SHRIMP AND RED PEPPER SAUCE image

Yield 4 servings

Number Of Ingredients 16

Pasta:
2tsp salt
1Tbsp olive oil
large pot boiling water
1lb linguini or comparable pasta (I also use rice)
Sauce:a
4 tsp olive oil
1 c. chopped onion (1 large)
2 c. chopped sweet red pepper (2 large)
14 oz chicken broth (1 can)
1 lb shrimp, peeled
1 Tbsp butter
1/4 c. chopped fresh parsley
cayenne pepper to taste (1/8 tsp to start)
salt to taste
freshly ground blck pepper to taste

Steps:

  • Make pasta: add salt and oil to boiling water. Add linguini and ccok until al dente. Drain and transfer to serving bowl. While the pasta/ rice cooks, prepare the sauce. In a large skillet, preferably one with a nonstick surace, heat the oil, add the onion and sweet pepper, and saute them, stirring them often, over medium- low heat for 5 minutes or until the vegetables have softened. Add the broth and when it is near boiling, add the shrimp. Cook the mixture for 1 minute or until the shrimp are just cooked through. Do not overcook the shrimp. Remove the pan from the heat, and stir in the butter, parsley, cayenne, salt, and pepper, tossing the ingredients until they are well combined. Pour the sauce over the pasta, and service the dish immediately.
