3 cups all-purpose flour
2 teaspoons baking soda
1 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
3 eggs
1 cup vegetable oil
1 cup white sugar
1 cup light brown sugar
½ cup sour cream
2 teaspoons vanilla extract
3 cups grated unpeeled zucchini
1 (20 ounce) can crushed pineapple, well drained
½ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. Stir together flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice in a bowl until well blended; set aside.
  • Whisk eggs, oil, white sugar, and brown sugar together in a large bowl. Stir in sour cream, vanilla, zucchini, pineapple, and coconut. Stir in the flour mixture, mixing just until moistened. Divide batter between the prepared loaf pans.
  • Bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes. Cool in pans for 10 minutes, then remove and finish cooling on a wire rack.

2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
3/4 cup granulated sugar
1/4 cup canola oil
1/4 cup nonfat plain yogurt
2 eggs
2 medium ripe bananas, mashed
1 tablespoon vanilla extract
8 ounces canned crushed pineapple, drained
1/2 cup chopped walnuts
1/2 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350°F.
  • Spray 9 x 5-inch loaf pan with cooking spray.
  • Combine flour, baking soda, salt, nutmeg and ginger in a bowl and stir with a whisk to combine.
  • Set aside.
  • Place sugar, oil, yogurt and eggs in mixer bowl and beat at medium speed until well blended.
  • Add banana, vanilla and pineapple.
  • Mix until blended.
  • Add flour mixture and beat on low until just moist.
  • Stir in walnuts and coconut.
  • Put batter in loaf pan and bake 60-70 minutes or until a wooden pick inserted in center comes out clean.
  • Cool in pan 10 minutes on wire rack.
  • Remove from pan and cool completely.

3 c flour
2 c sugar
1 1/4 tsp cinnamon
1 tsp baking soda
2 tsp vanilla extract
3 eggs
1 1 /4 c vegetable oil
1 - 8 oz crushed pineapple - drained
2 c mashed banana's
1/2 - 2/3 c flaked coconut
3/4 c nuts - your choice - i used pecans...macadamia is great in this bread

Steps:

  • 1. Preheat oven to 350 degree F. Grease two 8 x 4 inch bread pans. In a medium bowl; blend dry ingredients.
  • 2. In another bowl whisk oil, eggs and vanilla. Beat the oil mixture into the dry ingredients. Will be thick. Do not over beat. Fold in the banana's, coconut, pecans and pineapple.
  • 3. Pour batter evenly into the two prepared bread pans and bake for 55 - 65 minutes or until pick comes out clean.
  • 4. Cool for ten minutes before removing from pans to continue cooling on wire racks. I made a glaze for mine: 4 oz cream cheese 1/2 tsp vanilla 1 cup confectioners' sugar 1 1/2 to 2 Tbsp milk Whip the cream cheese on high for 1 minute until fluffy. Add vanilla and slowly stir in the confectioner's sugar. Add milk 1 tablespoon at a time until it reaches the right consistency. The icing will be thick but pourable.

1/2 c macadamia nuts, toasted and coarsely chopped
2 Tbsp wheat bran, toasted
3 c unbleached all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground himalayan sea salt
1 1/2 c brown sugar, such as demerara
3 large free-run eggs, beaten
4 large overripe bananas (about 1 1/4 cups), mashed
1 c fresh pineapple, cut into small pieces
1/2 c applesauce
1/2 c coconut oil
2 tsp pure vanilla extract

Steps:

  • 1. Place macadamia nuts in a single layer on a baking sheet lined with a silicone mat or parchment paper. Transfer to a 325ºF preheated oven and toast for 10 minutes; coarsely chop and set aside. In a small skillet over medium heat, add wheat bran and toast for 2 minutes, set aside to cool off.
  • 2. In a large mixing bowl, combine flour, baking soda, cinnamon, sea salt and brown sugar; whisk to combine. To this add eggs, bananas, pineapple, applesauce, coconut and vanilla extract; stir just enough to combine. Half way through mixing, add the toasted & chopped macadamia nuts; incorporate them into the batter. Divide batter between a 9 x 5-inch loaf pan and two little ones all lightly greased. Tap each pan to remove any trapped air bubbles.
  • 3. Transfer pans to a 350ºF preheated oven and bake for 1 hour or until a cake tester inserted in the center comes out clean. The smaller loaf pans should be done after 35-38 minutes. When the loaves are done, remove from the heat, let cool for 15 minutes before transferring them to a wire rack to cool completely.

This is a really yummy bread. In my opinion, this bread is best served warm with the pineapple butter. Yum! You can half the amount of butter, if you don't think you'll be using that much. Recipe courtesy of Tyler Florence. Note: I like to toast the coconut before I begin this recipe so I don't have to wait around for it. Directions for this can be found at the end. **Also, coconut milk sometimes separates in the can, if this happens then just empty out the can into a bowl and whisk it to combine well. :)

1/2 cup unsalted butter, melted, plus more for greasing the pan
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt

1 lemon, zest of, finely grated
1 1/2 cups unsweetened coconut milk
1 1/2 cups shredded coconut, toasted

Steps:

  • Preheat oven to 375 degrees F. Grease the bottom and sides of a 9 x 5 inch loaf pan with butter.
  • In a large bowl, mix the flour with the baking powder, salt and cinnamon. In another bowl, whisk together the melted butter, brown sugar, eggs, vanilla and the lemon zest. Pour in the coconut milk and whisk it all together.
  • Pour the wet ingredients into the dry ingredients and fold everything together until you have a smooth batter. Gently fold in the shredded coconut until everything is evenly distributed.
  • Pour into the prepared loaf pan and put on top of a cookie sheet. Bake for 1 hour to 1 hour and 15 minutes, or until a wooden toothpick comes out clean when inserted into the center of the bread. Make sure to rotate the bread a few times while cooking to ensure even cooking and browning.
  • Cool the bread in the pan for 20 minutes. When cool enough, release from pan and let completely cool before slicing.
  • Toast the slices of coconut bread, dust with confectioners sugar and serve with the pineapple butter!
  • Pineapple Butter:.
  • Press all of the liquid out of the crushed pineapple. (If there is too much juice, the fruit will separated from the butter.) I like to use a food processor to mix up the pineapple and butter but you can also mash them together in a bowl - just make sure your butter is very soft. Place the butter into a serving bowl.
  • *Note: to toast the cocount, Preheat oven to 350 degrees F. Spread the coconut on a cookie sheet and bake for about 15 minutes, stirring occasionally and checking to make sure it's not getting too well done.

1/3 cup organic cane sugar
1/3 cup dark brown sugar

6 oz. canned crushed pineapple, drain liquid
5 oz. canned cream of coconut (not coconut milk - however I have used coconut milk when I couldn't find cream of coconut and I added a 1/4 tsp of vanilla)

1/2 cup of roughly chopped and toasted macadamia nuts

  • Preheat oven to 350F. Grease a standard loaf pan. Toast the nuts in the oven for about 10 minutes. Cream butter, 2 of the mashed bananas and sugars in a large bowl. Mix in eggs. In a separate bowl, mix the remaining dry ingredients. Mash remaining bananas thoroughly in another bowl (3rd) and fold in pineapple, cream of coconut, and vanilla. Fold both banana mixtures from other two bowls slowly into dry ingredients - don't over mix! Fold in the nuts. Pour batter into the pan.   • 1. Pour pineapple chunks into a fine mesh strainer and allow to sit and drain, at least 10 minutes. On a large rimmed baking sheet spread coconut. Bake until lightly toasted, tossing occasionally, 6 to 10 minutes. (watch closely it burns easily.) Grease bottom and sides of a 9 x 5-inch loaf pan; dust with flour, tapping out excess.

  • Preheat oven to 350°F. Spray two 8-by-4-inch loaf pans with floured cooking spray; set aside. (I have not tried it but I suspect you could bake as muffins, mini loaves, or in a Bundt pan, adjusting baking times accordingly). In a large bowl combine the eggs, coconut oil, buttermilk, sugars, vanilla, and whisk to combine. Add the flour, baking powder, baking soda, nutmeg, salt, and stir to just incorporate; don't overmix because the gluten will overdevelop and bread will be tougher. Stir in bananas. Stir in pineapple (if using frozen, just add it frozen, no need to thaw it first. If using fresh or canned, make sure it's well-drained or it could water-down the batter).
