Citrus Blueberry Salad with Almond Relish and Minted Sugar image

1/2 cup toasted almonds chopped
1/4 cup pure cane granulated sugar
8 fresh mint leaves, chopped
2 ruby red grapefruits, segmented and juice reserved
2 yellow grapefruits, segmented and juice reserved
2 Navel oranges, segmented and juice reserved
2 tablespoons honey
One 2-inch piece fresh ginger, cut in half
1 pint fresh blueberries, picked over and rinsed

Steps:

  • Put the almonds, sugar and mint in a food processor and pulse briefly to make a coarse streusel-like topping. Transfer to a small bowl.
  • Combine the grapefruits and oranges in a large decorative bowl. Combine the reserved citrus juices in a small saucepan (you should have at least 2 cups, if you don't, add enough fresh orange or grapefruit juice to make up the difference). Add the honey and fresh ginger and bring to a boil. Cook until the mixture is reduced by half. Remove from the heat and let cool to room temperature, at least 30 minutes. Remove the ginger and pour the mixture over the citrus. Cover and refrigerate the salad for at least 1 hour and up to 24 hours.
  • Just before serving, stir in the blueberries. Top with the minted almond sugar and serve.

BROILED CITRUS SALAD WITH COINTREAU AND BROWN SUGAR

2 quarts jarred citrus salad, drained
3 ounces Cointreau or other orange liqueur
1/3 cup brown sugar, 3 handfuls
Several sprigs fresh mint, for garnish

Steps:

  • Arrange drained citrus in a flameproof casserole dish. Douse fruit with liqueur. Top fruit with 3 handfuls of brown sugar sprinkled evenly over the top. Place casserole under a hot broiler 6 inches from heat source for 7 or 8 minutes until sugar just begins to brown and bubble. Garnish warm casserole with torn or chopped fresh mint leaves and serve.

2 cups sliced fresh strawberries
2 large fresh peaches, cut into cubes
2 large nectarines, cut into cubes
1 red Anjou pear, cut into cubes

¼ cup minced fresh mint (chocolate mint preferred)
½ lemon, zested
1 tablespoon honey (fireweed honey preferred)

  • Combine watermelon, strawberries, peaches, nectarines, pear, and grapes in a large mixing bowl.
  • Whisk lemon juice, mint, lemon zest, and honey together in a small bowl; drizzle over the fruit mixture and toss to coat.

The most beautiful ruby-red grapefruit is available in December; use it to make this jewel-like salad. In other seasons, the grapefruit will be smaller and you will need more.

4 ruby-red or pink grapefruit, peel and pith removed
5 navel or blood oranges, peel and pith removed
3 tablespoons sherry vinegar
1 tablespoon honey
Salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
1/4 cup canola oil
2 large heads radicchio, leaves separated
2 heads Belgian endive, leaves separated
1/4 small red onion, very thinly sliced

Steps:

  • Working over a bowl to catch the juices, use a paring knife to slice between the sections and membranes of each grapefruit; remove the segments whole. Place each segment in bowl as completed. Repeat process with oranges in same bowl. Transfer to refrigerator. Recipe may be made up to this point 1 hour ahead.
  • Make vinaigrette: In a small bowl, combine vinegar, honey, and salt and pepper to taste. Slowly whisk in olive oil, then canola oil, until mixture is well combined. Set vinaigrette aside.
  • Just before serving, arrange radicchio and endive leaves on a large serving platter. Arrange grapefruit and orange segments in the center of the platter. Scatter red-onion slices over the top. Drizzle the reserved vinaigrette over the salad, and serve.

Found another recipe for the use of all the citrus in our neighborhood. This is so refreshing, it is a perfect brunch salad to go with an egg dish or on it's own. You may want to pith the fruit the night before as it can be a little time consuming, but the fruit keeps well. I used the dried cranberries, because I had them on hand, but the pomegranate seeds are probably more colorful. Medical Alert: Grapefruit can interact negatively with some medications, check with your pharmacist or doctor.

2 white grapefruits
2 pink grapefruit
6 large navel oranges
1/4 cup dried cherries or 1/4 cup pomegranate seeds
1/2 cup fresh mint leaves
1/4 cup sugar

Steps:

  • Cut peel and white pith from grapefruits and oranges. Cut between membranes to release segments. Combine fruit in large shallow bowl. (Fruit can be segmented 1 day ahead. Cover and refrigerate.)
  • Place mint and sugar in processor or blender. Using on/off turns, blend until mint is finely chopped, occasionally scraping down sides of bowl.
  • Just before serving, sprinkle mint sugar and pomegranate seeds or dried cranberries/cherries over fruit; serve.

1 cup fresh tangerine pieces or 1 can (11 ounces) mandarin oranges, drained

1 mandarin orange (tangerine) - zested, peeled, and sectioned
1 navel orange, peeled and sectioned
1 grapefruit, peeled and sectioned
1 bulb shallots, diced
1 tablespoon lemon juice
1 tablespoon olive oil
½ teaspoon salt
1 head romaine lettuce, torn

Steps:

  • Place lime slices, tangerine sections, navel orange, and grapefruit in a bowl. In a separate bowl, mix the lime zest, mandarin orange zest, shallots, lemon juice, olive oil, and salt. Pour over the fruit. Arrange dressed fruit atop romaine lettuce to serve.
