6 slices rustic, crusty country bread, 3/4-inch thick
Olive oil, for drizzling
2 large garlic cloves, halved lengthwise
1/2 cup grated Parmesan
Basil leaves, for serving

Steps:

  • Light a grill or turn heat to high. Drizzle both sides of bread with olive oil and grill for 2 to 3 minutes without turning, until one side is crisp and beginning to char. Remove bread from grill and rub grilled side thoroughly with the cut garlic. Evenly distribute Parmesan on the grilled side and return toast to the grill, cheese side up. Close lid and cook for another 2 to 3 minutes, or until cheese is melted. Transfer to a cutting board, slice each piece of toast in half and serve garnished with basil leaves.

Steps:

  • Preheat the griddle to medium heat.
  • Build the sandwiches with 1 slice of white cheese on 4 pieces of bread and 1 slice of yellow cheese on the other 4 slices of bread. Close the sandwiches and butter both sides. Place on the griddle; cover with a metal bowl and let the sandwiches get a nice golden brown, 2 to 3 minutes. Flip, cover again and cook until the cheese is melted and the sandwiches are golden brown, 2 to 3 minutes.

  • With a butter knife, spread butter on one side of each slice of bread. Place 2 slices, buttered side down, on work surface. Divide cheese evenly on both slices. Top with remaining slices, buttered side up.

2/3 cup monterey jack cheese, grated
8 slices hearty white bread
4 tablespoons unsalted butter, melted

  • Combine cheeses in bowl.
  • Brush top side of each slice of bread with melted butter.
  • Flip 4 slices over, sprinkle with cheese, and compact cheese lightly with hand.
  • Cover with remaining bread slices, buttered side up.

Croque Monsieur: Classic French Grilled Cheese image

A croque monsieur is another level of grilled cheese sandwich. A little bit of béchamel sauce is what makes the French bistro classic so special.

2 slices white bread
1 Tbsp clarified butter (or unsalted butter), soft
2 tsp Dijon mustard
½ cup grated Gruyère cheese (or a combination of Gruyère and Emmental. See variations below.)
½ cup béchamel sauce
1-2 slices ham

Steps:

  • Pre-heat your broiler.
  • Optional: Trim the crusts off of the bread, making the slices as square as possible.
  • Spread both slices of bread with butter, then flip them over and spread them lightly with Dijon mustard.
  • In a bowl, combine the cheese and half of the béchamel sauce, and mix until the cheese is fully coated.
  • Now divide the cheese mixture in half. Spoon half the cheese mixture onto one slice of bread (on the mustard side, not the butter side), and spread it evenly. Lay the sliced ham atop the other slice, then press both halves of the sandwich together.
  • Spray a bit of cooking spray onto the surface of a nonstick pan. Heat the pan over a medium heat until the oil is hot and glistening but not quite smoking.
  • Place the sandwich into the pan and cook for about 2 minutes, or until the bottom of the bread is a nice shade of golden-brown.
  • Use a nonstick spatula to flip the croque monsieur over. Lower the heat a bit and cover the pan. Cook for another minute or two, or until the second slice of bread is also golden brown and the cheese inside the croque monsieur is fully melted.
  • Now transfer the sandwich to a cutting board. Top with the remaining cheese mixture, then spoon the other half of the béchamel over the top.
  • Broil the sandwich, béchamel-side up, for a minute or two until the top of the sandwich is nicely browned. Serve right away.
  • Variations:
  • Muenster, Gouda, Fontina and Comté are good to use instead or in combination with the Gruyère.
  • Substitute sliced cooked chicken breast for ham.
  • Instead of white bread, use sourdough. Leave crusts on.
  • Top finished sandwich with a fried egg to make a Croque Madame, possibly named because the egg resembles a ladies' hat.

1/4 pound cheddar cheese, sliced 1/3 inch thick
Unsalted butter, room temperature

Steps:

  • Heat a griddle or large cast-iron skillet over medium-low heat. Place two slices of bread on a clean work surface, and cover each with a layer of cheese; top with remaining bread slices, pressing gently to adhere. Generously butter both sides of each sandwich, spreading it all the way to the edges.
  • Place sandwiches on the griddle or in the skillet. Cook until golden brown on each side and the cheese has completely melted, 3 to 4 minutes per side, turning once. Before removing from griddle, flip sandwiches to reheat first side, about 15 seconds. Cut each sandwich diagonally in half; serve immediately.
