Pumpkin, Sweet Potato, Leek and Coconut Milk Soup image

This is a beautiful and flavorful soup that is made with pumpkin and sweet potato, and seasoned with onion and leek. Velvety coconut milk adds a nice finishing touch.

1 tablespoon vegetable oil
1 onion, finely chopped
1 leek, chopped
1 pound peeled and diced pumpkin
¾ pound sweet potato, peeled and cubed
1 quart vegetable broth
1 ¼ cups light coconut milk

Steps:

  • Heat the oil in a soup pot over medium heat. Add the onion and leek, and cook for a few minutes, until soft. Stir in the pumpkin, sweet potato, and vegetable broth. Bring to a boil, then cover and reduce heat to low.
  • Simmer for about 15 minutes, until vegetables are tender. Mash vegetables coarsely using a potato masher. Stir in the coconut milk, season with salt and pepper, and serve.

We love good soups and to combine sweet potatoes and leeks is definitely a marriage made in heaven. This soup is thick, rich and hardy and good hot or cold.

Number Of Ingredients 13

1 Tbsp red palm oil
1 medium sweet onion, chopped
3 clove garlic chopped fine
3 large leeks, green bottoms removed, top white part cut in rings and cleaned
1 large green apple, peeled and cored
2 tsp ground cumin
1/4 tsp fresh ground nutmeg
1 tsp dried sage
4 c filtered water
4 medium yams, peeled and chopped into large cubes.
1 can(s) premium coconut milk
good quality sea salt and fresh ground pepper to taste
1 Tbsp dried parsley for garnish (optional)

Steps:

  • 1. Saute the onions with the palm oil in a large sauce pan or soup pot over medium heat for a few minutes. Stir frequently to prevent the onions from browning or burning, just soften them.
  • 2. Add the apple, garlic and leeks to the pan and saute for approximately 5 minutes to allow everything to get soft.
  • 3. Sprinkle in the cumin, nutmeg and sage and stir in well.
  • 4. Add the water and yams. Bring to a boil and simmer for about 20 minutes until the yams are soft.
  • 5. Remove the soup from the heat and slowly mix in the coconut milk and give it a good stir. Season with salt and pepper.
  • 6. Puree the soup right in the pot with a stick blender, it's so easy to do it this way. Serve in a bowl and sprinkle a little parsley on top to garnish.
  • 7. Serve either hot or cold. I like it both ways. It's good the next day since it gives the seasonings a chance to permeate through the soup.
  • 8. Enjoy!

COCONUT YAM CURRY SOUP

I got inspired by other recipes on this site to make my own version of this vegetarian soup and it came out delicious!

Number Of Ingredients 10

3 medium yams, baked (or sweet potatoes)
1/2 onion
6 garlic cloves
1 1/2 cups low-fat soymilk or 1 1/2 cups milk
1 teaspoon curry powder (or more to taste)
1 teaspoon black pepper
1 vegetable bouillon cube
chopped cilantro (optional)
1 tablespoon margarine or 1 tablespoon oil, for sautaeing
7 ounces light coconut milk (or more to taste)

Steps:

  • Chop onions and garlic and sauté in butter in a large saucepan until onions are translucent but not brown.
  • Meanwhile puree yams one at a time in a blender with ½ cup soymilk each and add to saucepan.
  • Add bouillon, curry powder, pepper and coconut milk and heat until bouillon is incorporated, five to ten minutes.
  • Garnish with cilantro and serve with naan bread or Rycrisp.
