Classic Italian Bruschetta With Fresh Herbs image

This recipe was given to me courtesy of Culinary Herbalist Martha Paul of Martha's Herbary, Pomfret Connecticut. It's Simple, Classic and Delicious!

Number Of Ingredients 9

3 lbs vine ripened tomatoes (seeded, peeled & diced)
3/4 cup fresh basil, sliced thin
freshly ground sea salt, to taste
4 -6 large garlic cloves, depending on your love of garlic
1/2 cup good quality olive oil
1 tablespoon fresh oregano, minced
1 tablespoon fresh thyme, minced
French bread, sliced 1/2 inch thick
fresh mozzarella cheese, sliced thin (NOT THE SHREDDED!)

Steps:

  • Combine tomatoes and 1/2 cup fresh basil in a colander, sprinkle with salt and toss to coat; let drain 1 hour.
  • Preheat oven to 375°F
  • In a large bowl combine the drained tomato/basil mixture with the minced garlic, 1/4 cup olive oil, remaining 1/4 fresh basil, oregano and thyme.
  • Let stand at room temperature 15 to 20 minutes to allow flavors to blend.
  • During this time brush French bread slices lightly with the remaining olive oil.
  • Toast "lightly" in the oven (just a few minutes).
  • Pull out and place a small amount of tomato mixture on top of the lightly toasted French bread slices.
  • Top each piece with a small amount of Mozzarella.
  • Toast in the oven until cheese has melted and its golden brown.
  • Serve and enjoy.

1 ½ lb ripe plum tomatoes (diced into 0.25 inch pieces)
1 small garlic head, or around 6 large garlic cloves, minced
1 cup of fresh and finely chopped basil leaves
1 medium sized shallot, chopped finely (around 2 tablespoons)
¼ cup of olive oil
½ teaspoon each of black pepper (freshly ground) and salt (the quantity may vary according to your taste)
1 crispy country bread or baguette, for serving

Steps:

  • Prepare a perfect blend of olive oil, shallot, garlic, tomatoes, and basil. Taste the mixture and add some pepper and salt as needed. Leave the recipe for 30 minutes - 4 hours at room temperature. Now use Crostini or toasted bread pre-heated in 350°F temperature for around 10 minutes. Drain the excess liquid and pile the bruschetta on the sliced bread or Crostini with a slotted spoon.

This delicious bruschetta is easy to make and very tasty! Great as a starter for an Italian meal, I like it with lasagna. I havn't yet tried it with sun dried tomatoes but I will try it next time.

8 slices ciabatta (or any rustic country style bread)
2 garlic cloves
12 cherry tomatoes
1 tablespoon olive oil
fresh basil leaf, shredded
salt and pepper
sun-dried tomato (optional)

Steps:

  • Bake the ciabatta slices in the oven at around 200C/400F, for 10-15 mins turning once halfway until crispy.
  • Meanwhile chop the cherry tomatoes in half and toss them with the olive oil, basil, sun dried tomatoes if using and salt and pepper to taste.
  • When the Ciabatta is done, chop the garlic cloves in half and rub on both sides of the bread.
  • Top with the tomato mix (around 3 cherry tomato halves to each slice. Top with some whole basil leaves if you like.
  • Serve immediately.

1 loaf rustic Italian bread, cut into 1/2-inch-thick slices (about 24)
4 garlic cloves, halved
Extra-virgin olive oil
Coarse salt

Steps:

  • Heat a grill or preheat the broiler. Lightly char bread slices on grill or under broiler, turning slices halfway through. Rub bread slices with cut sides of garlic cloves, then drizzle with olive oil, and sprinkle with salt.
