COCONUT JASMINE RICE
This is one of my favorite rice recipes. It goes great with just about anything! Try a ginger chicken main dish with it!

- Stir coconut milk, water, sugar, and salt together in a saucepan over medium heat until sugar dissolves. Add rice; bring to a boil, cover the saucepan, reduce heat to low, and simmer until rice is tender and liquid is absorbed, 18 to 20 minutes.

SPICY COCONUT SHRIMP WITH SPICY MANGO BASIL SALSA AND LIME JASMINE RICE
I marinate the shrimp in a sweet and spicy coconut milk marinade then I cook them in a dry pan. The salsa finishes it off with more sweetness and heat. Basil keeps the tongue awake through it all.

Steps:
- For the salsa: Combine all ingredients together in a mixing bowl. Make up to a day in advance. Keep covered in the refrigerator.
- For the shrimp: In a mixing bowl, combine jalapenos, garlic, ginger, brown sugar, soy sauce, lime zest, coconut milk, basil, vegetable oil, salt and pepper. Add the shrimp and marinate for at least 30 minutes and up to 4 hours, refridgerated.
- Heat a nonstick skillet over high heat. Use tongs or a fork to remove the shrimp from the marinade and place in an even layer in the pan, reserving the marinade.
- Cook the shrimp until well browned on each side, turning once, about 3 to 4 minutes total. Transfer cooked shrimp to a serving plate.
- Add reserved marinade to pan, bring to a boil and cook until slightly thickened, about 5 minutes.
- Pour over the cooked shrimp and serve with Lime Jasmine Rice and Mango Salsa.
- Put the rice, coconut milk, water, and salt in a saucepan and bring to a simmer. Cover and gently simmer until liquid is absorbed, about 12 to 15 minutes. Fluff with a fork and stir in the lime zest. Serve immediately.
COCONUT JASMINE RICE
Steps:
- Rinse the rice under cold water 3 times or until the liquid runs clear. Add the rice, coconut milk and water to a medium pot; stir well. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 25 to 30 minutes. Remove from the heat and let stand for 15 minutes. Remove the lid and fluff the rice with a fork. Garnish with coconut flakes.
JASMINE RICE PUDDING WITH TOASTED COCONUT
Light, fluffy and aromatic, this recipe is a great dessert. This is good warm or cold.

Steps:
- In the top of a double boiler, combine rice, sugar, milk, and cinnamon. Stirring constantly, cook over lightly simmering water for 1 1/2 hours.
- Meanwhile, preheat oven to 300 degrees F (150 degrees C). Spread coconut evenly over a cookie sheet; bake for 5 minutes, or until just beginning to turn golden brown.
- Stir vanilla into rice pudding, and remove pan from heat. Divide into bowls, and top with toasted coconut. Serve warm, or chill if desired.

EASY AND QUICK JASMINE JASMATI RICE WITH COCONUT MILK
We enjoy this very much-I like the Jasmati brand ( american Jasmine) since you don't have to rinse the rice. You can also buy fresh ginger ( inexpensive) -peel it, cut it into small chunks then freeze. You can use the frozen ginger as you need it!

- Rinse Jasmine rice, in mesh colander, until water runs clear ( skip this step for the jasmati brand).
- Combine all the ingredients in a non-stick, deep sauce pan.
- Turn heat on to medium high and let mixture come to a boil.
- Put a tight lid ( or foil ) over the mix and immediately turn heat down to lowest level.
- Let cook for 30 minutes ( do not open cover).
- Turn heat off and let mix sit for another 15-20 minutes ( do not open cover).
- Enjoy.

PINEAPPLE COCONUT JASMINE RICE
Ok....my sweet tooth hit overdrive tonight and I wanted my dinner to reflect that! I didn't want to wait for dessert for the good stuff....so here is a recipe that I found from President's Choice that definitely satisfied my need for sweet....but not overkill! This IS actually a dessert but I needed something to go with my Lemon Chicken and Fresh Snow Peas...so I decided that this would fill the empty spot on my plate. While I was waiting for my chicken to finish cooking, I was sampling this Jasmine Rice delight...and it was mighty hard to wait to put it on the plate! Hope you enjoy this as much as I did!

- Bring water to a boil in a medium sized pot.
- Stir in the rice and reduce heat to low.
- Cover and cook for approximately 10 minutes or until water is absorbed (stirring occasionally),.
- In a separate saucepan, heat the coconut milk over medium heat until hot but not boiling.
- Add the brown sugar and stir until dissolved.
- Add 1/2 of the coconut milk mixture to the cooked rice.
- Let the rice stand for about 15-20 minutes.
- Then add the diced pineapple and remainder of the coconut milk to the rice.
- Optional: added a sprinkle of cinnamon to the top of the rice when serving.

- Rub oil on bottom of pot.
- Put the rice, coconut milk, water, and salt in a saucepan on med high heat stir occasionally until it comes to a gental boil. Add brown sugar if you decide to go with that option.
- Cover 3/4 of the way with lid and put on a med low heat gently simmer until liquid is mostly absorbed, about 15 to 20 minutes.
- When liquid is absorbed let it rest off of burner with the lid completely covering for 5 to 10 minutes. Fluff with a fork and stir in the lime zest if you decide to go with that option. Serve.

- Stir shredded coconut in small nonstick skillet over medium heat until light golden, about 5 minutes.
- Transfer to bowl.
- Bring 1 3/4 cups water and salt to boil in heavy medium saucepan.

SPICY COCONUT CURRIED LOBSTER ON A BED OF JASMINE RICE
Steps:
- In a large saucepan, heat the olive oil over medium-high heat. Sweat the peppers and onion in the olive oil until they become tender, about 5 to 7 minutes. Add the curry paste, fish stock, and coconut milk to the pan, reduce the heat to a simmer, and cook for approximately 20 minutes. Add the lobster meat to the pan and simmer for another 20 minutes, letting the mixture reduce.
- Add the milk, butter, pineapple chunks, salt and sugar to the pan and stir with a wooden spoon to combine. Finally, add the scallions and cilantro to the pan and simmer for 2 more minutes. Serve on a bed of jasmine rice and garnish with chopped cilantro and toasted coconut.
- Bring just enough water to cover the rice to a boil in a medium sized pot over high heat. Add the rice to the pot, lower the heat to medium-low, and cover with a lid. Steam the rice until it is cooked through yet still firm, about 15 minutes. Drain off the excess water, and season with salt, pepper, sugar and coconut, to taste.

- Toast angel hair in toaster oven on light toast setting. Keep a close eye being careful not to burn.
- Melt butter in a saucepan over medium heat.
- Stir in the rice and toasted angelhair and salt.
- Add the coconut milk, water and lemongrass.
- Increase the heat to high and bring to a boil.

MOSTLY GREEN CURRY CHICKEN OVER COCONUT JASMINE RICE

- In a sauce pot, combine 1 cup of the chicken broth, 4 oz of the coconut milk, and the jasmine rice.
- Bring to a simmer, cover, and cook for 15 to 18 minutes.
- Turn the heat off and keep the rice covered until ready to serve.
- While the coconut jasmine rice is cooking, preheat a large non-stick skillet over high heat with about 2 tblsp. of the veg. oil. Season the chicken pieces with salt and pepper. Add chicken to skillet spreading it evenly across the pan and brown the chicken on all sides, about 3-4 minutes. Remove browned chicken and reserve.
- Add the last tblsp of veg. oil to pan. Add the green bell peppers, onions, garlic, jalapenos, ginger, and broccoli florets. Cook stirring frequently, for 3 -4 minutes, or until the veggies start to wilt.
- To the skillet add the remaining coconut milk and chicken broth. Bring the mixture to a boil, then reduce heat and simmer for 4-5 minutes. Add the chicken back to the skillet, and return it to a simmer for about 2 more minutes.
- Add the lime juice, lime zest, cilantro, scallions, parsley, and frozen peas. Stir to thoroughly combine. Simmer a minute more to heat the peas, taste and adjust seasoning if necessary. Add hot sauce if you like a bit of heat.
- Serve over jasmine rice.

COCONUT JASMINE RICE PUDDING T-R-L
Another great use for leftover rice. This time, Jasmine rice. I love Jasmine rice even without it being a dessert.

- Preheat oven to 300ºF (150ºC).
- Lightly butter a 9x13-inch pan.
- In a mixing bowl, beat eggs and sugar well.
- Add Coconut Milk, Jasmine Rice, milk, vanilla extract, coconut extract, salt and nutmeg.
- Mix thoroughly.
- Make a "water bath" by placing the baking dish into a large pan that has an inch of hot water in it.
- Pour the pudding mixture into the baking dish. Stir so all the rice is evenly distributed in the pan.
- Bake for 20 minutes.
- Stir pudding to mix the rice again. Continue to bake for 40 more minutes or until the pudding is set or firm to the touch.
- NOTE:.
- I find that when pouring "soupy stuff" like for a pudding, it is best to put the pan on the oven shelf and pour the pudding into it rather than try to trek over to the oven.

COCONUT CHICKEN WITH JASMINE RICE
Steps:
- Preparation: Heat oil in a large pot over medium heat. Add next 8 ingredients and saute until onions are soft. Add tomatoes and lemon zest and saute for 2 minutes more. Add chicken and cook for about 5 minutes. Then, add milk and potatoes. Cover pot and simmer over low heat until chicken and potatoes are cooked throughout, about 25 to 30 minutes. Season with salt and pepper. Spoon rice onto plate, then spoon chicken and sauce over the rice.

- 1. Start by rinsing the rice. You can do this by putting the rice in the thick-bottomed pan it is going to cook in. Fill the pot halfway with water, swish the rice around (the water will get cloudy), and pour out the cloudy water. Repeat 3 times. The water might still be a bit cloudy, and that is o.k. To the rinsed (and drained) rice add the coconut milk, water, and salt. Stir to combine. Place the pot over medium high heat and bring the liquid to a boil (uncovered). Stir often to prevent the rice from scorching down at the bottom of the pot. Once the liquid comes to a boil reduce the heat to a low, low simmer, cover the pot tightly with a lid. Cook for about 15- 20 more minutes (resisting the urge to peek). Remove from heat (still covered!), and let the rice steam for another 10-15. While the rice is cooking cook up the shallots in a small frying pan over medium to medium-high heat. Too hot and you'll burn the butter instead of browning it. Add the butter to the pan, then stir in the shallots and a couple pinches of salt. Stir every few minutes letting the shallots brown increasingly until they are dark in color. Transfer to a paper towel until ready to use. I fluff the rice in the pot so I don't completely dirty up the edges of my serving bowl or platter. Transfer the rice to desired serving vessel and sprinkle with cashews and the crispy shallots. Serves 4 to 6.
