CLASSIC HOT WINGS

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

  • 1. Preheat oven to 325 degrees F. 2. Rinse and dry chicken pieces. 3. Heat 3 inches of canola oil n a heavy pot to 375 degrees. Add half the chicken pieces and fry until the pieces are golden brown and fully cooked. About 5 minutes. Remove the pieces and drain on paper towels, then repeat with the other half of the wing pieces. 4. In a saucepan, heat the cayenne sauce and butter over medium - low heat. 5. Add the worcestershire and tabasco. Let it bubble up, then turn off the heat. 6. Place the wings in an ovenproof dish and pour the hot sauce all over the top. Toss to coat, then bake for 15 minutes. 7.Serve with blue cheese or ranch dressing, celery sticks and a cold beverage. Oh YEAH!!!!! Don't forget the napkins.

Peanut oil, for frying
4 lb. chicken wings (about 40), separated into 2 pieces, wing tips removed, rinsed
12 tbsp. margarine
1 cup hot sauce, preferably Frank's Red Hot Original Cayenne Pepper Sauce
1 ⅓ cups chunky blue cheese dressing
4 ribs celery, halved lengthwise, then cut crosswise into 3″ sticks

Steps:

  • 1. Heat oven to 200°. Pour oil to a depth of 2″ in a 6-qt. Dutch oven, and heat over medium heat until a deep-fry thermometer reads 350°. Dry wings thoroughly with paper towels, and working in batches, fry wings until golden brown, about 12 minutes. Transfer wings to a wire rack set over a baking sheet, and place in oven to keep warm until all wings are fried. 2. Heat margarine in a 12″ deep-sided skillet over medium heat; stir in hot sauce until smooth. Add wings, and toss until completely coated. Serve wings in a large bowl with dressing and celery on the side.

CHICKEN WINGS
3 lb chicken wings
2 Tbsp olive oil
2 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp pepper (i used lemon pepper, but black pepper is standard)
1/2 to 1 tsp cayenne pepper or chili pepper (optional - if you want extra "heat)
SAUCE
1/4 cup hot sauce (i used franks)
4 Tbsp unsalted butter
2 Tbsp honey
FOR SERVING
ranch dip (prepared, from a jar)

Steps:

  • 1. Preheat oven to 400°. Spray a wire rack with non-stick cooking spray. Place the wire rack inside a foil-lined baking sheet; set aside.
  • 2. Place wings in a gallon-size zip-lock plastic bag. Pour the olive oil over the wings, and seal bag. Toss the chicken in the oil until all pieces are well coated.
  • 3. Mix together the garlic powder, onion powder, salt, pepper and cayenne/chili pepper (if using). Sprinkle seasoning mix over the chicken pieces, and seal bag. Toss chicken until evenly coated with the seasoning mix.
  • 4. Place chicken on wire rack, and place baking sheet in oven and bake wings for 30 minutes.
  • 5. While wings are baking, prepare sauce by heating the hot sauce, butter and honey in small saucepan over medium heat, stirring constantly until butter melts, about 3 minutes.
  • 6. After 30 minutes baking time, brush half of the sauce over all sides of the wings (brush one side, flip wings and brush other side). Continue to bake another 30 minutes or until sauce begins to caramelize and skin is just slightly charred in spots. (During the last few minutes, you can brush some of the pan sauce over the wings, and then broil the wings for the last 3 or 4 minutes if you want more charring.)
  • 7. Remove baking sheet from oven, brush remaining sauce over wings (or alternatively, you can place wings and sauce in a bowl, and toss until wings are thoroughly coated). Serve immediately with prepared ranch dip, for dipping.
