An easy and delicious traditional sweet potato casserole with marshmallows

3 lbs sweet potatoes
1/2 cup heavy cream
2 large eggs
1/2 cup brown sugar
1/4 cup butter, melted
1 teaspoon Cinnamon
1/4 cup chopped pecans
Vanilla
Salt
Topping
8 ounces mini marshmallows
1/2 cup pecans
1/4 cup butter - melted
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup flour
8 ounces mini marshmallows

Steps:

  • Cook sweet potatoes using the desired method until soft. I prefer to boil them for about 20-30 minutes. You can remove the peels before or after - I do after I've boiled them.
  • Preheat oven to 350 degrees.
  • Place cooked sweet potatoes in a bowl and mash until you reach the desired consistency.
  • Add in heavy cream, eggs, brown sugar, butter, cinnamon, and pecans. Mix together until everything is combined.
  • Place in a baking dish and smooth out.
  • Make the pecan topping by mixing together the pecans, butter, flour, sugar, and cinnamon. Place on top of sweet potato mixture.
  • Top with mini marshmallows.
  • Bake for about 25 minutes, or until the marshmallows are nice and browned.

5 sweet potatoes, sliced
¼ cup reduced fat margarine
½ cup packed brown sugar
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
  • Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
  • Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

4 pounds sweet potatoes
1 cup butter
3/4 cup light brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon nutmeg
2 cups miniature marshmallows
1 ( 10 ounce) bag of large marshmallows

Steps:

  • Preheat oven to 400*F
  • Spray a 9x13 casserole dish and set aside.
  • Peel and chop up sweet potatoes.
  • Place them in a large pot and cover with water.
  • Bring to a boil and cook until soft and tender, about 15 minutes.
  • Strain potatoes and put back in pot.
  • Add butter, brown sugar, cinnamon, nutmeg and 2 cups of miniature marshmallows.
  • Cook over medium heat until butter and marshmallows are melted and brown sugar is dissolved and combined.
  • While stirring, mash potatoes up. You can puree them or leave them chunky.
  • Pour mixture into casserole dish. Bake for 15 minutes.
  • Remove from oven, top with large marshmallows and bake until marshmallows are puffy and golden, about 2 - 3 minutes.
  • Serve immediately!

¼ cup butter

1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ cup white sugar
2 tablespoons heavy cream
¼ cup butter, softened
3 tablespoons all-purpose flour
¾ cup packed light brown sugar
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.
  • In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish.
  • In a medium bowl, combine 1/4 cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.
  • Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.
