1 1/2 cups frozen pineapple
1 1/2 cups ice
5 ounces (1/2 cup plus 2 tablespoons) aged rum
2 ounces (4 tablespoons) cream of coconut (not coconut cream; see notes*)
4 ounces (1/2 cup) pineapple juice
1 ounce (2 tablespoons) lime juice
For the garnish: cocktail cherry

Steps:

  • Blend pineapple and ice until chunky. Add the remaining ingredients and blend until smooth. Serve garnished with a cocktail cherry and drink umbrellas.

The original recipe calls for three simple ingredients: white rum, pineapple juice and cream of coconut. It can be made in two ways: either blended or shaken. Most prefer the blended version but if you want to be convenient, you can also choose the shaken version.

2 oz. Bacardi White Rum
3 oz. Coco Lopez Cream of Coconut
4 oz. Dole Pineapple Juice
Dole Frozen pineapples (optional)
2 cups Ice Cubes
Pineapple wedge and Luxardo cherry (for garnish)

Steps:

  • In a blender, pour in all the ingredients.
  • Add ice cubes. You can also swap out a couple of ice cubes with frozen pineapple chunks to enhance the flavor. Blend until smooth.
  • Pour mixture into a Poco Grande glass.
  • Garnish with a pineapple wedge and cherry. You can also put a tiny umbrella to add fancy effects.

1 can (20 ounces) crushed pineapple, undrained
1 package (3.4 ounces) instant vanilla pudding mix
1 teaspoon coconut rum or rum extract
2 cups miniature marshmallows
1 cup sweetened shredded coconut, toasted
1/2 cup finely chopped pistachios, toasted
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine pineapple, pudding mix and rum. Add marshmallows, coconut and pistachios. Fold in whipped topping. Chill until serving.
