot water
2 ⅔ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
1 ¼ cups white sugar
1 teaspoon vanilla extract
2 eggs
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toast almonds in oven for 10 minutes or until brown.
  • Dissolve coffee in 2 tablespoons hot water. In a separate small mixing bowl mix flour, baking soda and salt.
  • Beat butter and sugar in an electric mixer at a medium speed until fluffy. Pour coffee, vanilla and eggs into the butter mixture; mix well. Reduce mixer's speed to low and slowly pour flour mixture into the butter mixture.
  • Fold chocolate chips and almonds into the dough. Drop dough by teaspoonfuls onto an ungreased cookie sheet, 3 inches apart.
  • Bake for 10 minutes.

2 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 cup sugar
1 cup semi-sweet chocolate chips
2 eggs
1 cup sour cream
1/2 cup butter, softened
1 teaspoon vanilla extract

Steps:

  • Creating the Gift in a Jar:
  • Wash and thoroughly dry a 1-quart wide-mouth canning jar.
  • Layer the ingredients in the jar as listed above starting with the flour, cinnamon, baking soda, baking powder, sugar and then chocolate chips - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
  • Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
  • CHOCOLATE CHIP COFFEE CAKE GIFT TAG:
  • Additional ingredients to be added by the recipient: 2 eggs, 1 cup sour cream, 1/2 cup butter, softened and 1 tsp vanilla extract.
  • CHOCOLATE CHIP COFFEE CAKE INSTRUCTIONS:
  • Preheat oven to 350.
  • Place the eggs, sour cream, butter and extract in a large bowl and blend with an electric mixer set on low speed.
  • Add the contents of the jar and continue to blend for 2 minutes.
  • Pour the batter into a generously greased 9 x 13 inch pan.
  • Bake for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Cool for 10 minutes in the pan, then remove the cake and cool completely on a wire rack.
  • Store in an airtight container for up to 1 week.

1 cup mashed ripe bananas (about 2 medium)
1/2 cup miniature semisweet chocolate chips
1/4 cup granulated sugar
1/3 cup milk
2 tablespoons butter or margarine, softened
1/2 teaspoon ground cinnamon
1 egg
1 cup powdered sugar
1 tablespoon milk
1/2 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Spray 8-inch square pan with cooking spray. In medium bowl, stir all coffee cake ingredients with wire whisk or fork until blended. Spread in pan
  • Bake 26 to 30 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 30 minutes.
  • In small bowl, mix all glaze ingredients until smooth. If necessary, add additional milk, 1 teaspoon at a time, until thin enough to drizzle. Drizzle glaze over warm coffee cake. Serve warm.

1 cup brown sugar
1/2 cup granulated sugar
1 1/2 cups semi-sweet chocolate chips
2 1/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/3 cup instant coffee
1 egg
1 teaspoon vanilla
1 cup butter or 1 cup Butter Flavor Crisco
2 tablespoons hot water

Steps:

  • Mix the salt and baking soda in with the flour, then layer the ingredients except for the instant coffee, egg, margarine and water into the jar so that would be Brown sugar, sugar, chocolate chips, flour mixed with salt and baking soda.
  • Place the instant coffee in a snack size baggie and seal.
  • Attach a gift card with the following instructions:.
  • Coffee Chocolate Chip Cookies.
  • Sift dry ingredients through a colander to separate the chocolate chips from other ingredients.
  • Beat 1 cup of unsalted butter or margarine or butter flavored Crisco in a medium bowl.
  • Dissolve the coffee in 2 tablespoons hot water.
  • Beat sifted ingredients into butter until blended.
  • In a small bowl, beat 1 egg with 1 teaspoon vanilla extract.
  • Mix beaten egg mixture into butter mixture until blended.
  • Add dissolved coffee and beat again.
  • Stir in chocolate chips.
  • Drop teaspoonsful of batter, spaced well apart, (or roll into balls) onto a greased cookie sheet.
  • The cookie yield is approximate as I always make large cookies.
  • Bake at 350-375 degrees F for 8 minutes or until lightly browned.
