CINNAMON SUGAR COOKIES (WITH COCONUT FLOUR)



Cinnamon Sugar Cookies (with coconut flour) image

A recipe for coconut lovers and people that have some health issues and are unable to have wheat flour....very nice flavor.

Number Of Ingredients 7

4 large eggs
3/4 c plus 2 tbsps sugar
1/2 tsp vanilla
1/4 tsp salt
1/2 c melted butter
3/4 c sifted coconut flour
2 tsp cinnamon, ground

Steps:

  • 1. Combine eggs, sugar (reserve 1 tbsp)vanilla and butter. Mix well. Stir in coconut flour. Let mixture rest for 5 mins to allow it to thicken. Combine cinnamon with the reserved 1 tbsp of sugar. Form dough into 1 1/2 inch balls and roll in cinnamon mixture, coating thoroughly. Place on cookie sheet 1 inch apart. Flatten. Bake at 375 for 15 mins. Enjoy.

1 cup butter, softened
1 cup packed brown sugar
3/4 cup white sugar
2 teaspoons vanilla
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
3 cups large-flake oats (not instant or quick oats)
1/2 cup miniature chocolate chip
1/2 cup flaked coconut

Steps:

  • Set oven to 350°.
  • Line a cookie sheet with foil and lightly spray with non-stick cooking spray.
  • In a large bowl cream the butter with sugars until fluffy.
  • Add in the vanilla and eggs; beat well.
  • In another bowl, blend together the flour, baking soda, cinnamon, salt and oats; mix well to combine.
  • Add the flour mixture to the creamed mixture along with the chocolate chips and coconut; mix well to combine.
  • Drop dough by heaping tablespoonfuls onto prepared baking sheet.
  • Bake for 8-10 minutes (longer for a crispier cookie).
  • Remove to a rack to cool.

Number Of Ingredients 11

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.
