1 1/2 cup powdered milk or non-dairy creamer
1 cup sugar
1/2 cup instant coffee granules
1/2 cup cocoa powder
1/4 teaspoon vanilla extract
dash of salt
1/4 cup chopped semi-sweet chocolate

Steps:

  • In a medium-sized bowl, combine powdered milk, sugar, instant coffee, cocoa powder, and salt.
  • Add vanilla. I used a fork to combine well with the mix.
  • Add the chopped chocolate and mix.
  • Place all the mix into an airtight container.
  • To Prepare a Cup of Hot Mocha
  • Dissolve 3 tablespoons mix into a mug of boiled water; stir well. Add whipped cream if desired.

We love hot cocoa on these cold winter nights. This mix went together fast and is a good source of calcium. It warms you when its cold outside.

6 cup(s) instant, nonfat, dry milk
1 1/2 cup(s) cocoa, unsweetened
1 1/4 cup(s) granulated sugar
1 3/4 cup(s) instant non dairy creamer
3 tablespoon(s) instant coffee powder
1 teaspoon(s) ground cinnamon
1/2 teaspoon(s) freshly grated nutmeg
1/2 teaspoon(s) cayenne pepper

Steps:

  • In a large bowl, whisk together all ingredients until well incorporated. This can be done in a food processor also, but you'll have to process smaller amounts of the ingredients at a time.
  • To make a mug of cocoa, place 1/2 cup of the mix into a large mug. Bring a cup (8 oz.) of water or milk to a boil. Pour water over the dry mix and whisk with a small whisk until well blended and frothy. Garnish with whipped cream and a sprinkle of cinnamon. Marshmallows and a candy cane stirrer are also fun add-ins.

Years ago I worked in a little coffee shop. We had a powdered cocoa mix with spices that was called Mexican Spiced Cocoa. On the can were directions for mixing it with espresso to get Mayan Mocha. I fell IN LOVE with that drink and have been searching for a replacement ever since. The coffee shop inside Hastings has a similar drink, but won't sell the mix to me for home use. So I researched a little, tested a little, and came up with this. To serve, stir 1/4 cup mix with 1 cup hot water and stir.
