Yield Makes 20 bars

Number Of Ingredients 6

1 cup semisweet chocolate chips
2 cups sweetened flaked coconut
1 3/4 cups plus 2 tablespoons sweetened condensed milk
3 cups graham cracker crumbs (from about 20 crackers)
3/4 cup unsalted butter, melted
1/4 teaspoon coarse salt

Steps:

  • Preheat oven to 350 degrees with a rack in the center of oven. Butter a 9-by-13-inch baking pan and line with parchment paper; set aside.
  • To make the crust: In a medium bowl, mix together graham cracker crumbs, melted butter, and salt. Pour mixture into prepared pan and press into bottom of pan using your fingertips.
  • To make the topping: In another medium bowl, mix together chocolate chips and coconut; sprinkle evenly over crust.
  • Pour condensed milk evenly over coconut and chips, covering the entire surface. Transfer to oven and bake, rotating pan halfway through baking, making sure the milk does not get too brown or bubble over in the pan, 26 to 32 minutes.
  • Transfer baking pan to a wire rack to cool completely. Cut into 20 squares. Serve immediately, or wrap each bar tightly with plastic wrap and keep refrigerated until ready to serve.

These bars are a delicious treat. When I got this recipe it did not contain chocolate, but I couldn't imagine coconut without chocolate, so I added it! I am listing the chocolate chips as optional, but I highly recommend them :)

Number Of Ingredients 9

1 1/2 cups flour
2 cups brown sugar, firmly packed
1/2 cup butter, softened slightly
3 large eggs
1 teaspoon baking powder
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cups sweetened flaked coconut
1 1/2 cups semi-sweet chocolate chips (optional) or 1 1/2 cups milk chocolate chips (optional)

Steps:

  • Preheat oven to 350°F.
  • Using low speed on mixer, combine flour, 1/2 cup of the brown sugar and butter until particles are fine.
  • Press into bottom of 9 x 13-inch pan or baking dish.
  • Bake for 15 minutes.
  • Beat the remaining brown sugar with eggs until just blended.
  • Stir in remaining ingredients.
  • Spread over partially baked crust.
  • Bake for 20 to 25 minutes or until golden brown.
  • Cool completely and cut into squares.

BOTTOM LAYER:
1 whole egg beaten
3 Tbsp milk
1/2 tsp vanilla
1/3 c butter
1/3 c powdered sugar
1 c sifted flour
TOPPING:
1/2 c brown sugar, lightly packed
1/4 tsp salt
1 Tbsp flour
1/2 tsp double acting baking powder
1/2 c flake coconut
1 c chopped walnuts
2 whole eggs beaten
1/2 c molasses
1/2 tsp vanilla

Steps:

  • 1. BOTTOM LAYER: Beat the egg, then add milk and vanilla
  • 2. Cream the butter and sugar and combine with the egg mixture
  • 3. Add the flour, mix well, and spread in a 9x9x2 pan
  • 4. Bake bottom layer 425 F for 5 minutes, then remove from oven and set aside to make top layer
  • 5. TOPPING: Mix dry ingredients, add the wet, combine and pour over the top of the baked crust.
  • 6. Bake 350 F, 20-25 minutes Cool in pan, and cut in squares (do not cut until cool to the touch, or it will be messy)

1/2 cup melted butter
28 ounces crushed pineapple, well drained
2 large eggs
1 1/2 cups granulated sugar
1 1/3 cups butter, melted
1 teaspoon vanilla extract
2 cups sweetened flaked coconut

Steps:

  • CRUST:.
  • In a large bowl, combine cake mix and melted butter.
  • Using a wooden spoon, mix until well blended.
  • Press firmly into greased 13x9 pan.
  • Bake for 12-15 minutes or until light golden.
  • Cool 10 minutes.
  • TOPPING:.
  • Spread well drained pineapple, I usually dump cans onto paper towel on top of newspaers.to be sure I get them as dry as possible.I reserve the fruit juice in ice cube trays.makes a lovely ice cube for iced tea.
  • In a large mixer bowl, beat eggs and sugar till blended.
  • Add melted butter and vanilla.Mix well.
  • Stir in coconut and spread over pineapple.
  • Bake for 30-40 minutes or until set and golden.
  • Cool completely in pan on a wire rack.
  • Cut into bars.

1/2 c flour
1 c brown sugar

1 tsp baking powder
1 pinch salt
7-8 oz sweetened coconut flakes

Steps:

  • 1. mix together stick of butter ( room temperature)1/2 cup flour, 1/2 cup brown sugar
  • 2. press this mixture in a 9x9 baking dish..bake 15 mins.
  • 3. mix 3 eggs, vanilla, baking powder, 1/2 cup brown sugar, salt, coconut
  • 4. pour mixture into the crust and baked another 20 mins at 350 degrees
  • 5. let cool, cut into squares...and enjoy... soooo gooey and delicious

20 Medjool dates*
2 heaping tablespoons organic peanut butter
1 cup unsweetened coconut flakes or shredded
1/4 cup raw honey
1/2 cup coconut oil
2 heaping tablespoons coconut cream concentrate
1 cup sliced, toasted almonds
1/4 cup chia seeds soaked in 1/2 cup warm almond milk (or warm water)
5 tablespoons organic cocoa powder

Steps:

  • Start at the top of the ingredients list and add all to a food processor. Process for about 1 minute. It will form a soft ball. Press into and 8x8 pan that has been lightly coated with coconut oil. Sprinkle top with some coconut, or leave plain. Refrigerate until firm. You may need to turn the pan upside down and run warm water over it briefly to loosen. Turn out on waxed paper, cut into small squares. Mom knew I loved coconut, and here is another of her recipes with coconut! She passed away when I was 7, so Aunt Margie also made them for me with Mom's recipe.

1 c brown sugar
1 tsp vanilla
2 Tbsp flour
1/4 tsp baking soda
1/4 tsp salt
1 1/2 c coconut

Steps:

  • 1. Combine 1 c flour, 1/2 c butter, and 1/2 c brown sugar to form crumbs and pat into buttered 9x13. Bake at 350 degrees until brown. Mix together remaining ingredients and pour over crust. Bake 20-25 minutes. When cool, cut into bars.
