This is a satisfyingly hearty sauce that you can feel good about eating! Serve over whole grain spaghetti or brown rice pasta for gluten-free diets.

½ pound lean ground beef
2 small zucchinis, chopped
1 onion, chopped
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
2 tablespoons sucanat (crystallized sugar cane juice), or to taste
1 ½ tablespoons dried basil
1 ½ teaspoons sea salt
1 teaspoon dried oregano
¼ teaspoon ground black pepper
1 (16 ounce) package whole-wheat spaghetti
1 gallon water
salt

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, zucchini, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir crushed tomatoes, tomato sauce, sucanat, basil, sea salt, oregano, and black pepper into beef mixture. Bring to a boil, reduce heat to low, and simmer until flavors have blended, at least 30 minutes or up to 1 hour for better flavor.
  • While sauce is simmering, bring salted water to a boil and cook spaghetti according to package directions. Serve sauce over hot pasta.

1 pound lean ground beef (90% lean)
1/2 cup chopped sweet red pepper
1/4 cup chopped green pepper
1/4 cup chopped celery
1/4 cup chopped onion
2 garlic cloves, minced
1/4 pound sliced fresh mushrooms
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (6 ounces) tomato paste
1/2 cup water
1 bay leaf
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
Hot cooked spaghetti
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, cook the beef, peppers, celery, onion and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Add the mushrooms; cook for 2 minutes. , Stir in the tomatoes, tomato paste, water, bay leaf, sugar, salt, basil, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes, stirring often. Discard bay leaf. Serve sauce over spaghetti. Sprinkle with Parmesan cheese.
