Cinnamon Maple Butternut Squash Bread image

This simple butternut squash bread is healthy & baked to perfection! It's low in sugar & high in fiber, a seriously delicious squash bread.

Number Of Ingredients 11

2 cups whole wheat pastry flour
1 tbsp cinnamon
1 tsp baking powder
1 tsp baking soda
½ tsp nutmeg
½ tsp salt
1½ cups butternut squash (pureed)
2 eggs
¼ cup apple sauce
¼ cup maple syrup
1 tsp maple extract ((optional))

Steps:

  • Preheat oven to 350°.
  • In a large bowl, mix together all dry ingredients. In a seperate bowl, mix together all the wet ingredients.
  • Pour wet ingredients into the bowl with the dry ingredients and mix until just combined. Do not overmix.
  • Grease a loaf pan, and pour bread batter into the pan. Bake for 65-70 minutes, until toothpick inserted in the middle comes out clean. If the bread is browning too quickly, cover for the last 10-15 minutes of baking.

2 - eggs
1 cup(s) vegetable oil
2 cup(s) sugar
2 cup(s) squash, peeled and grated (a great way to use any end-of-season, immature squash)
2 teaspoon(s) vanilla
3 cup(s) flour
3 teaspoon(s) baking powder
1 teaspoon(s) salt
1 1/2 teaspoon(s) cinnamon
1/2 cup(s) chopped nuts

Steps:

  • Preheat oven to 325 degrees. Grease and flour two 8.5 by 4.5 inch loaf pans. In a large mixing bowl, beat the eggs well. Add the oil, sugar, grated squash and vanilla. Cream together. In a separate bowl, sift together the flour, baking powder, salt and cinnamon. Add to the creamed mixture and beat until well blended. Fold in the nuts. Bake at 325 degrees for 1 hour or until a toothpick inserted in the center comes out mostly clean and the bread has risen. This bread freezes nicely.

This is a good way to use butternut squash. It has the aroma and flavors of a pumpkin bread. A great bread for Thanksgiving time.

2 ⅔ cups white sugar
⅔ cup shortening
2 cups pureed cooked butternut squash
4 eggs
⅔ cup water
3 ⅓ cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 ½ teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
⅔ cup chopped walnuts
⅔ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  • Beat sugar and shortening together in a bowl until fluffy. Stir butternut squash, eggs, and water into sugar mixture.
  • Mix flour, baking soda, baking powder, salt, cinnamon, and cloves in another bowl; stir into sugar mixture. Add nuts and raisins; stir until batter is just blended. Pour batter into prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 15 minutes before removing to cool completely on a wire rack.

3 c sugar
1 c vegetable oil
4 eggs
3 1/3 c all-purpose flour
2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2/3 c water
2 c cooked, mashed squash*

Steps:

  • 1. Grease 2 loaf pans. Preheat oven to 350.
  • 2. In a large bowl, beat together sugar and oil. Add eggs and beat well.
  • 3. In a separate bowl, mix together flour, baking soda, salt, cinnamon, and nutmeg.
  • 4. Add flour mixture and water alternately to the sugar mixture, beating on low speed after each addition until just combined.
  • 5. Beat in mashed squash. *Any winter squash will work - acorn, butternut squash, buttercup squash, hubbard squash, or calabaza. You can even use a 15 oz can of pumpkin, if desired.
  • 6. Spoon batter into prepared pans.
  • 7. Bake at 350 for 55-65 minutes until a toothpick inserted near the center comes out clean.
  • 8. Cool pans on wire racks for 10 minutes.
  • 9. Remove from pans. Cool completely on wire racks.
