CINNAMON WHITE CHOCOLATE COOKIES
White chocolate cookies with a hint of cinnamon.

Steps:
- Beat butter and shortening together with an electric mixer until creamy and smooth; gradually add white sugar and brown sugar, beating on medium speed, until incorporated. Beat in egg and vanilla extract.
- Combine flour, baking soda, and salt in a separate bowl; mix into butter mixture until incorporated. Fold in white chocolate and cinnamon. Refrigerate dough for 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
- Drop dough by the heaping tablespoonful onto the prepared baking sheet, leaving 3 inches between cookies.
- Bake in the preheated oven until cookies are lightly browned on the edges, 12 to 14 minutes. Cool on the pans for 10 minutes before removing to cool on a wire rack until cookies are firm.

- Whisk together flour, cinnamon, baking soda and salt. In a 1-qt. glass jar, layer flour mixture, chocolate chips, granulated sugar, brown sugar and white baking chips in order listed., To prepare cookies, preheat oven to 350°. Cream butter until light and fluffy. Beat in eggs and vanilla. Add cookie mixture; blend well. Drop dough by rounded tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake until edges begin to brown, 7-9 minutes. Cool on pans 1 minute before removing to wire racks to cool completely.

CHOCOLATE WHITE CHOCOLATE CINNAMON CHIP COOKIES
Steps:
- Cream butter and both sugars until light and fluffy; use paddle attachment. Add vanilla and cinnamon extract, then eggs one at a time and mix well. Add the cocoa and mix again. Sift together the flour, baking soda and salt and add to the butter mixture on low speed until just combined. Fold in both chips and pecans. Drop the dough on a baking sheet lined with silpat or parchment paper using a 1 3/4 " ice cream scoop. Dampen your hands and flatten slightly. Bake for exactly 15 mins. they will seem slightly underdone. Let cool slightly in pan then transfer to a wire rack to cool completely.
CINNAMON & WHITE CHOCOLATE COOKIES
This is a recipe I threw together when craving something sweet with cinnamon and white chocolate. My youngest daughter, who does not like anything I make, absolutely loves these! For the best results, it is important to only use margarine, not butter or Crisco.

- 1. Preheat oven to 375°
- 2. In a large bowl, combine flour, cream of tartar, baking soda, salt, and cinnamon. Set aside.
- 3. In a medium bowl cream together margarine and sugar. Add in egg whites, corn syrup, vanilla, and vegetable oil. Mix well.
- 4. Add sugar mixture to flour mixture and combine. Add in white chocolate chips. Dough will be stiff, but should stick together.
- 5. Scope heaping tablespoon, and roll into a ball. Place on greased cookie sheet about 2 inches apart.
- 6. Bake in preheated oven for about 7 -9 minutes. I pull my while still slightly raw in the middle. Place on cooling rack immediately!
