This is a unique recipe that actually uses crumbled cookies as the base of the cake. Fun and easy recipe for children! Cooks in the microwave and comes out delicious! By Brian (aka, Opie)

36 chocolate sandwich style cookies (or use vanila, peanut butter, or duplex cream filled cookies)
1 (12 ounce) can Coca-Cola
2 tablespoons peanut butter (separate)
1 tablespoon hot water

Steps:

  • For the cake: Remove fillings from all cookies and place in bowl, set aside.
  • Place cookie wafers in a separate, large microwavable bowl.
  • Take one small swig from the can of pop, then pour the remainder of the coke over the cookie wafers.
  • Add one large spoonful of peanut butter to wafer/coke mixture and mix well.
  • Microwave, uncovered, for 5 minutes.
  • Remove bowl from microwave, let cool.
  • For the icing: Add one large spoonful of peanut butter and one spoonful of hot water to the creme fillings.
  • Mix well (no lumps).
  • After cake has cooled, turn cake upside down out of bowl on to a plate or lid then spread icing on top and sides.
  • Optional: Add crushed nuts or M&M's to icing before or after applying to cake.

2 cups all-purpose flour
2 eggs
2 cups white sugar
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup butter
1 ½ cups miniature marshmallows
3 tablespoons unsweetened cocoa powder
1 cup cola-flavored carbonated beverage
½ cup buttermilk
½ cup butter
2 tablespoons unsweetened cocoa powder
6 tablespoons cola-flavored carbonated beverage
4 cups confectioners' sugar
1 cup chopped pecans

Steps:

  • Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly.
  • Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
  • Bake in a prepared 9 by 13 inch pan for 40 minutes at 350 degrees F (175 degrees C).
  • While still hot, frost with Coco Cola Frosting: Combine 1/2 cup butter or margarine, 2 tablespoons cocoa and 6 tablespoons cola soft drink and heat to boiling. Pour over 4 cups confectioners' sugar and mix well. Mix in chopped nuts and spread over hot cake.

1 cup butter, plus more for the pan
2 cups all-purpose flour, plus more for the pan
2 cups granulated sugar
2 tablespoons cocoa powder
1 cup cola soft drink, such as Coca-Cola
1/2 cup buttermilk
1 teaspoon baking soda
2 eggs, lightly beaten
1 tablespoon pure vanilla extract
1 1/2 cups miniature marshmallows
1/2 cup butter
3 tablespoons cocoa powder
6 tablespoons cola soft drink, such as Coca-Cola
One 16-ounce package confectioners' sugar, sifted
1/2 teaspoon vanilla extract

Steps:

  • For the cola cake: Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-inch pan.
  • Sift flour and granulated sugar in a bowl. Heat butter, cocoa powder and cola to a boiling point in a small pan. Pour over flour/sugar mixture. Add buttermilk, baking soda, eggs, vanilla and marshmallows (the batter will be thin and the marshmallows will float to the top). Pour batter into prepared pan. Bake until cake is cooked, 30 to 35 minutes.
  • For the chocolate cola icing: Combine butter, cocoa, cola, confectioners' sugar and vanilla in a pan and heat until it comes to a boil.
  • Poke holes in the cake while it's still hot and pour the icing over the cake. Cut into squares and serve warm from the cake pan.
