This is the best Cinnamon Raisin Bread I've ever had! It really has a great consistency and smells WONDERFUL while baking. I made this for the first time about a year ago and since it makes 3 loaves, I gave one to my neighbor. Now she asks for it constantly and since it is so fun to make, I oblige her, plus I get to keep the other 2 loaves!

Number Of Ingredients 13

1 1/2 cups milk
1 cup warm water (must be between 110-115 degrees)
2 (1/4 ounce) packages active dry yeast
3 eggs
1/2 cup white sugar
1 teaspoon salt
1/2 cup unsalted butter, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
1 cup white sugar
3 tablespoons ground cinnamon
2 tablespoons butter, melted (approx.)

Steps:

  • Warm the milk in a small sauce pan on the stove until it just starts to bubble, stirring occasionally.
  • Remove from heat.
  • Let cool until lukewarm, about 120-125 degrees.
  • Dissolve yeast in warm water and set aside until yeast is frothy, about 10 minutes or so (make sure your water is at the correct temperature or the yeast won't activate.) Then mix in eggs, sugar, butter salt and raisins (stir in the cooled milk slowly so you don't cook the eggs.) Add the flour gradually to make a stiff dough.
  • Knead the dough on a lightly floured surface for a few minutes until smooth.
  • Place in a large, buttered, mixing bowl and turn to grease the surface of the dough.
  • Cover with a warm, damp cloth and let rise (I like to let my bread rise in the oven with the light on. It has just the right amount of heat and keeps the bread out of drafts.) Allow to rise until doubled, usually about 1 1/2 hours.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick.
  • Moisten the dough with 2 tablespoons milk and rub all over the dough with your hands.
  • Mix together 1 cup of sugar and 3 tablespoons cinnamon and sprinkle mixture evenly on top of the moistened dough.
  • Roll up tightly (the long way).
  • The roll should be about 3 inches in diameter.
  • Cut into thirds, and tuck under ends and pinch bottom together.
  • Place loaves into well greased (you can use Crisco or butter for this) 9 x 5 inch pans and lightly grease tops of loaves.
  • Let rise in warm place, uncovered, again for about an hour.
  • Bake at 350 degrees for 45 minutes or until loaves are lightly browned and sound hollow when tapped.
  • Remove from oven and let cool on rack.
  • Take melted butter and spread over tops of loaves.
  • After about 20 minutes, lay loaves on their sides and remove from pans.
  • Allow to cool before slicing.

1 large egg, room temperature plus
1/4 cup milk
3/4 cup water
1/4 cup softened butter
1/3 cup sugar
1 teaspoon salt
3 1/2 cups bread flour
2 teaspoons active dry yeast
1/2 cup raisins
1/3 cup butter, melted and cooled
1/3 cup sugar
3 teaspoons cinnamon
1 egg white
1 1/2 teaspoons sugar

Steps:

  • Put milk and egg into measuring cup.
  • Add enough tepid water to make 1 cup.
  • Pour into bread machine pan.
  • Add the softened butter, 1/3 cup sugar, salt, bread flour and yeast.
  • Set bread machine to dough cycle.
  • Add raisins at the beep.
  • Remove the dough at the end of the dough cycle.
  • Roll dough to 10x12 rectangle.
  • Brush egg white on surface of dough.
  • Brush with melted butter.
  • Combine cinnamon and sugar.
  • Sprinkle over dough; leaving about 1 inch on each edge.
  • Roll from short side.
  • Pinch where it meets and roll ends under.
  • Place in loaf pan.
  • Cover with cloth and let rise for about an hour.
  • Preheat oven to 350 degrees.
  • Once the dough has risen, brush top with egg white and sprinkle with 1 1/2 teaspoon sugar.
  • Bake at 350 for about 35 minutes.

This is the nicest spicy fruit loaf I ever made. It is wonderfully moist and really scrumptious! (I make a fruit loaf of one sort or another every other day, and change things a bit from time to time. This is my absolute favourite combination). A note regarding my ingredients - my dried raisins and peel are really quite dry so I increase the water to about 244g (about an extra 3/4 tsp). This means I deliberately make it with the dough looking like it's way too wet during kneading, but the very dry fruit soaks up the excess water. My loaves work out fine despite looking over-moist to start with. I've found through experience that for any bread that will have dried ingredients added late in the kneading process it can be necessary to adjust the water quantity subtly according to how dried the fruit/grains etc are. I use part margarine part butter to reduce fat content slightly. No reason really not to use all butter instead. Butter is nicer :) Makes a loaf of approx 1 1/2 lbs.

240 ml water (at Room Temperature)
350 g white bread flour
1/4 teaspoon vitamin C powder (a flour improver, required if using the wheat bran)
5 g salt (1 TSP, I use 'Lo-Salt')
8 g firm margarine
5 g butter
13 g nonfat dry milk powder (1 1/2 TBLSP approx.)
4 g wheat bran (2 TSP, very heaped)
18 g demerara sugar (1 TBLSP, Brown sugar, basically)
3 1/4 g bread machine yeast
100 g dried seedless raisins
16 g dried mixed citrus peels (2 TSP Heaped)
4 g ground cinnamon (1 TSP heaped)
1 dash nutmeg, to taste (freshly grated)
1 pinch ground cardamom, next to nothing
40 g apples (peeled & chopped into 1/3 inch chunks)
4 g ground cinnamon, mixed with the apple (1 TSP heaped)

Steps:

  • Remove pan from bread machine and place on electronic scales and zero them.
  • Pour in the water (240ml water weighs 240 grams) and weigh in the rest of the dough ingredients in order.
  • Replace the pan in the bread machine and start machine on a raisin or equivalent 'speciality' setting. I prefer 'normal' crust for this.
  • In small bowl weigh the raisins and dried mixed citrus peel. Add the spices and mix together.
  • Into a second small bowl, peel about 1/3 of an average size eating apple (I usually have Braeburn apples handy but pretty much any apple is fine except the tasteless ones like Golden Delicious and Gala). Chop into small chunks somewhere between roughly 1/4 and 1/3 inch in size. Once in the bowl, sprinkle with another teaspoon of ground cinnamon and stir with spoon to cover the bits well (to take the moistness off the sides of apple bits so they mix in better).
  • Add dried fruit & spice mix at 4 minutes before end of final kneading or at the beep if you trust your machine not to mash the fruit like mine always does. (My LG machine beeps nine minutes before end of final kneading which is far too soon - it can reduce dried fruit to the size of grains of sugar during that time!).
  • If you trust your machine not to mash the apple then you could maybe add it a minute or so before kneading finishes. I don't trust mine in the slightest so here's what I do --
  • Wash hands in very cold water and dry well just before the final kneading completes then --.
  • -- when kneading has completed, quickly add the chopped apple and quickly mix it well by hand. (Shouldn't need to remove pan from bread machine to do this (unless it's in an awkward place! :).
  • Slightly more stuff to do for this loaf than usual, but it's absolutely worth it!

They're more like small, flatbreads, and I slice them in half, toast them, and spread them with peanut butter, honey, or jam. Yum! They're not very sweet, as there isn't much sugar in them.

  • 1. Place ingredients except apples and raisins in bread machine in order that your machine specifies.
  • 2. Set to "dough" setting and allow to complete cycle, adding the apples and raisins when your machine alerts you to add nuts/fruit. I actually have found that kneading these in by hand is actually easier, as they're a bit finicky to get worked through the dough.
  • 3. Separate into 10 balls. Press each ball into a 4" round with your hands - you'll likely need to stuff some raisins and apples back in - it's worth it. Place on nonstick cookie sheets and allow to rise for 30 minutes.
  • 4. Preheat oven to 500. Flip rounds, then place in oven for 5 minutes, flip again; turn oven down to 350 and bake for 15-20 minutes longer, until cooked through.
  • 5. Remove from pan onto clean towel and cover while cooling.

1/2 cup raisins, presoaked
1 tablespoon cinnamon
1 tablespoon sugar
1 1/4 cups lukewarm water
3 cups white bread flour
3 1/3 tablespoons brown sugar
1 teaspoon salt
2 1/2 teaspoons fast rise yeast or 3 1/4 teaspoons active dry yeast
1 egg
1 tablespoon water

Steps:

  • Soak the raisins in warm water for 10 minutes.
  • Drain and pat dry.
  • Toss with cinnamon and sugar, then place in machine with other ingredients.
  • Remove dough from the machine after the first knead- approximately 20- 30 minutes.
  • Place dough on floured surface.
  • Divide into 8 parts.
  • Form balls, gently press thumb through center of ball and slowly stretch into bagel shape.
  • While bagels rise, bring 3 quarts water and 1 TBS sugar to a rapid boil in a large sauce pan.
  • Drop test dough (see first success hint).
  • Using slotted spoon, drop 2-3 bagels into rapidly boiling water.
  • Boil on each side for 1 1/2 minutes.
  • Remove and cool on rack 1 minute, brush with egg wash.
  • Bake at 400°F on a baking sheet sprinkled with cornmeal, until golden brown- approximately 15 minutes.
  • Bagel Success Hints: When forming bagels, set aside two 1/4" balls of dough.
  • When bagels have doubled in size, drop the test dough into boiling water.
  • Dough should pop to the top right away.
  • When this happens, it is time to boil the bagels.
  • A quick spray of non-stick vegetable coating on the top of the bagel may be substituted for the egg wash.
  • To make bagel chips, slice leftover bagels horizontally into thin slices.
  • Brush with butter or margarine on one side.
  • Lay (butter side up) on ungreased cookie sheet and bake at 325°F for 12-15 minutes or until golden brown and crisp.

1 Tbsp cinnamon, ground
3 c bread flour
1 c rasins
1 c milk, 90 * (milk of your choice)
3 Tbsp butter
1 Tbsp brown sugar
1 large egg (sligthly beaten)

Steps:

  • 1. Follow instructions for your bread machine, mine says to put all liquids in first then add dry ingredient's.
  • 2. Heat milk to 90* and add your beaten egg. place bread flour, on top of milk and egg, make a dwell (small hole) in your flour and place yeast in the dwell , place butter in one corner and sugar in an other corner, salt in the third corner
  • 3. set bread machine to your desired settings, I like Medium crust, quick bread. Most machine will beep when its time to put in ingredients, this is where you will add the cinnamon and raisins. let the machine do its job and you will have a perfect loaf of bread :)

3/4 cup water (80 degrees F)
1 tablespoon vegetable oil
1 1/2 tablespoons sugar
1 teaspoon salt

1/2 cup oatmeal (either quick or regular)
2 cups bread flour
1 3/4 teaspoons active dry yeast
3/4 teaspoon cinnamon
1/3 cup raisins
1/3 cup chopped walnuts (pecans work as well)

Steps:

  • Place ingredients EXCEPT FOR THE CINNAMON, RAISINS AND WALNUTS in the bread machine in the order your ABM recommends (mine recommends adding them in the order I have the ingredients written with water on the bottom and the yeast on the top, however I have been told that other ABM's recommend the dry ingredients first followed by the wet).
  • Close lid and turn bread machine on. . . use the "sweet bread" setting and the "light crust" setting.
  • When the bread machine beeps, add the cinnamon, raisins and walnuts. Close lid and let the bread machine continue cooking the bread.

1 c water
3 Tbsp butter
3 c flour
3 Tbsp sugar
1 1/2 tsp salt
1 Tbsp cinnamon
2 tsp vegetable oil
1 pkg yeast + 1/2 teaspoon more (i used quick rise)
3/4 c raisins
1/2 c corn syrup (i used light)

Steps:

  • 1. Add all the ingredients in order given EXCEPT the oil, raisins and cinnamon. I sprayed my pan with non-stick spray because my pan has a habit of sticking.
  • 2. Mix the oil and cinnamon very well.
  • 3. Add the cinnamon mixture and the raisins AFTER the second kneading in the machine. I did not add the ingredients after the "add in" beep. I waited until after the second knead. The third knead mixed it nicely and it had a nice swirl of cinnamon in it.
  • 4. Bake on the "Sweet Bread" setting.

This is another of our breakfast favorites with reasonable sugar and low fat. It was adapted from Elswet's mother's Tried and True's. We use Altern [Walmart Brand] sweetener and plain [non-instant and non-quick] oatmeal. I'm so sorry people seem to be having bad experiences with this recipe. We use it all the time and love it. :] PLEASE NOTE: There is NOTHING wrong with this recipe! I make it all the time, and just made it again, using these directions. The recipe calls for 1 1/4 cups warm water PLUS 1 tablespoon warm water. Apparently, people are missing the 1 1/4 cups warm water, and only using 1 tablespoon, so DUH it won't work that way!

  • 2. Select Sweet or Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan and cool on wire rack.

CINNAMON RAISIN BREAD STICKS/BREAD MACHINE



Cinnamon Raisin Bread Sticks/Bread Machine image

These really hit spot when you want something a little sweet, but not too sweet. The thinner you make them, the crisper they are.

Number Of Ingredients 9

1 cup(s) milk
2 tablespoon(s) water
1 tablespoon(s) oil
3/4 teaspoon(s) salt
2 tablespoon(s) brown sugar
3 cup(s) bread flour
1 teaspoon(s) cinnamon - mix the cinnamon with the flour
1 tablespoon(s) active dry yeast or 1 packet
1/2 cup(s) raisins

Steps:

  • Preheat oven to 475 degrees. Mix the cinnamon into the bread flour.
  • Add milk, water, oil, salt and brown sugar into the bread machine. Then add the flour-cinnamon mixture. Lastly add the yeast. (Or add according to your bread machine directions.)
  • Set on dough setting and start machine.
  • When the machine has done it's magic, take dough out and punch down. Let rest 10 minutes.
  • Roll out into a 12" x 8" rectangle. Sprinkle raisins on one half of the dough and gently press in. Fold in half and gently roll and stretch dough back out into a 12" x 8" rectangle. Note: Some bread machines will beep when it is time to add things like raisin to the dough.
  • Cut into 10 8-strips. Then pull or gently roll - using your hands, into 12-14" strips. Note: If you want a crisper bread stick, cut into 12 pieces and stretch into 14-16" strips.
  • Place on 2 baking sheets that have been lined with parchment paper.
  • Bake at 475 degrees for 4 minutes, remove from oven. Reduce oven temperature to 350 degrees.
  • Allow oven to cool to 350 degrees- this takes several minutes depending on your oven. Just before returning bread sticks to oven, brush them lightly with water. (For a sweeter bread stick, sprinkle with raw sugar granules.) Return to 350 degrees oven and bake 20-25 minutes. Cool on rack. Drizzle with a glaze made from powdered sugar and a little water.
  • Note: For an even crispier bread stick, bake in the top half of the oven.

I changed the recipe from a bread machine recipe book I have to make it a little healthier and taste a little better for the kids. This makes one EXTRA LARGE loaf. This bread is GREAT with honey, or toasted and add peanut butter, or for peanut butter and jelly sandwich. Also, makes a good dessert when toasted, buttered, and sprinkled with cinnamon and sugar! Try this sometime for breakfast when you are making french toast!!! :) Mmmmmmm....

1 1/3 cups warm water
1 teaspoon vanilla
1 tablespoon cinnamon
1/3 cup Splenda sugar substitute
2 tablespoons canola oil
1 cup whole wheat flour
3 cups unbleached bread flour
3 tablespoons nonfat dry milk powder
2 tablespoons sugar
2 teaspoons salt
3 teaspoons yeast
1 1/2 cups raisins (approximately)
2/3 cup bread flour (approximately)

Steps:

  • In a small sauce pan bring about 3/4 cup water to a boil.
  • Add 1 cup of raisins to the boiling water and remove from heat.
  • Give the raisins and water a stir and then set them aside until they are room temperature.
  • Add all ingredients except for raisins to your bread machine in the order specified by the manufacturer. My machine calls for wet ingredients first, but I had another that called for dry ingredients first.
  • Set your bread machine for the appropriate size loaf on the wheat setting. Begin cycle.
  • Drain the room temperature rehydrated raisins and measure them, add enough dried raisins to make 2 cups total if you are making the extra large loaf.
  • When your bread machine has a good ball of dough circulating for a while, dump in your raisins. Watch carefully and add flour as needed until a good ball of dough is once again circulating.
  • When your bread is finished baking let it cool completely before slicing.
