CLASSIC CRANBERRY SAUCE

Martha's textbook cranberry sauce teams whole berries with bright orange (zested and juiced) and spicy cinnamon. Use any leftovers to make Cranberry Swirl Cheesecake or Chicken a la Cranberry.

24 ounces fresh or frozen cranberries (6 cups)
1 1/4 cups sugar
4 wide strips orange zest, plus 1 cup fresh juice
1/2 teaspoon ground cinnamon
Kosher salt

Steps:

  • In a saucepan, combine cranberries, sugar, orange zest and juice, cinnamon, 1/4 teaspoon salt, and 1/4 cup water. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries burst and mixture thickens slightly, 12 to 15 minutes. (Sauce will thicken more as it cools.) Remove from heat; let cool completely. Refrigerate in an airtight container up to 1 week.

1 cup water
1 cup white sugar
1 (12 ounce) package fresh cranberries
1 orange, peeled and pureed
1 apple - peeled, cored and diced
1 pear - peeled, cored and diced
1 cup chopped dried mixed fruit
1 cup chopped pecans
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, pecans, salt, cinnamon, and nutmeg. Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.

CRANBERRY CITRUS DRESSING

3 cups sugar
1 1/2 cups water
2 vanilla beans, split lengthwise
1 orange, zested and juiced
3 (12-ounce) bags fresh or frozen cranberries
Dash salt
Freshly ground black pepper
3 tablespoons Dijon mustard

Steps:

  • Start by making a simple syrup: dissolve the sugar in the water in a medium saucepan. Add vanilla beans and bring to a simmer. Add the orange juice and cranberries, a dash of salt and some freshly ground black pepper, to taste. Simmer until cranberries begin to pop and become tender, about 3 to 5 minutes. Remove from heat and stir in Dijon mustard. Chill cranberry sauce until ready to serve. The sauce can be made up to 2 days ahead of time. Just before serving, garnish sauce with freshly grated orange zest.

1 (12-ounce) package fresh cranberries, picked over
3/4 cup sugar
1/4 cup water
1/8 teaspoon ground ginger
1/2 teaspoon fresh lemon juice
1/2 teaspoon fresh lime juice

Steps:

  • Remove the peel and pith from oranges with a pairing knife, cut each section into quarters.
  • In a heavy saucepan over medium heat combine oranges, cranberries, sugar, water, and ground ginger. Cook for 15 minutes, stirring occasionally. Remove from heat and stir in lemon and lime juice. Cover sauce and chill before serving. Can be made up to 3 days prior to serving.

12 oz. cranberries (fresh or frozen)
1/2 c. orange juice
1 stick cinnamon
1/4 c. Pedro Jimenez sherry
1 c. brown sugar
2 tbs candied ginger, cut into 1/4-inch pieces, or more to taste

Steps:

  • 1. Place all ingredients except for the ginger in a saucepan over medium heat. Bring to a simmer and cook for about 15 min, until cranberries are tender. Raise heat tot high for 5 min to boil off the alcohol, then remove from heat and discard the cinnamon stick. (If you prefer a thicker, more jam-like cranberry sauce, gently simmer until it's a little bit looser than you like-it will thicken somewhat as it cools.) 2. Fold in the candied ginger and allow to cool to room temperature before placing in the refrigerator until needed.

1 cup water
1 cup light brown sugar
1 cinnamon stick, broken in half
¼ teaspoon ground allspice
6 ounces dried cherries
1 (12 ounce) package fresh cranberries

Steps:

  • Stir the cranberry juice cocktail, water, brown sugar, cinnamon stick, and allspice together in a saucepan; bring to a boil. Add the cherries to the cranberry juice mixture; cook another 2 minutes. Add the cranberries; continue cooking, stirring occasionally, until the cranberries pop, about 10 minutes. Remove from heat and chill in refrigerator 8 hours to overnight. Remove and discard cinnamon stick before serving.

My mother-in-law makes this super-easy sauce every Thanksgiving. Cherries give tart cranberries a slightly sweet flavor. I serve it alongside turkey, pork and ham.

1-1/2 cups water
4 cups fresh or frozen cranberries (1 pound)
1 can (14-1/2 ounces) pitted tart cherries, drained

  • In a large saucepan, cook sugar and water over medium heat until sugar is dissolved. Add cranberries and cherries. Bring to a boil. Cook uncovered, until cranberries begin to pop, about 6 minutes. Reduce heat; cook 20 minutes longer or until thickened. Pour into a serving dish. Cover and chill for at least 2 hours.

1 tablespoon unsalted butter
1 piece ginger (about 1 inch), peeled
1/2 teaspoon cinnamon
1/4 cup amaretto
1 bag (15 ounces) frozen or fresh cranberries
1 bag (10 ounces) frozen cherries
1/4 cup sugar

Steps:

  • Heat butter in a medium saucepan over medium-high heat. Cook ginger and cinnamon until ginger becomes fragrant, 1 to 2 minutes. Carefully add amaretto and cook until liquid thickens and reduces by half, about 1 minute. Add cranberries, cherries, sugar and 1/2 cup water. Cover and bring to a boil. Reduce heat to low and simmer until cranberries break apart and sauce thickens, 20 to 25 minutes. Remove from heat and cool to room temperature. Transfer to an airtight container and refrigerate for up to 1 week.
