1/2 to 1 Tbsp canola oil (enough to coat baking dish)
PINEAPPLE-RUM SAUCE
1 Tbsp cuban rum (such as bacardi)
1/4 cup banana, cut into small chunks
1/4 cup pineapple chunks
1/2 cup lite coconut milk
1/4 cup orange juice
1 tsp lime juice (fresh squeezed is preferred)
1 pinch sea salt
SCALLOPS
12 large sea scallops (about 1 to 1 1/4 pounds total)
1/2 cup all-purpose flour
2 large eggs
1/2 cup grated coconut

Steps:

  • 1. Preheat oven to 350°F. Lightly coat bottom of 9-inch baking dish with oil; set aside.
  • 2. Place Pineapple-Rum Sauce ingredients in a food processor, and puree until smooth. Set aside.
  • 3. Place flour in a shallow dish. Crack eggs into a separate shallow dish, and beat with a fork until smooth. Place grated coconut in a separate shallow dish.
  • 4. Dredge scallops in the flour, turning 2 or 3 times until well coated. Then roll scallops in the beaten egg until coated on all sides. The roll scallops in coconut until well coated.
  • 5. Placed coconut-covered scallops in baking sheet so they don't overlap. Bake for 15 to 18 minutes or until the coconut begins to turn a light golden brown (but don't let the coconut burn).
  • 6. While the scallops are baking, warm the Pineapple-Rum Sauce (for about 3 to 4 minutes in a saucepan over medium heat on the stove, or about 30 to 45 seconds in a microwave oven).
  • 7. For each serving, arrange 3 coconut-encrusted scallops on each plate, and spoon about 1/4 cup of the warm Pineapple-Rum Sauce over the scallops. Serve immediately while still warm.

SCALLOPS, OKRA, AND TOMATOES IN COCONUT CURRY SAUCE

1/2 pound small fresh okra
1 pound plum tomatoes
1 tablespoon plus 1/2 teaspoon salt
1 small onion, chopped
1 large garlic clove, chopped
1 (1-inch) piece peeled fresh ginger, chopped
2 to 3 teaspoons minced fresh jalapeño chile (including seeds)
1 cup low-sodium fat-free chicken broth
1 1/4 pound sea scallops, tough muscle removed from side of each if necessary
1/4 teaspoon black pepper
2 teaspoons vegetable oil
1 1/2 teaspoons curry powder (preferably Madras)
2/3 cup well-stirred canned reduced-fat coconut milk
1/4 cup loosely packed fresh cilantro leaves
Accompaniment: spiced basmati rice

Steps:

  • Trim tops of okra, being careful not to cut into pods.
  • Cut an X in bottom of each tomato and immerse tomatoes in a 2-quart saucepan of boiling water for 10 seconds. Transfer tomatoes with a slotted spoon (save boiling water) to a bowl of ice and cold water to cool, then peel. Add 1 tablespoon salt to boiling water, then add okra and cook, uncovered, until just tender, about 5 minutes. Drain okra in a colander, then plunge into same ice water to stop cooking. Drain okra and pat dry with paper towels.
  • Quarter tomatoes lengthwise and seed, then cut each quarter lengthwise into 1/2-inch-wide strips.
  • Purée onion, garlic, ginger, jalapeño (to taste), and 1/4 cup chicken broth in a blender.
  • Pat scallops dry and sprinkle with pepper and remaining 1/2 teaspoon salt. Brush a 12-inch nonstick skillet with 1/2 teaspoon oil and heat over moderately high heat until just beginning to smoke. Brown scallops in 2 batches, turning once, about 4 minutes total. Transfer scallops as browned with tongs to a plate and keep warm, covered with foil. (Scallops will not be cooked through.)
  • Add remaining 1 1/2 teaspoons oil to skillet and reduce heat to moderate. Add purée carefully (it may splatter), then add curry powder. Boil, stirring constantly, 2 minutes. Add coconut milk and remaining 3/4 cup broth and bring to a simmer. Add tomato strips and simmer, stirring frequently, until tomatoes are softened, 3 to 4 minutes. Season sauce with salt and pepper.
  • Stir in scallops and okra and simmer until scallops are just cooked through, about 3 minutes. Divide scallops, vegetables, and sauce among 4 plates and sprinkle with cilantro.

COCONUT SCALLOPS

1 1/2 cups sweetened flaked coconut
2 cups boiling-hot water
1/4 teaspoon cayenne
1/2 teaspoon salt
10 medium sea scallops (about 1/2 pound)
1/2 cup all-purpose flour
1 large egg
1/2 cup vegetable oil
Accompaniment: lime wedges

Steps:

  • Preheat oven to 350°F.
  • In a small bowl stir together coconut and water. Drain coconut in a sieve and pat dry. On a baking sheet spread coconut in one layer and bake in middle of oven until pale golden, about 10 minutes. In a bowl stir together coconut, cayenne, and salt.
  • Remove tough muscle from side of each scallop if necessary. Pat scallops dry and season with salt and pepper. In 2 separate shallow bowls have ready flour and lightly beaten egg. Dredge scallops in flour, shaking off excess. Dip each scallop in egg, letting excess drip off, and coat well with coconut.
  • In a 10-inch skillet heat oil over moderate heat until hot but not smoking and cook scallops until golden and just cooked through, about 1 1/2 minutes on each side. Drain scallops on paper towels.
  • Serve scallops with lime wedges.

One 6-ounce sea bass cut into 2 thin slices
2 tablespoons Guajillo Chile Marinade, recipe follows
1/4 cup Coconut Lemon Grass Reduction Sauce, recipe follows
10 to 20 scallops sliced into 2 thin pieces
1 teaspoon blackened seasoning, galangal powder blend
Neutral oil
1/3 cup currant, stemmed or yellow and red pear tomatoes
1/2 ounce baby spinach, fresh
1 ounce enoki mushrooms
One 1-ounce thinly sliced smoked salmon
1 sprig rosemary, 4-inches in length
1/4 avocado, diced
1 teaspoon orange tobiko (Japanese flying fish roe)
1 1/4 pounds dry guajillo chiles, cleaned
1 to 2 quarts rice vinegar
1 cup brown sugar
12 ounces sriracha chili paste (Thai chili paste)
1 pint Ginger Oil, recipe follows
8 ounces ginger, bruised
1 cup olive oil
1 quart coconut milk
3 1/2 stalks lemon grass, trimmed cleaned and bruised
1 ounce chipotle puree
4 ounces sugar
1 cup lime juice
1/4 cup rice vinegar
Heavy cream, as needed if sauce breaks

Steps:

  • Baste raw bass pieces with Guajillo Chile Marinade and set aside. Heat coconut reduction sauce and set aside, keep warm. Brush scallops with blackened galangal powder blend and sear quickly, set aside and keep warm. Heat saute pan with little oil at medium low heat. When oil is hot, add bass, careful not to burn fish. Chile marinade contains a lot of sugar so watch your temperature, keep it low. Blacken tomatoes in 1 tablespoon of neutral oil. Add spinach and enoki mushrooms. Cook down until spinach has wilted and sauce is hot. Check on bass and turn when ready. Plate the dish when fish is done. Place coconut reduction sauce on large plate to cover completely. Place spinach mushroom mixture in center of plate. Place largest piece of bass on top of spinach. Place scallops on top of bass. Cover scallops with smoked salmon slices (salmon is chilled or at room temperature, do not cook). Cover salmon with second piece of bass and use rosemary sprig to hold it all in one place. Add avocado around the outside of fish and garnish with tobiko.
  • Place dry chiles in large stockpot and cover with rice vinegar. Place sugar on top and bring to simmer, allow to cook until chiles are tender. Place chiles in blender and puree. Use liquid as needed for puree. Add Ginger Oil to 2 quarts of the puree and mix well.
  • Mix and bring to a boil, then leave at room temperature for 2 hours. Strain.
  • Place coconut milk and lemon grass in large pan and bring to simmer, do not boil. Reduce heat by 65 to 70 percent and cool. Add remaining ingredients working in slowly and tasting so as not to over-season. Chill and hold. Use heavy cream if sauce breaks.

CREAMY COCONUT LEMONGRASS AND ASPARAGUS RISOTTO WITH SCALLOPS

1 tablespoon butter
1 onion, finely chopped
3 tablespoons finely chopped lemongrass, white part only
2 garlic cloves, finely sliced
3 tablespoons curry powder
250 ml white wine
1 liter coconut cream
1/2 cup wine
600 ml fish stock
1/4 cup olive oil
3 tablespoons butter
4 shallots, finely chopped
12 asparagus spears, cut off tips to 4cm and chop remaining stalks into small pieces
1 1/2 cups arborio rice
30 large scallops
sea salt

Steps:

  • To make the coconut base: Melt butter in a pot. Toss in onion, lemongrass and garlic and sweat off for about 2 minutes or lightly transparent.
  • Add curry powder and cook over a low heat for another 2 minutes.
  • Add wine, bring to the boil, and reduce on medium heat for about 5 minutes.
  • Add coconut cream and cook over a low heat for about 10 minutes. Season with salt and pepper.
  • Puree with a stick mixer or blender and strain. Use 1 cup of this mixture to use in the risotto and keep it warm. Reserve and freeze rest of this liquid for another time if you wish.
  • To make the risotto: Put fish stock in a pot and bring to the boil, then reduce to a slow simmer.
  • Heat 2 Tablespoons olive oil in a heavy base saucepan, add 1 Tablespoon of the butter then cook the shallots and asparagus pieces (NOT THE SPEAR TIPS). Cook over a low heat for 3 minutes.
  • Add rice and turn up heat and cook for 2 minutes, stirring constantly.
  • Add wine and let it evaporate.
  • Lower heat then start adding stock, a ladle at a time, stirring occasionally, until rice is almost tender, about 20 minutes.
  • Add coconut base and cook another 5 minutes, until rice is tender. Remove from heat and rest for 2 minutes before folding in remaining 2 Tablespoons of butter.
  • In the meantime, bring a large pot of water to the boil, blanch asparagus tips for 30 seconds, drain, then refresh under cold , drain again and put aside.
  • Heat a little olive oil in a frying pan until hot. Cook scallops in batches for 30 seconds on each side. Season with salt and pepper, keep warm and set aside.
  • Add asparagus spears to pan to heat through.
  • Dish risotto into bowls, top with asparagus spears and scallops and drizzle with a little olive oil.

2 lbs fresh raw sea scallops
28 ounces unsweetened coconut milk
1/4 cup lime juice (I prefer the lime) or 1/4 cup lemon juice (I prefer the lime)
1 tablespoon ground ginger
1/4 teaspoon white pepper
2 tablespoons chopped fresh basil
1 tablespoon fish sauce, plus
1 teaspoon fish sauce

Steps:

  • In a large skillet, combine coconut milk, lime juice, ginger, and white pepper and bring to a boil.
  • Reduce heat to med-low to simmer. Add scallops. Cover and simmer for about 8 minutes or until scallops are opaque.
  • Remove scallops with a slotted spoon and place in a shallow dish. Keep warm by covering w/ foil.
  • Meanwhile, boil remaining coconut milk mixture over high heat for 10-15 minutes or until reduced to 1 1/2 cups.
  • Stir in basil and fish sauce. Pour over the cooked scallops.

3 tablespoons olive oil
4 habanero peppers, seeded and sliced
1 small Spanish onion, sliced
Kosher salt and freshly ground black pepper, to taste
1 cup coconut milk
1/4 cup chicken stock
1 ripe mango, peeled, pitted and diced
1 cup canned kidney beans, drained and rinsed
2 habanero peppers, seeded and diced
2 cloves garlic, chopped
1 bunch fresh parsley, chopped
2 limes, juiced
1 avocado, sliced
4 cups canola oil
2 flour tortillas
Kosher salt, to taste
Ground cumin, to taste
Lime juice, to taste
2 tablespoons olive oil
4 large sea scallops, cleaned
Kosher salt and freshly ground black pepper, to taste

Steps:

  • For the coconut habanero sauce:
  • In a saute pan over medium heat, heat 3 tablespoons olive oil and cook the habenero peppers and onion until the onion is browned. Season the mixture with salt and pepper. Pour the mixture into a blender or food processor, add the coconut milk and chicken stock and blend until smooth. Add salt if needed.
  • For the salsa:
  • Combine the mango, beans, habanero peppers, garlic, parsley, and lime juice. Stir to combine. Season with salt, and pepper, to taste. Garnish the salsa with avocado slices.
  • For the tortillas:
  • In a deep, heavy-bottomed saute pan with high sides, heat the oil to 350 degrees F. Cut the tortillas into 6 diamond shaped pieces. Working in batches and careful not to overcrowd the pan, fry the tortillas in the oil until golden brown. Drain the tortillas on paper towels and transfer to a large bowl. Toss the tortillas with salt, cumin, and lime juice.
  • For the scallops:
  • Heat a saute pan over medium-high heat and add in 2 tablespoons olive oil. Season the scallops with salt and pepper. Sear scallops for 2 minutes per side until golden brown.
  • For serving, place 2 scallops in each plate. Drizzle sauce over top of them and serve with a side of salsa and a few tortilla chips.

1 cup flat leaf (italian) parsley or mint or 1/2 cup each
1/2 cup chopped green onions
1 cup canned coconut milk, unsweetened
1/4 cup flaked coconut
2 jalapeno chilies chopped
1 garlic clove
1/4 cup light brown sugar
2 tbsp. vegetable oil
1 tbsp. olive oil
juice of 2 limes
chili powder to taste
salt and pepper to taste
1 1/2 lbs. sea scallops
salt and pepper
2 eggs
2 tbsp. milk
3 cups japanese bread crumbs (panko)
about 1 cup vegetable oil

Steps:

  • 1. To make the chutney, mix all the chutney ingredients (up to the scallops) in a blender and set aside. Season the scallops with a little salt and pepper to taste. Beat the eggs and milk together. Put the Panko in another bowl. Heat the oil in a saute pan over medium high heat. Dip the scallops in the egg mixture first and then in the panko. Put scallops in hot pan and saute until they are golden brown and they are just barely cooked through. Serve them with the chutney.
