Deliciously moist and tender chicken thighs with a few vegetables, all baked in a clay pot, make this a one pot meal that's super easy and quick.

Number Of Ingredients 8

6 fresh Chicken thighs, boneless and skinless
3 cloves Garlic
3 Carrots, sliced
1 small Onion, cut in quarters or smaller.
4 small Red Potatoes, quartered
3-4 pats of butter.
½ teaspoon Salt
½ teaspoon Black Pepper

Steps:

  • Fully submerge both parts of your clay baking pot under water. Soak for 30 minutes.
  • Prepare your vegetables.
  • Place the carrots in the bottom of the baker.
  • Add the potatoes.
  • Add the onions.
  • Add the garlic cloves.
  • Arrange the chicken thighs on top of the vegetables.
  • Sprinkle chicken with salt.
  • Sprinkle with black pepper.
  • Place the pats of butter on top of the chicken pieces.
  • Place the top on the baker.
  • Place the baker in a COLD oven.
  • Set oven temperature to 425F degrees. Let chicken bake for 60 minutes.
  • Remove lid from baker, let chicken bake for 10-15 more minutes to slightly brown.
  • Internal temperature of the chicken should be 165F degrees to be done.
  • Remove from oven when done. Let chicken rest for 15 minutes before serving.
  • Enjoy!

1 3-4 pound whole chicken
2 carrots, cut in half and sliced
3 russet potatoes, cubed
1/2 red onion, chopped
3 garlic cloves, crushed
2 sprigs rosemary
2 sprigs thyme
1 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • Soak clay baker in warm water for 15 minutes.
  • Remove baker from water. Place carrots, potatoes, onions, and garlic in the bottom of baker.
  • Toss with half of the herbs, salt, and pepper.
  • Add chicken on top of vegetables and add remaining herbs, salt, and pepper. Cover with top lid of baker.
  • Place in a cold oven. Set oven temperature to 450 degrees and bake for 1 hour. Remove lid of the baker and cook for an additional 20 minutes, or until chicken is browned and the meat thermometer inserted in thigh area reads 165°F.
  • Remove from oven and set baker on a cutting board or trivet to rest for 10 minutes.

2 tablespoons olive oil
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/4 teaspoon sage
2 tablespoons lemon juice (fresh)
40 cloves garlic (whole, peeled; about 2 to 3 heads)
3 carrots (cut into 4 inch lengths, large ends halved lengthwise)
6 new potatoes (scrubbed, skins on)
1/2 pound pearl onions (blanched and peeled)
1 chicken (for frying, 4 to 4 1/2 pounds)
salt to taste
black pepper to taste

Steps:

  • Soak top and bottom of 3 1/4-quart/3.25-liter clay cooker in water for 30 minutes; drain. Line bottom and sides of the cooker with parchment paper.
  • Combine olive oil, rosemary, thyme, sage, and lemon juice in a large zip-top bag. Squish to combine. Add garlic cloves, carrots, potatoes, and pearl onions. Seal bag and turn until all vegetables are coated. Scoop out the vegetables (reserving the marinade) and place them around the outer edge of the clay cooker, leaving room for the in the center.
  • Use the remaining marinade to coat the chicken, rubbing it into the skin. Place the chicken in the center of the clay cooker, breast-side up. Sprinkle chicken and vegetables generously with salt and cover.
  • Place in a cold oven and set the temperature to 475 F/250 C. Bake until chicken is tender and juices run clear when the thigh is pierced about 1 1/4 hours. Remove cover and bake an additional 5 to 10 minutes until chicken is crisp and brown.
  • Carve chicken and drizzle with pot gravy . Serve with the whole garlic cloves, vegetables, and French bread.

2 pounds small red-skinned potatoes, quartered
3 tablespoons extra-virgin olive oil
1/2 teaspoon cumin seeds (optional)
Kosher salt and freshly ground pepper
4 cloves garlic, finely chopped
2 tablespoons packed light brown sugar
1 lemon (1/2 juiced, 1/2 cut into wedges)
Pinch of red pepper flakes
4 skinless, boneless chicken breasts (1 1/2 to 1 3/4 pounds)
2 tablespoons chopped fresh cilantro or parsley

Steps:

  • Position a rack in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes with 1 tablespoon olive oil, the cumin seeds, 3/4 teaspoon salt, and pepper to taste. Spread in a large baking dish and roast until the potatoes begin to brown, 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the garlic and cook, stirring frequently, until lightly golden, about 2 minutes. Remove from the heat and stir in the brown sugar, lemon juice and red pepper flakes. Remove the baking dish from the oven, push the potatoes to the sides and arrange the chicken breasts in the middle. Season the chicken with salt and drizzle with the garlic mixture. Return to the oven and bake until the chicken is cooked through and the potatoes are tender, about 20 minutes.
  • Remove from the oven; transfer the chicken to a cutting board and slice. Add the cilantro to the baking dish and toss with the potatoes. Serve the chicken with the potatoes and lemon wedges. Drizzle with the pan juices.

1 chicken, cut up
1 cup sliced carrot
3 -4 medium potatoes, quartered
4 garlic cloves, chopped (can add more or less)
1/4 cup chopped fresh parsley (can use 1 tbs of dried parsley)
1 tablespoon caraway seed (optional, but I always use them)
1 tablespoon Italian dressing (optional)
salt and pepper

Steps:

  • Soak clay pot for 15 min.
  • Rub chicken with garlic, salt, pepper, caraway seeds, parsley, Italian dressing and marinate overnight ( optional) You can rub your chicken and bake it right away, but it will taste much better , if marinated.
  • In a clay pot, add potatoes, carrots and chicken on top.
  • Place your clay pot in the cold oven and roast at 430F for 1.5 hours.

1 pound bone-in chicken thighs
1 ½ teaspoons paprika
1 ½ teaspoons salt, or more to taste
1 teaspoon ground black pepper, or more to taste
2 tablespoons vegetable oil
¾ pound baby carrots
½ pound baby potatoes, halved
½ onion, sliced
1 cup chicken broth, divided
1 tablespoon cornstarch

Steps:

  • Season chicken thighs with paprika, salt, and pepper.
  • Heat oil in a skillet over medium-high heat. Place chicken thighs skin-side down in the skillet and cook, without moving, until golden brown, 7 to 9 minutes. Flip thighs over and cook for an additional 3 to 5 minutes. Remove from the skillet and set aside.
  • Add potatoes, cut side down, and cook over medium-high heat until golden brown, 3 to 5 minutes. Add carrots and onions and cook until onions are soft and translucent, 8 to 10 minutes. Stir in 3/4 cup chicken broth, scraping up all the browned bits.
  • Dissolve corn starch in 1/4 cup chicken broth and pour into the skillet. Stir until well combined.
  • Place chicken thighs over vegetables, cover, and cook until carrots are tender and chicken is no longer pink at the bone and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Season with additional salt and pepper if needed.

1 (3-pound) frying chicken, giblets removed and reserved
1 tablespoon olive oil
12 small onions, peeled
3 garlic cloves, peeled
6 sprigs parsley, plus extra for garnish
1/4 pound prosciutto, small dice
2 whole bay leaves
3 large tomatoes, peeled, seeded and chopped
1/2 cup dry white wine
1/3 cup tawny or ruby Port
2 tablespoons brandy
1 tablespoon Dijon mustard
Freshly ground pepper

Steps:

  • Preheat an oven to 350 degrees F. Rub the chicken all over with the oil, and loosely stuff the cavity with 3 onions, 1 garlic clove and 1 sprig of parsley. Set aside. On the bottom of a 3-quart terra-cotta jug or deep heavy casserole, spread half the prosciutto, 2 sprigs parsley, 4 onions, 1 garlic clove, 1 bay leaf and all of the giblets. Place the chicken head-first in the pot, or breast-side up in a casserole. Scatter the remaining onions, garlic, 3 sprigs parsley, prosciutto and bay leaf around and on top of the chicken. In a small bowl, combine the tomatoes, wine, Port, brandy, mustard, and pepper, and pour over the chicken. Cover the pot or casserole and bake for 1 1/2-2 hours, or until chicken is cooked through.
  • Remove pot from the oven, and carefully remove the onions and reserve. Drain the liquid from the pot into a large skillet. Lift out the chicken and transfer to a roasting pan fitted with a rack.
  • Use a slotted spoon to lift out the giblets from the pot, along with any remaining whole onions and add them to the reserved onions.
  • Set the skillet of liquid over high heat, bring to a boil, reduce to a simmer and cook for 10 minutes, or until liquid is reduced by half, stirring often. Preheat a broiler. Place the chicken under the broiler for 3 to 4 minutes, or until browned. To serve, cut the chicken into pieces and arrange on a large platter. Scatter the onions and giblets around the chicken, and spoon some of the warm sauce over the top. Garnish with parsley sprigs and pass extra sauce.
