Sweet apples, tart cranberries, a kiss of vanilla and cinnamon ... perfection. This festive yet simple dessert is a total crowd-pleaser, vegan or otherwise.

5 medium Granny Smith apples
2 cups fresh cranberries (rinsed and picked over)
2/3 cup granulated sugar*
2 teaspoons ground cinnamon
1 teaspoon cornstarch
1 teaspoon pure vanilla extract
1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon fine-grain sea salt
1/2 cup solid coconut oil
Vanilla ice cream (optional but highly recommended. My favorite non-dairy/vegan vanilla ice cream is Coconut Bliss Vanilla Island.)

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • To a large bowl, add the filling ingredients. Toss well to combine. Pour into a 9-inch by 13-inch baking dish and spread into a relatively even layer.
  • To a medium bowl (or rinse and wipe out the large bowl to reuse), add the oats, flour, brown sugar, cinnamon, and salt. Stir until well-combined. Add the coconut oil and cut in with a pastry blender or butter knives. Mix well, until topping resembles coarse crumbs. Pour evenly over apple cranberry filling.
  • Bake until bubbly, apples are fork-tender, and the top is golden-brown, 35-40 minutes.
  • Allow to cool for about 10 minutes, then serve - preferably alongside a generous scoop of vanilla ice cream. Yum!

5 medium apples, peeled and sliced
1/2 cup fresh or frozen cranberries, halved
1/4 cup sugar
3/4 cup old-fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/4 teaspoon each ground cinnamon, nutmeg and ginger
1/2 cup cold butter
1/2 cup chopped nuts
1/4 cup sweetened shredded coconut
Vanilla ice cream

Steps:

  • In a large bowl, combine apples and cranberries. Add sugar; toss to coat. Transfer to a greased 11x7-in. baking dish., In a small bowl, combine the oats, brown sugar, flour and spices; cut in butter until crumbly. Stir in nuts and coconut; sprinkle over fruit., Bake at 375° for 30-35 minutes or until topping is golden brown and filling is bubbly. Serve warm with ice cream.

1 can (14 ounces) sweetened condensed milk
1 package (14 ounces) sweetened shredded coconut
1 cup white baking chips
1/4 cup ground almonds
1 teaspoon almond extract
1 cup chopped fresh or frozen cranberries

Steps:

  • In a large bowl, combine the first five ingredients; mix well. Stir in cranberries. , Drop by tablespoonfuls 3 in. apart onto parchment-lined baking sheets; gently shape into mounds. , Bake at 325° until edges are lightly browned, 10-12 minutes. 3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups (3 sticks) unsalted butter, room temperature
1 3/4 cups sugar
2 teaspoons pure vanilla extract
Grated zest of 1 navel orange
1 1/2 cups dried cranberries
1 1/2 cups sweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, sugar, vanilla, and orange zest until creamy and light. Add flour mixture; beat on medium-low until mixture comes together. Beat in cranberries and coconut.
  • Shape dough into 1 1/4-inch balls; place 2 inches apart on prepared baking sheets. Flatten each ball slightly. Bake, rotating sheets halfway through, until edges begin to brown, 15 to 17 minutes total. Let cool on baking sheets 5 minutes, then transfer to wire racks; cool completely.

¾ cup cranberries
¼ cup white sugar

½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:
