CHEESE FONDUE RECIPE
A classic and traditional Swiss (and French) cheese fondue recipe.

Steps:
- Grate all the cheese so that it melts easily without clumping.
- (Optional) Wipe the mushrooms with a damp cloth and chop them into small pieces.
- (Optional) Start by cooking the mushrooms lightly in a stovetop pot in olive oil and garlic.
- Add approximately 1/2 bottle of white wine into the pot and simmer.
- Slowly add in the cheese and mushrooms as it is melting.
- Mix the cheese by forming 8 with a wooden spatula. Note: keep temperatures low as the cheese fondue must never boil.
- Chop the baguette into bite-size square cubes.
- Add additional wine into the pot if the cheese fondue is too thick.
- Once the cheese has completely melted, move the mixture to the fondue pot and serve.

- Simmer wine in fondue pot. Add Swiss cheese, Gruyere cheese, 1/4 pound at a time. Stir after each addition of cheese until melted. Stir in flour. When all the cheese has melted, stir in salt and nutmeg. Serve with cut-up French bread.

CHEESE FONDUE
Everyone will want to dip into this classic cheese fondue. It's made with three Swiss cheeses (raclette, Emmental, and Gruyere), and is rich, gooey, and delicious. We use cubed French bread and pickled vegetables for dipping.

- Rub inside of a fondue pot with garlic; discard garlic. Pour cider or wine into pot, and place over medium-low heat. When liquid starts to bubble, start adding cheeses by the handful, stirring until melted and combined.
- Whisk together lemon juice and cornstarch in a small bowl until cornstarch dissolves; stir into cheese mixture. Continue stirring until mixture is smooth and bubbling slightly, about five minutes. Season with nutmeg and pepper.
- Transfer fondue pot to the table, and keep warm over the fondue pot warmer. Serve with bread and pickled vegetables.
CLASSIC CHEESE FONDUE WITH FRENCH BREAD
In the 70's it was the rage to have fondue parties. This is the classic Cheese Fondue that I have used since then. Whether it is for a meal or as a dip this is an easy recipe.

Steps:
- 1. Rub the inside of the fondue pot with one clove of garlic and then discard.
- 2. Cook wine and lemon juice int pot until very hot. Add garlic clove speared with a toothpick (it will make removing it easier). Decrease heat and stir in cheese, cooking until melted.
- 3. In a separate bowl, blend kirsch with cornstarch, nutmeg, white pepper and paprika; stir into cheese until smooth. Keep on low heat and do not boil.
- 4. Remove garlic clove and serve with French bread.
