1-1/4 cups sugar, divided
1/4 cup cornstarch
3 cups milk
4 eggs, separated
1 cup sweetened shredded coconut
1 teaspoon vanilla extract

Steps:

  • In a large heavy saucepan, combine 3/4 cup sugar and cornstarch; stir in milk until smooth. Cook and stir over medium heat until thick and bubbly; cook and stir 2 minutes more. Remove from heat. , In a bowl, beat egg yolks. Stir 1 cup hot milk mixture into yolks; return all to pan, stirring constantly. Bring to a gentle boil over medium heat; cook and stir 2 minutes longer. Remove from the heat. Stir in coconut and vanilla. Cool to lukewarm without stirring., Pour into an ungreased 8-in. square baking dish. In a large bowl and with clean beaters, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over pudding, sealing to edges. Bake, uncovered, at 350° for 10-15 minutes. Serve warm.

This recipe came from a Betty Crocker Cookbook, 1972. I have since lost that book, however, I have always made my pudding, pies including the best banana pudding you will ever taste! I have altered the recipe to cook in the microwave, and have included stove top directions also. Every time I take this to a potluck, I have to give out recipes--so I thought I would just refer them here! I use this crust Recipe #174625 Enjoy!

3/4 cup sugar
1/4 cup cornstarch
2 tablespoons cornstarch
1 teaspoon salt
4 cups milk
5 egg yolks, slightly beaten
3 tablespoons butter, softened
1 tablespoon vanilla
2 teaspoons vanilla

Steps:

  • Cooking on stovetop.
  • Bake pie shell. Stir together sugar, cornstarch (Cornstarch is 1/4 C PLUS 2 T - I was unable to enter that amount as one ingredient)and salt in saucepan. Blend milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; blend in butter and vanilla. Immediately pour into baked pie shell; press plastic wrap onto filling. Chill pie thoroughly, at least 2 hours. If desired, serve pie with sweetened whipped cream.
  • Microwave.
  • Bake pie shell. Stir together sugar, cornstarch and salt in microwave glass mixing bowl. Blend milk and egg yolks; Whip with whisk well. Cook on high for 2 minutes at a time, take out and use wire whip to blend well and return to microwave for 2 more minutes. Continue this until mixture is of pudding consistency. Blend in butter and vanilla. Immediately pour into baked pie shell; press plastic wrap onto filling. Chill pie thoroughly, at least 2 hours. If desired, serve pie with sweetened whipped cream.
  • Variations:.
  • Chocolate Cream Pie:.
  • Follow recipe for 9-inch pie except-increase sugar to 1 1/2 cups and cornstarch to 1/3 cup. Omit butter and stir in 2 ounces melted unsweetened chocolate with the vanilla.
  • Coconut Cream Pie:.
  • Decrease Vanilla to 2 teaspoons and stir in 1°C flaked coconut. Sprinkle flaked coconut over whipped cream on pie.
  • Banana Pudding:.
  • Make Vanilla Cream. Cool for 15-20 minutes. While cooling, line bottom of pan with vanilla wafers and top with sliced bananas.
  • Cover with cooled pudding. Top with heavy cream (for every 8 oz of heavy cream add 4 t of sugar -- whip cream until stiff. Crush a few wafers and sprinkle on top.

2 small boxes sugar-free instant vanilla pudding
2 3/4 c cold low fat milk
1 Tbsp pure vanilla extract
1 8oz. carton frozen whipped topping, thawed
1 1/2 c flaked, sweetened coconut
1 graham cracker or cookie crust, prepared or store bought
extra whipped topping for garnish
3/4 c toasted coconut, cooled

Steps:

  • 1. In a large mixing bowl,whisk dry pudding mixes, milk & vanilla extract until pudding becomes slightly thickened. Allow to rest a few minutes & fold in 8 oz. whipped topping. Add the 1 1/2 c. coconut.
  • 2. Pour into crust. Garnish with extra whipped topping & the toasted coconut.
  • 3. Chill pie, covered, at least 2 - 4 hrs. before serving. Refrigerate leftover pie.

8 bananas
4 cups water
1/2 cup tapioca
1 cup coconut milk
1/4 cup sugar
The sugar is optional but I do recommend it. Make sure you pull the inner strings off the bananas before boiling! The riper the banana the stronger the banana flavor.
Our family's personal taste is to use an entire can of purchased coconut milk and reduce the water accordingly. Or if using homemade coconut milk to reduce the water by a half a cup and increase the coconut milk a half a cup.

Steps:

  • Peel the bananas and place in a medium saucepan. Add the water and then bring to the boil. Turn the heat down and simmer for about 20 minutes. Break the bananas up with a wooden spoon, fork or masher. Sprinkle the tapioca into the saucepan while stirring. Add the coconut milk and then simmer over low/medium heat until the tapioca is cooked, about 15 minutes. Stir frequently. Finally, taste the suafa'i. If you like a little more sweetness, then add sugar to taste. Remove from the heat, leave for about 30 minutes to cool and then serve in a bowl or cup. You can also cool suafa'i completely, and refrigerate it. Once cooled, serve it as a snack or dessert.

1 cup (1/8-inch) pearl tapioca (not quick-cooking)
1 pandan leaf, thawed if frozen (optional)
1/2 cup grated or crumbled dark palm sugar (4 oz) or packed dark brown sugar
1 (14-oz) can unsweetened coconut milk (do not shake)

Steps:

  • Make pudding:
  • Bring 6 cups water to a boil in a large saucepan and add tapioca in a slow stream, stirring constantly. Gently boil, stirring frequently, 5 minutes.
  • Remove from heat and let stand, covered, until tapioca is translucent, about 15 minutes.
  • Add 3 cups cold water to tapioca, then drain in a large sieve. Transfer tapioca to a large bowl. Add cold water to cover by 2 inches and swirl tapioca to remove excess starch. Drain tapioca in sieve and repeat rinsing. Drain tapioca again and divide among 6 serving dishes. Chill, loosely covered, 10 minutes, or until set.
  • Make syrup:
  • Tear pandan leaf into strips and tie strips together in a knot. Simmer pandan with sugar and remaining 1/4 cup water in a small saucepan, stirring until sugar is dissolved, until slightly thickened, about 5 minutes. Discard pandan and pour syrup through a fine sieve into a small bowl. Cool to room temperature.
  • Make coconut cream:
  • Scoop out thick layer of coconut cream from top of can, reserving thin liquid in bottom. Whisk ‚ cup coconut cream until smooth, whisking in 1 to 1‚ tablespoons thin coconut liquid if necessary to get a pourable consistency. Drizzle some of syrup over tapioca and top with some coconut cream. Serve remaining syrup and cream on the side.

1 pound day-old Italian- or French-style bread
4 cups (1 quart) whole milk
2 teaspoons vanilla
2 cups sugar
1/2 teaspoon ground cinnamon

1 cup flaked coconut
1/4 cup butter, softened

The Sauce
1 cup heavy cream
1 cup confectioners' sugar

2 tablespoons rum

Steps:

  • Set the dial to 325° and get the oven heating. Cut the crusts off the bread (save them for bread crumbs), and then cut the rest into 1-inch cubes, collecting about 8 cups. If the bread isn't day old, pop it into the heating oven for 5 to 10 minutes to dry it out a bit.
  • Whisk together the milk, vanilla, sugar, cinnamon, nutmeg, eggs, and yolks in a large bowl. Stir in the raisins, coconut, and bread cubes. Soak for 30 minutes.
  • Mix 2 tablespoons of the softened butter with the confectioners' sugar and smear it over the bottom and sides of a 9 by 13-inch pan. Pour in the bread-and-egg mixture. Melt the remaining 2 tablespoons of softened butter and drizzle it over the top. Pop the pan into the oven and bake for 50 to 60 minutes, or til set in the middle and puffed and brown around the edges.
  • Make the sauce while the pudding is baking. Combine the cream, confectioners' sugar, and butter in a saucepan. Set it over medium-high heat and bring to a boil. Keep your eye on it so it doesn't boil over. Whisk constantly. Turn the heat to low and simmer for 3 minutes; then stir in the rum. Keep warm. (Makes 1 3/4 cups of sauce.)
  • Pull the pan out of the oven when the bread pudding is done, and let it set for 10 minutes. Cut into squares and serve warm or at room temperature. Douse each serving with some warm sauce.

1 2/3 cups organic coconut milk {full fat}
1 2/3 cups organic pumpkin {not pie filling}
1/4 cup organic pure maple syrup or raw honey {depending on which you prefer}

Separated thick cream from a chilled can of organic coconut milk
1 TB organic pure maple syrup or raw honey
A healthy pinch or two of ground organic cinnamon

Steps:

  • Place the gelatin in the bottom of a small bowl. Cover the gelatin with water and let it bloom. Alternatively, you can mix it using a fork. In a saucepan, gradually warm the coconut milk over medium-low heat. Add the bloomed gelatin. Using a flat whisk, whisk until you can no longer see the gelatin. Remove from the heat. Place the pumpkin, raw honey or maple syrup, cinnamon, and cloves in a food processor fitted with a steel blade. Pulse until fully incorporated, scraping down the sides as needed. Add the coconut milk mixture to the food processor and pulse until everything is combined. Divide the pudding mixture among your dessert dishes, with room to spare with the topping. I used small ramekins for the kids and larger {relatively speaking} for adults. Chill in the fridge until set (20 minutes to an hour). Meanwhile you can prep the coconut whipped topping. Remove a chilled can of organic coconut milk from the fridge, open it with the can facing upside down, pour off the milk - there should be a good amount of solid "cream" at the top of the can. Scoop the thick cream out and place into a mixer bowl. Add raw honey or maple syrup and cinnamon. Whip for a few seconds. Resist any temptation to dive right into the bowl... When the pudding is set, add a nice dollop to the center of each ramekin and spread it evenly outward with the back of a teaspoon. Serve immediately or chill to let the topping set slightly.

1 1/2 hawaiian bread (cut in to squares)
6 egg yolks
3 whole eggs
3 13 1/2 oz cans unsweetened coconut milk
2 can cream of coconut
1/2 tsp freshly grated nutmeg
pinch (and just a touch more) mace

Steps:

  • 1. Lightly butter the bottom of a 12-inch flameproof baking dish. Arrange the bread cubes evenly in the dish. In a large bowl, whisk together the yolks, whole eggs, coconut milk, cream of coconut, salt, nutmeg, and mace. Stir in 1 1/2 cup of the coconut flakes. Pour the custard over the bread cubes, pressing the bread cubes gently to soak up the custard.
  • 2. Preheat the oven to 350 degrees F.
  • 3. Sprinkle the top of the pudding with the remaining 1/2 cup coconut flakes. Cover the baking dish with foil, poking a few holes in the top to release the steam. Put the baking dish into a roasting pan on the oven rack. Pour hot water into the roasting pan to come halfway up the sides of the baking dish. Bake until the pudding is firm to the touch, about 1 hour and 15 minutes. Remove the foil and bake for 15 minutes more. Remove the baking dish from the water bath and run it under the broiler, at least 4 inches from the heat, until golden, 1 to 2 minutes. Let the pudding cool completely

3 ½ cups water
¾ cup white sugar
¾ cup water
⅓ cup tapioca flour
1 cup unsweetened coconut cream
½ teaspoon salt

Steps:

  • Place the mung beans in a large container and cover with several inches of warm water; let soak for 2 hours; drain.
  • Place a steamer insert into a saucepan and pour enough water to reach just below the bottom of the steamer. Cover and bring the water to a boil. Wrap the mung beans in cheesecloth and place in the steamer insert; cover the saucepan and steam the beans until tender, 25 to 30 minutes.
  • Stir 3 1/2 cups water and the sugar together in a saucepan; bring to a boil. Stir 3/4 cup water and the tapioca flour together in a bowl until the flour is dissolved; pour the mixture into the boiling water and stir until the syrup becomes clear and thickened. Gently stir the mung beans into the syrup; remove from heat and divide into 4 serving bowls.

1 (3 1/2 ounce) package coconut cream pudding mix or 1 (3 1/2 ounce) package vegetarian coconut cream pudding mix
1 1/2 cups milk
1/2 cup orange juice
1/2 teaspoon orange rind, grated

Steps:

  • Combine mix and milk in a 11/2-qt. microwave-safe bowl, blend well.
  • Cook at HIGH 3 minutes. Stir well and cook 2 minutes longer; then stir again and cook 1 minute more or until mixture comes to a boil.
  • Stir in orange juice and rind.
  • Spoon into individual dessert dishes.
  • Chill.

It's hard to beat the combination of chocolate and coconut, as this irresistible dessert definitively proves. The intensely flavored pudding cake virtually disappears in your mouth, while the coconut ice cream provides a creamy and cool counterpoint. For good measure, an ethereal coconut emulsion is spooned about the plate. Finally, strips of crystallized ginger and slices of crispy toasted coquito nuts dropped on and around the cake offer whimsical textural notes. Decadent? Perhaps. Heavenly? By all means.

1 cup heavy whipping cream
1 cup unsweetened coconut milk
4 large egg yolks
1/4 cup sugar
1/2 cup shredded coconut, toasted
1 cup all-purpose flour
1 1/2 cups golden brown sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1 cup heavy whipping cream
1 1/4 cups coconut water (not coconut milk)
1 cup coconut milk
1 tablespoon sugar
2 tablespoons shredded coconut
1/4 cup thinly sliced coquito nuts, toasted
2 tablespoons julienned crystallized ginger

Steps:

  • For the ice cream: Prepare an ice water bath. Bring the cream and coconut milk to a boil in a medium saucepan. Whisk together the egg yolks and sugar in a bowl; slowly pour in some of the hot cream to temper the yolks. Pour the eggs into the cream mixture and cook over medium-low heat, stirring constantly, for 2 to 3 minutes, or until the custard coats the back of a spoon and steam rises from the top. Strain the custard through a fine-mesh sieve into a clean bowl and cool over the ice water bath, stirring occasionally, until the custard is chilled. Process the custard in an ice cream machine. Fold in the toasted coconut and keep the ice cream frozen until ready to use.
  • For the pudding cake: Preheat the oven to 350 degrees F. Line an 8-inch square pan with plastic wrap. Whisk together the flour, 3/4 cup of the brown sugar, 1/4 cup of the cocoa powder, and the baking powder. Fold in the cream and pour the batter into the plastic-lined pan. Mix the remaining 3/4 cup brown sugar and 1/4 cup cocoa powder together and sprinkle over the top of the batter. Bring the coconut water to a boil and pour over the cake batter. Place the cake pan in a large roasting pan; pour enough water into the roasting pan to come 1-inch up the side of the cake pan. Bake the cake in the water bath for 50 minutes. Cool the cake to room temperature and invert it onto a sheet pan. Carefully pull away the plastic wrap. There should be a gooey pudding-like substance on the bottom of the cake. Using a 4-inch diameter ring cutter, cut 4 portions from the cake. Clean the ring cutter before each cut.
  • For the emulsion: Warm the coconut milk and sugar in a small saucepan. Just prior to use, froth with a handheld blender.
  • Assembly: Place a piece of the pudding cake in the center of each plate. Spoon the frothy portion of the emulsion around the pudding cakes. Place a quenelle-shaped scoop of the ice cream next to the cake and sprinkle the toasted coconut, coquito nuts, and crystallized ginger over the ice cream and around the cake.

I can't remember where this recipe came from, but, it gets rave reviews every time I make it. The BEST Bread pudding I have ever tasted, and it's so easy to make.

1 cup(s) sugar
4 large eggs
2 cup(s) milk
1 cup(s) cream of coconut
3 tablespoon(s) butter, melted
1/2 cup(s) coconut, flaked
1/2 cup(s) chopped pecans
1 large french bread loaf

Steps:

  • Cut bread into 1 inch cubes, and preheat oven to 350.
  • Beat cream cheese at low speed until creamy and smooth.
  • Add sugar and eggs, beat at medium speed approx. 2 mins or until sugar is dissolved
  • Stir in milk, cream of coconut, melted butter, coconut and pecans.
  • Stir in bread cubes and let stand 5 mins. to soak up liquid.
  • Pour mixture into 13X9 pan, sprayed with cooking spray, and bake 35 mins or until set.

2 tablespoons butter
3/4 cup sugar
3 tablespoons sifted flour
1/4 teaspoon ground cinnamon
6 egg yolks
1 1/2 cups coconut cream
6 egg whites, stiffly beaten

Steps:

  • Preheat oven to 350 degrees F.
  • Cream the butter and gradually beat in the sugar.
  • Mix in the flour and cinnamon.
  • Add 1 egg yolk at a time, beating each addition and until light and fluffy.
  • Gradually Add the coconut cream.
  • Fold in egg whites.
  • Divide among 8 buttered custard cups.
  • Set in a shallow pan of hot water.
  • Bake 45 minutes or until set.
  • Chill and turn out.

"Modified" from the Taste of Home website. Just like coconut custard pie, topped with meringue without the crust. I reduced the sugar just a bit and adjusted the extracts. Really creamy and wonderful!

1 cup sugar
1 pinch salt
1/4 cup cornstarch
3 cups milk
4 eggs, separated
1 cup flaked coconut
1/2 teaspoon pure vanilla extract
1/2 teaspoon coconut extract

Steps:

  • •In a large heavy saucepan, combine 3/4 cup sugar, pinch of salt and cornstarch; stir in milk until smooth. Cook and stir over medium heat until thick and bubbly; cook and stir 2 minutes more. Remove from heat.
  • • In a bowl, beat egg yolks. Stir 1 cup hot milk mixture into yolks; return all to pan, stirring constantly. Bring to a gentle boil over medium heat; cook and stir 2 minutes longer. Remove from the heat. Stir in coconut and extracts. Cool to lukewarm without stirring.
  • • Pour into an ungreased 8-in. square baking dish. In a large bowl and with clean beaters, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over pudding, sealing to edges. Bake, uncovered, at 350° for 10-15 minutes. Serve warm or cold. Yield: 9 servings.
