Thai Pineapple Fried Rice image

Thai-style sweet and spicy pineapple fried rice with red bell pepper, cashews and cilantro. This is a healthy and quick, vegetarian weeknight dinner! This dish comes together very quickly, so be sure to have your ingredients (including chilled leftover rice) prepped in advance. Recipe yields 2 large, restaurant-sized portions or 4 more modest portions.

2 tablespoons coconut oil or quality vegetable oil, divided
2 eggs, beaten with a dash of salt
1 1/2 cups chopped fresh pineapple
1 large red bell pepper, diced
3/4 cup chopped green onions (about 1/2 bunch)
2 cloves garlic, pressed or minced
1/2 cup chopped raw, unsalted cashews
2 cups cooked and chilled brown rice*, preferably long-grain brown jasmine rice
1 tablespoon reduced-sodium tamari or soy sauce
1 to 2 teaspoons chili garlic sauce or sriracha
1 small lime, halved
Salt, to taste
Handful of fresh cilantro leaves, torn into little pieces, for garnishing

Steps:

  • Heat a large wok, cast iron skillet or non-stick frying pan over medium-high heat and place an empty serving bowl nearby. Once the pan is hot enough that a drop of water sizzles on contact, add 1 teaspoon oil. Pour in the eggs and cook, stirring frequently, until the eggs are scrambled and lightly set, about 30 seconds to 1 minute. Transfer the eggs to the empty bowl. Wipe out the pan if necessary with a paper towel (be careful, it's hot!).
  • Add 1 tablespoon oil to the pan and add the pineapple and red pepper. Cook, stirring constantly, until the liquid has evaporated and the pineapple is caramelized on the edges, about 3 to 5 minutes. Then add the green onion and garlic. Cook until fragrant while stirring constantly, about 30 seconds. Transfer the contents of the pan to your bowl of eggs.
  • Reduce the heat to medium and add the remaining 2 teaspoons oil to the pan. Pour in the cashews and cook until fragrant, stirring constantly, about 30 seconds. Add the rice to the pan and stir to combine. Cook until the rice is hot, stirring occasionally, about 3 minutes.
  • Pour the contents of the bowl back into the pan and stir to combine, breaking up the scrambled eggs with your spoon. Cook until the contents are warmed through, then remove the pan from heat. Add the tamari and chili garlic sauce, to taste. Squeeze the juice of 1/2 lime over the dish and stir to combine. Season to taste with salt and set aside.
  • Slice the remaining 1/2 lime into 4 wedges. Transfer the stir-fry to individual serving bowls and garnish each bowl with a lime wedge and a light sprinkle of cilantro. Serve with bottles of tamari and chili garlic sauce or sriracha on the side, for those who might want to add more to their bowls.

This Coconut Rice with pineapple is a mild and light tropical side dish that pairs perfectly with steak, chicken, pork, and seafood. Great for summer or anytime of year using canned or fresh fruit.

2 cups jasmine rice
1 1/4 cups low-sodium chicken broth
1 cup coconut milk ((from a can of coconut milk))
1 cup crushed or tiny diced pineapple (, drained)
2 tablespoons low sodium soy sauce
1 tablespoon sesame oil
1 teaspoon brown sugar
1/4 cup diced scallions
Toasted coconut flakes, sliced almonds, chopped macadamia nuts, or fresh chopped cilantro.

Steps:

  • Rinse the rice several times until the water runs clear. Drain the rice.
  • In a medium pot, over high heat, add the rice, broth, and coconut milk and bring to a boil. Once boiling, turn the heat to low and cover with tight fitting lid; let cook for 20 minutes.
  • Turn off heat, and without opening the lid, let it sit for another 10 minutes to finish steaming.
  • Fluff the rice with a fork and mix in the pineapple, soy sauce, sesame oil, brown sugar, and scallions.
  • Top with any of the other recommended mix-ins and drizzle a touch more soy sauce, if desired.

1 large egg, beaten
6 scallions, roughly chopped
2 teaspoons curry powder
Kosher salt and freshly ground black pepper
4 cups cooked rice
Sesame oil, for drizzling

Steps:

  • Heat the oil in a large nonstick skillet over high heat. Add the beaten egg and swirl the pan; let set, then transfer to a plate. Add the scallions to the pan along with the curry powder and pepper to taste; stir-fry 2 minutes. Stir in the cooked rice; spread in an even layer and cook 3 minutes. Add the egg, and salt to taste; stir to break up the egg. Drizzle with the sesame oil.

THAI COCONUT CURRY FRIED RICE WITH CARAMELIZED PINEAPPLE

Fried rice bursting with thai coconut curry flavor, stir-fried with tons of veggies and topped with juicy, sweet caramelized fresh pineapple! Top with fried tofu or your protein of choice for a delicious, healthy dinner!

1 1/2 cups brown rice
1 can full fat coconut milk
1 1/4 cups water
1/4 cup Thai red curry paste
1 fresh pineapple, trimmed and sliced into 1/2" rounds, core removed
1 onion, sliced thinly
5 cloves garlic, minced
1 in ginger, grated
1 red bell pepper, cut into 1" pieces
3 carrots, peeled and grated
1 small zucchini, cut into 1" rounds and sliced thinly
1/4 small red cabbage, sliced thinly
3 T soy sauce (or tamari for GF)
1 lime
1 tsp salt
green onions, sliced thinly (optional)

Steps:

  • 1. Add brown rice, coconut milk, water and red curry paste into a pot, cover and put on high heat. Once boiling, keep covered and reduce heat to low and cook until liquid is all absorbed, about 40 minutes.
  • 2. Put a large, deep skillet on medium high heat, and add a tablespoon of oil. When hot, add pineapple slices in a single layer. When one side is golden brown, flip and brown other side. Then remove from pan and fry rest of slices.
  • 3. Cut caramelized pineapple into bite-size pieces.
  • 4. Heat the same pan you used to fry the pineapple on medium high heat and add another couple tablespoons of oil. When hot, add the onions, and cook for 5-8 minutes stirring frequently. When onions are slightly browned, add garlic and ginger and cook, stirring constantly for another minute or two.
  • 5. Add the bell pepper and carrots to the pan next and stir-fry for 5 more minutes. Next add the zucchini and cabbage and cook for 3-4 more minutes. When all the veggies are cooked, add the cooked rice, soy sauce, juice of 1 lime, and salt. Mix rice and veggies together well and remove from heat.
  • 6. Serve fried rice topped with caramelized pineapple chunks and sliced green onions! YUM ????

4 tablespoons canola oil, divided
2 large eggs, beaten
1 small onion, finely chopped
2 shallots, finely chopped
3 garlic cloves, minced
4 cups cold cooked rice
1 can (8 ounces) unsweetened pineapple chunks, drained
1/2 cup lightly salted cashews
1/2 cup frozen peas
1/3 cup minced fresh cilantro
1/4 cup raisins
3 tablespoons chicken broth
2 tablespoons fish sauce
1-1/2 teaspoons curry powder
1 teaspoon sugar
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large skillet or wok, heat 1 tablespoon oil over medium-high heat; add eggs. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to a plate and keep warm., In the same pan, stir-fry onion and shallots in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the rice, pineapple, cashews, peas, cilantro, raisins, broth, fish sauce, curry, sugar and pepper flakes; heat through. Chop egg into small pieces; add to rice mixture.

3 cups water
1 tablespoon curry powder
2 tablespoons Asian fish sauce
2 tablespoons pineapple juice
1 tablespoon vegetable oil
1 pound boneless chicken meat, cubed
1 onion, sliced
1 (20 ounce) can pineapple chunks, drained

Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Set the cooked rice aside. Mix together curry powder, fish sauce, and pineapple juice in a small bowl.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat until the oil shimmers, and cook and stir the chicken and onion until the chicken is no longer pink and the onions are translucent, about 5 minutes. Stir in the cooked rice, pineapple chunks, and curry mixture, and cook and stir until the fried rice is hot, 5 to 10 minutes.

1 fresh pineapple or 1 can (20 ounces) pineapple chunks, drained
1/2 cup finely chopped onion
2 tablespoons butter
2-1/2 cups uncooked long grain rice
2 garlic cloves, minced
1 tablespoon curry powder
5 cups chicken or vegetable broth
1 tablespoon soy sauce
1 jalapeno pepper, seeded and chopped, optional
4 green onions, chopped

Steps:

  • Cut fresh pineapple to form a serving bowl if desired (see p. 58). Cut removed fruit into bite-size chunks; set aside. If using canned pineapple, drain and set aside (discard juice or save for another use). , In a large saucepan, saute onion in butter until tender. Stir in rice, garlic and curry powder. Add broth, soy sauce and jalapeno if desired. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Remove from the heat and let stand for 5 minutes or until liquid is absorbed. , Stir in green onions and pineapple chunks. Spoon into pineapple shell. Replenish as needed or place remaining rice in another serving bowl.
