MARINATED SEA BASS WITH CITRUS

180 g sea bass, bones and skin removed
1 lemon, juice
3 lime, juice
Lemon (1) and Lime (3) zest
2 tablespoon apple vinegar
1 teaspoon salt
1/2 teaspoon ground pepper

Steps:

  • Mix in a medium size jar or bowl: lemon and lime juice, vinegar, lemon and lime zest, salt and pepper.
  • Place the sea bass fillet on a cutting board and with a sharp knife slice thinly on an angle.
  • In a medium-size container, place a layer of sea bass slices.
  • Pour a little bit of the acid mixture. Add another layer of sea bass fillet. Repeat.
  • Close the container and store it in the refrigerator for 24 hours.
  • Serve: Remove the sea bass fillet from the container and pat dry with some paper towels, place them on a plate. Drizzle with olive oil and enjoy it!

1/2 cup pineapple juice
1/2 cup orange juice
1/3 cup soy sauce
3 tablespoons finely chopped peeled fresh ginger
2 tablespoons oriental sesame oil
1/8 teaspoon cayenne pepper
4 6-ounce sea bass fillets
Chopped green onions

Steps:

  • Mix first 6 ingredients in 8x8x2-inch glass baking dish. Add fish; turn to coat. Chill 2 hours, turning fish occasionally.
  • Place steamer rack in large skillet. Arrange fish on rack. Pour marinade into skillet under rack and bring to boil. Cover skillet and steam fish until just opaque in center, about 8 minutes. Transfer fish to plates. Remove steamer rack from skillet. Boil marinade until reduced enough to coat spoon, about 6 minutes; spoon over fish. Top with green onions.

1/2 tablespoon cumin
1 cup pineapple, diced
1 cup mandarin orange
1 cup tri-color bell pepper, diced
1/4 cup red onion, diced
1 tablespoon olive oil
1 tablespoon white wine
1 tablespoon garlic, chopped
1/4 cup fresh cilantro, chopped

Steps:

  • Dust sea bass with cumin, and roast in 400°F; oven for about 8-10 minutes.
  • Add pineapple, oranges, peppers, onions, Olive oil, wine, garlic and cilantro to mixing bowl and mix throughly.
