CRANBERRY, ALMOND, AND CINNAMON TART



Cranberry, Almond, and Cinnamon Tart image

A stunning fall tart with a towering frangipane filling is crowned with cranberry jewels.

Number Of Ingredients 13

1 1/2 cups (5 1/4 ounces) fresh cranberries
1/2 cup plus 1/3 cup granulated sugar, plus more for sprinkling
1 tablespoon water
All-purpose flour, for dusting
Pate Sucree for Cranberry, Almond, and Cinnamon Tart
1 large egg white, lightly beaten
8 ounces cranberry jam or preserves
10 tablespoons unsalted butter, room temperature
3 large eggs
1/2 teaspoon pure vanilla extract
6 ounces (about 1 1/4 cups) whole almonds, finely ground in a food processor
1 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Put fresh cranberries, 1/3 cup sugar, and the water into a saucepan over medium heat and cook, stirring to dissolve sugar, until cranberries have just softened, about 3 minutes. Remove from heat, and let cool completely.
  • On a lightly floured work surface, roll out dough to a 12-inch circle, 1/8 to 1/4 inch thick. Transfer to an 8-by-2-inch springform pan, pressing crust into bottom and up sides. Trim excess flush with rim. Refrigerate for 30 minutes.
  • Preheat oven to 350 degrees. Prick tart crust all over with a fork. Cut a 12-inch round of parchment, and place on top of chilled crust. Fill with pie weights or dried beans. Bake for 10 minutes. Remove weights and parchment, and brush crust lightly with egg white. Return to oven, and bake until pale golden, about 25 minutes. Refrigerate remaining egg white. Let crust cool in pan on a wire rack for 10 minutes.
  • Raise oven temperature to 375 degrees. Spread jam over bottom of tart crust.
  • Beat butter and remaining 1/2 cup sugar with a mixer on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Reduce speed to medium. Slowly add ground almonds, cinnamon, and salt, and beat until just combined. Spread mixture over jam-covered crust.
  • Bake tart until filling is set and has darkened slightly, 45 to 50 minutes. (If top darkens too quickly, cover loosely with foil.) Remove tart from oven, brush top with egg white, and sprinkle with sugar. Return to oven, and bake for 5 minutes more. Let cool on a wire rack for 15 minutes. Remove from pan, and top with candied cranberries. Serve warm.

3/4 teaspoon ground ginger
1/2 teaspoon ground nutmeg

1/2 cup cold butter, cubed
1/2 cup all-purpose flour, divided
4 large apples, peeled and finely chopped (about 6 cups)
1/4 cup packed brown sugar
1/4 cup raisins
CINNAMON CREAM:
1/2 cup heavy whipping cream
1 tablespoon maple syrup
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. Mix first four ingredients and 1 teaspoon cinnamon; cut in butter until crumbly. Remove 1 cup mixture to a small bowl; stir in 1/4 cup flour until blended. Reserve for topping., Press remaining crumb mixture onto bottom and up sides of an ungreased 9-in. tart pan. Bake until light brown, 8-10 minutes. Cool on a wire rack. Increase oven setting to 400°., In a large saucepan, combine apples and brown sugar; cook over medium heat until apples are tender, 7-9 minutes, stirring occasionally. Remove from heat; stir in 1/4 teaspoon cinnamon, raisins and remaining flour. Transfer to crust; sprinkle with topping. Bake until golden brown and filling is bubbly, 20-22 minutes. Place on a wire rack; cool at least 20 minutes., For cinnamon cream, beat cream until it begins to thicken. Add syrup and cinnamon; beat until soft peaks form. Serve with tart.

1 sheet refrigerated pie crust
2 tablespoons apple jelly

1 cup confectioners' sugar
1/4 teaspoon almond extract
1 to 2 tablespoons 2% milk

Steps:

  • For pecans:
  • Preheat oven to 350°F. Spray rimmed baking sheet with nonstick spray. Whisk all ingredients except pecans in medium bowl. Stir in pecans. Spread in single layer on sheet, rounded side up. Bake until just browned and dry, about 30 minutes. Cool on sheet. Separate nuts, removing excess coating. DO AHEAD Can be made 2 days ahead. Store airtight at room temperature.
  • For crust:
  • Preheat oven to 350°F. Blend first 4 ingredients in processor. Add melted butter; process until crumbs are moistened. Press crumbs into 9-inch-diameter tart pan with removable bottom, to within 1/8 inch of top. Bake until set, about 20 minutes. Cool on rack.
  • For filling:
  • Bring cream to simmer in medium saucepan. Remove from heat. Add chocolates; whisk until melted. Add butter, 1 piece at a time; whisk until smooth. Whisk in vanilla, cinnamon, and salt. Pour filling into crust. Chill until filling begins to set, about 15 to 20 minutes.

4 1/2 teaspoons granulated sugar
1/4 teaspoon salt
1 stick cold unsalted butter, cut into small pieces
1 large egg yolk
2 tablespoons ice water

Steps:

  • Pulse flour, sugar, and salt in a food processor until combined. Add butter, and process until mixture resembles coarse meal, about 10 seconds.
  • Lightly beat yolk with ice water. With processor running, add yolk mixture in a slow, steady stream through the feed tube, and process until dough just holds together (no longer than 30 seconds).
  • Turn out onto a work surface, and shape into a disk. Wrap in plastic, and refrigerate for at least 1 hour (or up to 2 days).

The filling:
3 or 4 crisp apples, cored, peeled and thinly sliced
1 tablespoon of lemon juice
¼ cup of sugar mixed with 1 teaspoon of cinnamon
1 stick of butter, sliced
¼ cup of peach jam, heated and thinned with 1 tablespoon of water so it's spreadable.
The Crust:
1 ¼ cups of all purpose flour, sifted
1 stick of butter, cold- and sliced into about 10 pieces
2 tablespoons of sour cream
2 tablespoons of sugar

Steps:

  • Preheat oven to 375 degrees. Sprinkle apple slices with lemon juice. In a food processor, combine the flour, butter, sour cream and sugar, pulse until the mixture forms a ball (This should take about 1 minute) Remove and press into an ungreased 10 inch tart pan with a removable bottom. (if you don't have a food processor, you can cut through the pastry with a pastry knife or two table knives until you achieve the appropriate texture.) Bake the crust for 15 minutes, until set. Reduce oven to 350 degrees. Arrange apple slices on the crust, sprinkle with the cinnamon sugar and then scatter the butter pieces around the tart. Bake for 45 minutes. (Place tart on a cookie sheet to protect from spillovers or butter seepage.) When tart is done, brush with the preserves. It is best served warm with ice cream.

WARM CINNAMON-APPLE TART WITH CURRANTS

2 tablespoons fresh lemon juice
1 1/2 tablespoons unsalted butter
Dried currants

Steps:

  • Position oven rack in middle of oven and preheat to 400°F. Mix 2 tablespoons sugar and 1/2 teaspoon ground cinnamon in small bowl. Unfold thawed puff pastry on lightly floured baking sheet. Brush some of egg glaze over 1-inch border of pastry on all sides. Fold 1-inch border over to form raised edge on all sides; press edge to adhere. Using sharp knife, make 1/2-inch-long cuts all around pastry edge, spacing 1/2 inch apart. Pierce center of pastry (not edge) all over with fork. Spread 2 tablespoons apricot preserves over center of pastry. Arrange apple slices atop apricot preserves in 3 rows, overlapping apples and fitting tightly together. Brush pastry edge with some of egg glaze. Sprinkle cinnamon-sugar mixture over apples and pastry edge.
  • Bake tart until apples are tender and pastry is brown, about 30 minutes. Transfer tart to rack.
  • Meanwhile, mix remaining 1/4 teaspoon ground cinnamon, remaining 6 tablespoons apricot preserves, 2 tablespoons fresh lemon juice and 1 1/2 tablespoons unsalted butter in small sauce-pan. Stir apricot sauce over medium heat until melted and hot.
  • Lightly dab some of apricot sauce over apples. Sprinkle with dried currants. Cut warm tart into 4 squares. Top each square with scoop of vanilla ice cream. Drizzle remaining apricot sauce over ice cream and serve.

SHORTBREAD PLUM TART WITH HONEY AND CINNAMON



Shortbread Plum Tart With Honey and Cinnamon image

Based on a classic gâteau Breton, this buttery tart is filled with a fresh plum compote flavored with honey, rosemary and cinnamon instead of the usual puréed prunes. You can make the compote and dough a few days ahead, but this tart is best served within 24 hours of baking. After that, the center starts to turn mushy from the moisture released by the fruit. Serve it on its own, or with a dollop of whipped cream.

1 cup/200 grams plus 1 to 3 tablespoons granulated sugar
2 1/3 cups/290 grams all-purpose flour
3/4 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
8 ounces/225 grams unsalted butter (2 sticks), diced, plus more for greasing pan
1 large egg
5 large egg yolks
4 large plums, halved, pitted, and sliced 1/4-inch thick (about 2 1/4 cups)
2 tablespoons full-flavored honey such as wildflower
1 cinnamon stick
1 small sprig rosemary (optional)

Steps:

  • In a food processor, process 1 cup sugar until powdery and fine, about 1 minute. Add flour, cinnamon and salt; pulse to combine. Add butter and pulse until mixture resembles bread crumbs. Add egg and 4 egg yolks, and pulse until mixture comes together. Divide dough in half, form into disks, and wrap in plastic wrap. Chill at least 2 hours or until firm.
  • In a small saucepan, combine plums, 1 to 3 tablespoons sugar (this depends on how sweet your plums are), cinnamon, honey and rosemary sprig, if using. Simmer until jammy and thick, 15 to 20 minutes, stirring occasionally. Transfer plum mixture to a bowl to cool, and remove cinnamon stick and rosemary sprig. Taste and stir in more sugar if mixture seems very tart.
  • Heat oven to 350 degrees. Grease an 8-inch springform pan and place it on a rimmed baking sheet to catch any butter leaks.
  • Between two sheets of parchment paper or plastic wrap, roll one of the dough halves into an 8-inch circle. Transfer dough to prepared cake pan, pressing into edges. Spoon plum compote on top of dough, leaving 3/4-inch border around edge.
  • Roll second piece of dough into an 8-inch circle, transfer to pan, press around outside edge to stick the pieces together and seal in fruit.
  • In a small bowl, combine remaining egg yolk with 1 teaspoon water and beat lightly. Brush over top of cake, then use a fork to score a crisscross pattern into the dough. Bake until golden brown, 1 hour (cover with foil if cake is browning too quickly). Cool in pan for 15 minutes, then run a butter knife around the inside edge of the pan and unmold from ring. Cool completely and serve.

1 recipe - 6 cinnamon-brown sugar toaster pastries (e.g. Pop-Tarts)
3/4 cup (divided) brown sugar
4 teaspoons (divided) ground cinnamon
5 tablespoons unsalted butter, melted
1/2 cup unsalted butter, softened
1/2 cup white sugar
1 recipe - 1 egg, separated
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
5 tablespoons all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 teaspoon milk
1 1/2 teaspoons white vinegar
1 cup (or as needed) cream cheese frosting

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8-inch square pan.
  • Crumble 4 toaster pastries into a bowl and mix in melted butter. Press into the prepared pan creating a crust.
  • Combine 1/4 cup brown sugar, 1 tablespoon flour, 1 teaspoon cinnamon, and 1 teaspoon milk in a bowl. Spread over crust.
  • Beat 1/2 cup brown sugar, softened butter, and white sugar together in a bowl; add egg yolk and vanilla extract and mix well. Combine 1 cup flour, baking powder, and salt in a separate bowl. Whisk 3/4 cup milk and vinegar together in a separate bowl.
  • Mix flour mixture, alternating with milk-vinegar mixture, into butter mixture until batter is well mixed. Fold egg whites into batter. Crumble 1 toaster pastry over batter and fold. Pour batter over the crust.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 45 to 50 minutes. Cool cake completely, at least 1 hour.
  • Spread frosting onto cold cake and crumble 1 toaster pastry over frosting.

1 tablespoon sugar
5 tablespoons unsalted butter, melted
1 cup heavy whipping cream
2 large eggs, room temperature

1-1/4 cups canned pumpkin
1/3 cup packed light brown sugar
3 tablespoons sugar
1/2 teaspoon kosher salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon

2 ounces dark baking chocolate, melted
1-1/2 cups heavy whipping cream
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • For the crust, place wafers and sugar in a food processor; process until finely ground. Add melted butter; process until combined. Press crumbs onto bottom and up side of an ungreased 9-in. tart pan. Freeze for 30 minutes., Preheat oven to 350°. Bake crust until dry, 8-10 minutes, rotating once halfway through baking. Cool on a wire rack., Meanwhile, for the filling, in a large bowl, whisk cream, eggs and vanilla until combined. In a medium saucepan, combine pumpkin, sugars, salt and spices. Cook and stir with a wooden spoon over medium heat until bubbly. Cook and stir 5 minutes longer., Whisk a small amount of hot mixture into egg mixture; return all to pan, whisking constantly. Remove from heat; pour into prepared crust. Place tart pan on a rimmed baking sheet. Bake until center is just set and top appears dull, 30-35 minutes. Cool completely on a wire rack. Refrigerate, covered, at least 4 hours or overnight., Drizzle melted chocolate over tart; let stand until set. For the whipped cream, in a large bowl, beat cream, confectioners' sugar, vanilla and cinnamon until soft peaks form. Serve with tart.

200g plain flour , plus extra for dusting
2 tsp cinnamon
140g cold butter , cut into small chunks
85g light muscovado sugar
1 egg , separated
1 tbsp polenta
700g apricot , halved and stoned
1 tbsp demerara sugar

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the flour and cinnamon in a food processor, then add the butter. Process to make fine crumbs. Reserve 2 tbsp of the sugar, then add the remainder and briefly mix. Add the egg yolk and 1 tbsp water, then pulse to make a firm dough. Turn out onto a lightly floured surface and briefly knead. Wrap in cling film and chill for 30 mins.
  • Toss apricots in the reserved sugar. Roll out pastry on a sheet of baking parchment to a roughly 30cm round. Slide the paper and pastry onto a large baking sheet. Sprinkle the central 20cm with the polenta, then cover with apricot halves, cut sides up. Flop edges of the pastry over the apricots, leaving the centre uncovered. Lightly beat egg white and brush over the pastry. Sprinkle with remaining sugar, then bake for 30-35 mins until the pastry is crisp and the apricots tender.

CRANBERRY, ALMOND, AND CINNAMON TART



Cranberry, Almond, and Cinnamon Tart image

This stunning fall tart with towering almond filling is crowned with cranberry jewels.

1.5 fresh cranberries
1/2 granulated sugar
1/3 granulated sugar
1 water
All-purpose flour, for dusting
Pate Sucree
1 egg white
8 cranberry jam or preserves
10 unsalted butter
3 eggs
1/2 pure vanilla extract
6 whole almonds (1 1/4 cups)
1 ground cinnamon
1/4 salt

Steps:

  • Put fresh cranberries, 1/3 cup sugar, and the water into a saucepan over medium heat and cook, stirring to dissolve sugar, until cranberries have just softened, about 3 minutes. Remove from heat, and let cool completely.
  • On a lightly floured work surface, roll out dough to a 12-inch circle, 1/8 to 1/4 inch thick. Transfer to an 8-by-2-inch springform pan, pressing crust into bottom and up sides. Trim excess flush with rim. Refrigerate for 30 minutes.
  • Preheat oven to 350 degrees F. Prick tart crust all over with a fork. Cut a 12-inch round of parchment, and place on top of chilled crust. Fill with pie weights or dried beans. Bake for 10 minutes. Remove weights and parchment, and brush crust lightly with egg white. Return to oven, and bake until pale golden, about 25 minutes. Refrigerate remaining egg white. Let crust cool in pan on a wire rack for 10 minutes.
  • Raise oven temperature to 375 degrees F. Spread jam over bottom of tart crust.
  • Beat butter and remaining 1/2 cup sugar with a mixer on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Reduce speed to medium. Slowly add ground almonds, cinnamon, and salt, and beat until just combined. Spread mixture over jam-covered crust.
  • Bake tart until filling is set and has darkened slightly, 45 to 50 minutes. (If top darkens too quickly, cover loosely with foil.) Remove tart from oven, brush top with egg white, and sprinkle with sugar. Return to oven, and bake for 5 minutes more. Let cool on a wire rack for 15 minutes. Remove from pan, and top with candied cranberries. Serve warm.

For the Dough
6-3/4 oz. (1-1/2 cups) unbleached all-purpose flour
2 tsp. granulated sugar
1/2 tsp. table salt
5-1/2 oz. (11 Tbs.) cold, unsalted butter
1 large egg yolk
3 Tbs. whole milk
For the Filling
4 cups peeled, thinly sliced apples
1 tsp. pure vanilla extract
1/2 tsp. ground cinnamon
1 Tbs. all-purpose flour
Big pinch table salt
1 large egg, beaten well
2 Tbs. turbinado sugar

Steps:

  • Combine the flour, sugar, and salt in a stand mixer fitted with a paddle attachment (or if mixing by hand, in a medium bowl). Cut the butter into 1/2-inch cubes and add them to the flour. On low speed, mix the butter and flour until the flour is no longer white and holds together when you clump it with your fingers, 1 to 2 minutes. If there are still lumps of butter larger than the size of peas, break them up with your fingers. Run a spatula along the bottom of the bowl to loosen anything stuck to the bowl. (If mixing by hand, mix with a pastry cutter or two forks until the butter is mixed into the flour as above). In a small bowl, mix the egg yolk and milk and add them to the flour mixture. On low speed, mix until the dough just comes together, about 15 seconds; the dough will be somewhat soft. Dump the dough onto a clean counter and work it with the heel of your hand, Turn the dough out onto a sheet of plastic wrap, press it into a flat disk, wrap it in the plastic, and let it rest in the refrigerator for 15 to 20 minutes (or up to four days). heat the oven to 350*F. Line a heavy-duty rimmed baking sheet with parchment. On a floured surface, roll the dough into a round that's about 13 to 14 inches in diameter. Transfer the dough round to the baking Assemble and Bake the Tart Put the apples in a large bowl. Toss the fruit with the 1/4 cup granulated sugar. Add the flour, vanilla extract, cinnamon, and salt and toss until everything is evenly mixed. Remove the dough from the refrigerator and let it sit at room temperature for about 5 minutes to keep it from cracking. Heap the apple mixture in the center of the dough round. Fold the edges of the dough over some of the apples to create a rim about 2 inches wide. Using a pastry brush, brushevenly with the beaten egg. Sprinkle the turbinado sugar. Bake the tart until the pleats of dough are completely golden brown without a trace of pale, unbaked dough, about 55 minutes.

  • Preheat oven to 325°. In a small bowl, mix crushed cookies and butter. Press mixture onto bottom and up sides of an ungreased 9-in. fluted tart pan with removable bottom. Bake 7-9 minutes or until edges are lightly browned. Cool on a wire rack., In a small saucepan over medium-low heat, melt peanut butter chips and peanut butter with caramel topping and cinnamon; stir until smooth. 1 cup Gold Medal™ all-purpose flour
2 tablespoons sugar
1 cup slivered almonds
1/2 cup butter or margarine, softened
1 egg
1/2 cup sugar
1 teaspoon ground cinnamon
1 tablespoon corn syrup
1/8 teaspoon almond extract
3 eggs
3 oz semisweet baking chocolate, melted, cooled
6 tablespoons butter or margarine, melted
Whipped cream
Additional ground cinnamon

Steps:

  • Heat oven to 350°F. In food processor or blender, place flour, 2 tablespoons sugar and the almonds. Cover; process until almonds are finely chopped. Add 1/2 cup butter and egg. Cover; process until well blended. Press mixture in bottom and 1/2 inch up side of ungreased 9-inch tart pan with removable bottom.
  • Bake 20 to 25 minutes or until light brown. If crust puffs while baking, poke with fork.
  • Meanwhile, in medium bowl, beat 1/2 cup sugar, 1 teaspoon cinnamon, the corn syrup, almond extract and 3 eggs with wire whisk until smooth. Stir in chocolate and 6 tablespoons butter.
  • Pour filling into hot crust. Bake 18 to 24 minutes or until almost set in center. Cool on cooling rack at least 30 minutes before serving.
  • Remove side of pan. Serve tart topped with whipped cream; sprinkle with additional cinnamon. Store covered in refrigerator.

2 tablespoons sugar
1/2 cup butter, melted, divided in half
1 (12 ounce) bag semi-sweet chocolate chips
2/3 cup light cream (half and half)
1/2 teaspoon ground cinnamon
1 pint berries (raspberries, cranberries, etc. or mix)

Steps:

  • Pulse the crackers and sugar in a food processor or blender until mixed, about 1 minute.
  • Add 1/4 cup butter.
  • Press mixture into a greased 9" tart pan that has a removable bottom.
  • Freeze for 20 to 30 minutes.
  • Combine chocolate and remaining butter in a bowl.
  • Bring the cream and cinnamon to a boil before pouring over the chocolate.
  • Let sit for a minute before stirring.
  • Spread ganache in the crust.
  • Top with berries.
