COCONUT OATMEAL BALLS (NO BAKE)
I came up with these cookies years ago when I had to improvise to make my no bake cookies , I had no chocolate but lots of coconut and marshmallows and this is what I came up with and they turned out delicious. I hope you enjoy them as much as I have for all these years.

Steps:
- In a large sauce pan add the butter , chips , and marshmallows .
- Over med-high heat cook until all melted and mixed together.
- Remove from the heat and add the coconut extract and the peanut butter if using and mix well .
- Add the coconut , nuts and oatmeal. mix well until all the oatmeal is coated well.
- Quickly form cookies into golf ball shape and size ( carefully because they will be hot ) and place on waxed paper and let cool. Sometimes I use 2 tablespoons to help form the balls into shape or I also like to flatten them out into a shape of a cookie. Note : Another fellow cook suggested to use an ice cream scoop instead of rolling them , I have never used one but I'm sure it would work great...Thanks Henrie
- Note : you can roll them in extra coconut or powdered sugar after rolling into the ball shape and then let them cool.
NO-BAKE CHOCOLATE COCONUT COOKIES
These are super yummy and super easy! The combination of the chocolate, coconut, and oats is wonderful. No baking required! These also freeze well.

- Line a baking sheet with waxed paper.
- Mix oats and coconut in a large bowl until thoroughly combined.
- Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

CHOCOLATE DROPS (COCONUT & OATMEAL NO BAKE)
Quick & simple "cookie" recipe that requires no baking. Mom used to make these often, and I would always steal cookies before they had fully cooled and set (you know what I'm talking about!)

Steps:
- Heat sugar, milk, vanilla, cocoa and butter to boil.
- Boil for 3 minutes only (use a timer).
- Take pot off stove.
- Mix in remaining ingredients.
- Drop by spoonful onto ungreased waxed paper.
- Let cool before eating.
- Makes 4 dozen.
