4 1/2 pounds sweet potatoes
1 cup granulated sugar
1/2 cup butter, softened
1/4 cup milk
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/4 cups cornflakes cereal, crushed
1/4 cup chopped pecans
1 tablespoon brown sugar
1 tablespoon butter, melted
1 1/2 cups miniature marshmallows

Steps:

  • Preheat oven to 400°F. Bake sweet potatoes at 400°F for 1 hour or until tender. Let stand until cool to touch (about 20 minutes); peel and mash sweet potatoes. Reduce oven temperature to 350°F. Beat mashed sweet potatoes, granulated sugar, and next 5 ingredients at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 11 x 7 inch baking dish. Combine cornflakes cereal and next 3 ingredients in a small bowl. Sprinkle over casserole in diagonal rows 2 inches apart. Bake at 350°F for 30 minutes. Remove from oven; let stand 10 minutes. Sprinkle marshmallows in alternate rows between cornflake mixture; bake 10 minutes. Let stand 10 minutes before serving.

I found this recipe around 2006 and its been a big hit for Thanksgiving and Christmas. Though my husband prefers it for dessert rather then a side dish.

6 medium sweet potatoes
1/4 cup(s) sugar( optional)
1/2 cup(s) milk
1/2 cup(s) plus 2 tbsp butter. melted and divided
2 large eggs
1 teaspoon(s) pure vanilla extract
1/2 teaspoon(s) salt
1/2 cup(s) light brown sugar
3 tablespoon(s) all-purpose flour
1/2 cup(s) chopped walnuts or pecans
14 large marshmallows cut crosswise

Steps:

  • Pierce potatoes with fork. Cook on high in microwave until tender, turning once, about 8 minutes per side. Cut open; cool. Spoon potato flesh into bowl; mash until smooth. Measure 3 cups mashed potatoes.
  • Preheat oven to 350 degrees F. Coat 11/7 baking dish with nonstick cooking spray; set aside. ( I typically use the disposable baking dishes instead.)
  • Combine mashed sweet potatoes, granulated sugar, milk, 1/3 cup butter, eggs, vanilla and salt in medium bowl; stir to mix well. Spoon into prepared dish.
  • Combine brown sugar and flour in small bowl; stir to mix well. Sprinkle over sweet potato mixture. Sprinkle with nuts; drizzle with remaining 2 tablespoons of butter. Bake 20 minutes.
  • Remove from Oven and arrange marshmallow. Bake for another 10 minutes or until the marshmallows are golden brown.

Everybody makes this casserole, don't they. Here is Grandma Carr's version taken from a file of her handwritten recipes.

5 large sweet potatoes, peeled and sliced
1/2 cup(s) brown sugar, firmly packed
1/4 cup(s) butter
2 tablespoon(s) orange juice or cranberry juice, optional
1/2 teaspoon(s) cinnamon
1 package(s) (10.5 ounce) miniature marshmallows

Steps:

  • Preheat oven to 350 degrees. Boil sliced sweet potatoes in water until tender. Drain. In a large bowl, mash the potatoes and stir until creamy. I like to leave some texture and not get all the lumps out but use your perference as a guide. Stir in the butter, brown sugar, juice and a dash of ground cinnamon.
  • Spread the sweet potato mixture into a buttered 9 by 13 inch pan. Sprinkle the miniature marshmallows over the top and bake at 350 degrees until golden brown.
