GRANDMA FREEL'S CRANBERRY SALAD
This is a recipe my grandma made for a local JELL-O® contest. She won first place! It is a delicious salad like nothing I have ever seen. I grew up eating this cranberry salad every year at Thanksgiving. It reminds me of my grandma, who I loved so much!

Steps:
- Stir cranberries, sugar, and water together in a saucepan; cook over medium heat, stirring often, until most of the berries have popped open, about 20 minutes.
- Remove saucepan from heat. Stir gelatin into the cranberries mixture until dissolved completely; add celery, apple, and pecans and stir. Pour into a glass 13x9-inch dish.
- Refrigerate until set in the center, 10 to 12 hours.

BEST EVER CRANBERRY SALAD
This recipes was orginally my DH's Grandmothers and has been tweaked by my MIL. I didn't care for cranberry salad ever till I tried this. I have been making this for years now. Its more of a Jello than a salad. Great to get kids to eat something different. It's definitely something I look forward to eating every Thanksgiving and Christmas. Great on biscuits and rolls. I make this in a large glass decorative bowl because it doesn't look good if you try to transfer it to another dish for the meals. ** Note this is best if made the night before to give time for proper set. I have a lower sugar version posted also. Suggested serving size is about 3 tablespoons.

- In the blender puree cranberries and oranges. Add sugar to cranberry mixture and blend.
- In a large bowl dissolve jell-o into boiling water. When dissolved add ice to begin the setting process. Remove what few ice cubes that are remaining.
- Add cranberry mixture to jell-o. Mix well.
- Cover with saran wrap and set in fridge to set.
GRANDMA'S CRANBERRY SALAD
I always love the punch of color that cranberries add to a meal, and this delicious cranberry salad recipe really does the berry justice. Not only did we love the perfect balance of sweet and tart, but the chopped pecans added a wonderful crunch that we'd never had before in a cranberry salad.

- 1. Boil the cup of water. Dissolve the Jell-o in the hot water in an 8-inch square pan mix well. Add the sugar, lemon juice, and pineapple juice. Stir to dissolve well. Note: You can substitute the 8x8 dish and use a 9x13 dish, it seems to gel up a bit better that way.
- 2. Add the remaining ingredients and mix. Chill overnight.
- 3. Grandma's Notes: Chop up the pecans first before getting the blender wet. Or you could just buy pre-chopped pecans and save a step. Use the blender or food processor to chop up cranberries, then orange, seeded, and partially peeled. The chopped peel gives it that special zing!

- Put cranberries in a food processor and blend until well chopped. Transfer cranberries to a large bowl, and mix in pineapple, pecans, marshmallows and sugar.
- In a medium bowl, beat cream with an electric mixer until stiff peaks form. Fold whipped cream into cranberry mixture. Chill until ready to serve. (Or, freeze for 2 hours before serving.)

CLASSIC CRANBERRY SALAD
My husband's family has been using this traditional and delicious salad for holiday dinners for five generations. The women used to grind the cranberries and the orange in a food grinder, which was a messy job! Thank goodness for food processors! It can be made up to three days before serving, which is always a help when we are cooking for those holiday meals. Keep covered in refrigerator. Cook time is for chilling.

- Dissolve gelatin in boiling water; set aside.
- In food processor, chop the cranberries while still frozen.
- Add to the gelatin with 1 1/2 cup of sugar, stir to combine.
- In food processor, chop orange chunks until finely chopped; add to cranberry mixture.
- Stir in grape halves and pecans.
- Pour into decorative bowl or mold and chill overnight.
- Adjust sugar, if necessary.

- Pulse the cranberries in a food processor until fine and no large pieces remain. Transfer to a large mixing bowl and stir in the sugar. Cover and refrigerate for at least 2 hours or up to overnight.
- Drain any accumulated juices from the cranberries and reserve for another use, and then stir in the marshmallows and drained pineapple and set aside.
- Whip the heavy cream in a large mixing bowl until it begins to thicken, about 1 minute, and then beat in the powdered sugar and vanilla until soft peaks form, 3 to 5 minutes. Fold the whipped cream into the cranberry mixture, one third at a time, until fully incorporated. Transfer to an 8-by-8-inch baking dish.
- Refrigerate or freeze for about 2 hours. Right before serving, garnish with the pomegranate seeds.
