Cream Cheese Coconut-Pecan Pound Cake W/ Brown Sugar-Praline Gla image

From Southern Living. The bourbon is wonderful, but you may substitute an equal amount of milk, if desired. I've given an alternate recipe for Powdered Sugar Glaze.

Number Of Ingredients 19

1 cup chopped pecans
1 1/2 cups butter, softened
1 (8 ounce) package cream cheese, softened
3 cups sugar
6 large eggs
3 cups all-purpose flour
1/2 teaspoon salt
1/4 cup Bourbon (can substitute equal amount of milk)
1/2 cup sweetened flaked coconut
1 1/2 teaspoons vanilla extract
1/4 cup butter

1 teaspoon light corn syrup
1 1/2 cups powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
2 cups powdered sugar
3 -4 tablespoons milk
1 teaspoon vanilla extract

Steps:

  • FOR THE CAKE:.
  • Preheat oven 350 degrees. Grease and flour a 10" (12-cup) tube pan.
  • Bake pecans in a single layer on a baking sheet 5 - 7 minutes or until lightly toasted and fragrant. (This can be done in a microwave-safe plate in 1 minute increments until the nuts are 'roasted'. Stir every minute for about 3 - 4 minutes total, allowing to sit 5 minutes.).
  • Beat softened butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating at medium speed with an electric mixer until creamy. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, 1 at a time, beating just until yellow dissappears after each addition.

Remove from pan to wire rack; cool completely (about 1 hour). Invert completely cooled pound cake onto a serving plate or cake stand; spoon either Brown Sugar-Praline Glaze or Powdered Sugar Glaze over the top.
  • BROWN SUGAR-PRALINE GLAZE.
  • Melt butter in a 1 quart saucepan over medium heat. Whisk in brown sugar and corn syrup; cook 1 minute. Add powdered sugar, milk and vanilla; whisk until creamy (about 2 minutes). Remove from heat and immediately pour all glazing mixture over cooled cake in a circular motion. Cut cake with a serrated knife. Makes 1 cup.
  • ALTERNATE POWDERED SUGAR GLAZE.
  • Stir together powdered sugar, milk and vanilla until smooth, stirring in up to 1 tablespoon additional milk, if necessary, for desired consistency. Pour all glazing mixture over cooled cake. Makes 1 cup.

TEXAS SIZE ORANGE COCONUT PECAN POUND CAKE

Texas Size Orange Coconut Pecan Pound Cake image

I created this recipe, just so I could use my new 30 cup capacity Bundt pan. The recipe may be a bit ambitious & time consuming for some cooks but it is well worth your efforts. With my step by step PICTURE INSTRUCTIONS YOU SHOULD HAVE NO PROBLEMS. If you don't have a 30 cup bundt pan, you may want to use 2 bundt pans or divide...

Time 3h20m

Number Of Ingredients 20

12 large eggs, separated (room temperature)
1 lb butter softened room temperature
2 medium oranges (zest only) save oranges for garnish
4 c all purpose flour (sifted 2 times)
4 c granulated sugar
1 small box orange jello gelatine
2 c heavy whipping cream
2 Tbsp orange extract
2 c chopped pecans
1 1/2 c unsweetened coconut
2 c golden raisins (covered with water & microwaved for 5 minutes cooled & drained)
ORANGE MARMALADE COCONUT PECAN CREAM CHEESE FROSTING
2 lb powdered sugar
1 lb cream cheese softened, room temperature
2 stick butter softened room temperature
1 1/2 c orange marmalade
1 Tbsp orange extract
1 1/2 c chopped pecans
1 c unsweetened coconut
2 medium oranges (sliced thin) saved from above)

Steps:

  • 1. Preheat oven to 300 Degrees F. Have patience, this is going to take a while to create perfection, it will be worth all of your efforts. This is the 30 cup bundt pan that I used. In case you are wondering The pan was ordered from Fantes.com. The place to order the pan is www.fantes.com, it is a huge store located in Phidelphia all FOOD/COOKING RELATED ITEMS. Click on Bundt pans, then go near the bottom, and you will find the 30 cup capacity one. All the pans list the capacity, but the one near the bottom is the one I used for this recipe. Good Luck, shipment is very fast. I ordered on Monday, & had my pan by Thursday.
  • 2. In your large mixing bowl, add the softened butter, and beat till it comes together & is very creamy.
  • 3. Measure out sugar into a medium size bowl, then add the orange gelatin and stir TO blend.
  • 4. Gradually add sugar mixture to softened butter, and continue to beat till nice and creamy, and no granules remain, about 12 minutes.
  • 5. Add yolks one at a time, beating well after each addition.
  • 6. Measure out flour into a sifter and sift into another bowl at least 2 times. This will lighten the cake batter.
  • 7. Gradually begin to add flour to the creamed mixture, but alternate with the whipping cream. I showed 1 unit in the pix but I used 2 cups.
  • 8. Add orange zest.
  • 9. Add orange extract and continue beating to blend.
  • 10. Combine chopped pecans with unsweetened coconut and add to cake batter. Beat till blended.
  • 11. At this point I had to switch to a much larger bowls and you may need to also. I finished the cake by hand using a spatula, or you can use a large spoon.
  • 12. After switching to a larger bowl, add the drained raisins, and then blend together in the mixing bowl.
  • 13. Now with a clean beater, beat the egg whites till they form stiff peaks, if it is a rainy day the peaks will not get too stiff.
  • 14. Add beaten egg whites to bowl, and gently FOLD egg whites into cake batter,by going from top to bottom all the while slowly turning the bowl. THE PURPOSE OF THE BEATEN EGG WHITE IS TO INCORPORATE AIR INTO THE CAKE BATTER TO MAKE IT LIGHTER.
  • 15. Spray cake pan with Bakers Joy or use soften butter & dust with flour, shake out any excess flour. Make sure all the sides, bottom and the tube are coated.
  • 16. Pour Cake batter evenly into cake pan and smooth out top of cake with a spatula or back of a spoon. You should have at least 2 inches of space in pan to allow for cake to rise during baking.
  • 17. Place cake in preheated 300 degree F. oven, and bake for 2 hours and 5 minutes, or till tooth pick or dry strand of spaghetti inserted into middle of cake comes out clean. DO NOT OPEN OVEN DOOR DURING THE FIRST HOUR OR SO OF BAKING. IF USING 2 BUNDT PANS CHECK AFTER THE FIRST HOUR AND 15 MINUTES.
  • 18. When cake is done, remove from oven & allow to sit at least 15 minutes, till cake pulls away from the walls of the cake pan.Note the depth of the cake batter in Step #16, when compared to Step #18, & how much the cake rose during baking.
  • 19. Place a large platter over top of cake pan and invert onto platter.
  • 20. LET CAKE COOL COMPLETELY BEFORE FROSTING. I left mine out over night and made frosting the next morning.
  • 21. TO PREPARE FROSTING: Add butter & powdered sugar to a medium size bowl, & beat till smooth and creamy. Then add orange extract and orange marmalade and beat again till blended. Now add unsweetened coconut, & chopped nuts. If mixture is too stiff, add heavy whipping cream 1 tablespoon at a time, till desired spreading consistency is reached. Now you are ready to frost and garnish your cake if desired. This frosting is the ideal amount if frosting 2 cakes, otherwise save left overs for cupcakes or another day, or divide recipe in half refrigerate or freeze leftovers till needed.
  • 22. Slice and serve to guest. Enjoy the compliments.

TOASTED BUTTER PECAN COCONUT POUND CAKE W/FROSTING

Toasted Butter Pecan Coconut Pound Cake w/Frosting image

I created this cake for my daughter Briana. My husband Dan & I spent the July 04th holiday with her in Ohio. She loves pecan pie, & I have a recipe in my cookbook that is her absolute favorite, but I wanted the cake to be one she would remember for years to come. Toasting the pecans added the extra punch in flavor that the cake...

Time 2h30m

Number Of Ingredients 22

1 lb butter, softened to room temperature
12 large eggs, separated and room temperature
1 1/2 c white sugar
2 c brown suar, firmly packed
4 c all purpose flour, sifted
1 1/2 Tbsp baking powder
1 Tbsp vanilla bean paste ( or vanilla extract)
1 Tbsp butter pecan flavoring or butter flavoring
1 small box butterscotch pudding mix (3.5 oz) (i used cook & serve)
1 c sour cream (room temperature)
1 1/2 c unsweetened coconut ( i used organic finely grated)
3 c toasted pecan halves divided & chopped)
TOASTED BUTTER PECAN CREAM CHEESE FROSTING
1 lb box powdered sugar (confectioners sugar)
1 stick butter, softened
1 c chopped toasted pecans
2 tsp butter pecan flavoring (or butter flavoring)
1 tsp vanilla bean paste (or vanilla extract)
1/2-3/4 c toasted unsweetened coconut (use larger amount to do top & sides)
extra pecan halves for garnishing top of cake
2-3 Tbsp milk to reach desired spreading consistency
1 pkg 8 oz. cream cheese, (softened to room temperature)

Steps:

  • 1. PLEASE NOTE: These were my notes for this cake. This cake will require some time & patience to make, but your family and friends will thank you for your efforts. I baked this cake a day in advance, then took it to Ohio, and made the frosting and put it all together. If you do Not have a really large bundt pan you may need to bake it in two smaller ones. The frosting is enough for one large cake, or make one and a half times the frosting recipe for a layer cake or if you make two smaller ones. I USED A 30 CUP CAPACITY BUNDT PAN TO MAKE THIS CAKE.
  • 2. Preheat oven to 350 degrees F. Place pecans on a shallow long pan, spreading out, and toast for 10 to 15 minutes. Chop to a medium coarse size and set aside till needed.
  • 3. Measure and sift flour into a medium size bowl.
  • 4. Add the butter scotch pudding and stir to blend.
  • 5. Add salt, baking powder, & blend together. Set aside till needed.
  • 6. Separate eggs into 2 separate bowls. Beat egg whites till stiff peaks form. If it is cloudy or rainy you may not get very stiff peaks. Set aside till needed.
  • 7. In a large mixing bowl with the paddle attachment, add the softened butter, and both sugars, and beat till creamy and can no longer see the sugar granules in the mixture.
  • 8. Add the egg yolks one at a time, and the vanilla bean paste, or extract and butter pecan flavoring, beating well after each addition, for about 15 minutes till mixture is light creamy and pale yellow in color.
  • 9. In a separate small bowl add the coconut and 2 cups of the toasted chopped pecans, blend together and set aside till needed.
  • 10. Add the sour cream to the creamy mixture and beat till blended, about 5 minutes. Then gradually add the flour in 3 separate intervals, beating well till it is blended together.
  • 11. Now add the Coconut Nut mixture, & blend until it is mixed well into the cake batter.
  • 12. Now remove beaters and finish mixing by hand, using a large spatula, or spoon. May need to switch to a larger bowl.
  • 13. Fold egg whites into the cake batter with the spatula or spoon, by going from top of batter to bottom of pan all the while gradually turning to bowl as you go to get the egg white to mix with the batter. REMEMBER YOU ARE INCORPORATING AIR INTO THE CAKE BATTER TO HELP IT TO RISE AND MAKE IT LIGHTER, SO FOLDING IS VERY IMPORTANT.
  • 14. Prep Baking pan with Baker's Joy (a blend of cooking spray and flour in a can) or USE BUTTER AND FLOUR TO DUST AND COAT THE CAKE PAN.
  • 15. Add cake batter and bake in 325 degrees F. oven for 1 hour & 20 minutes or 1 hour and 30 minutes till tooth pick inserted into cake comes out clean. Add additional minutes in 5 to 10 minutes intervals till cake is done. Let cake sit in pan for 10 minutes till cake pulls away from sides of cake pan, then invert onto a baking rack to cool completely, and transfer to a serving platter.
  • 16. To make the frosting cream the butter, cream cheese and powdered sugar together till creamy then all the other ingredients EXCEPT for milk, and beat to blend. Then add the milk one tablespoon at a time, and blend together till desired spreading consistency is reached. This is enough frosting to frost 1 large pound cake, Make 1 1/2 times the recipe if you bake in two separate pans. Frost and garnish cake as desired.
  • 17. Slice serve and enjoy, you will probably be asked for the recipe, so be prepared. You can serve this cake with Pride. It is awesome. Another recipe that is great for a special occasion.
