BUTTERY CINNAMON CAKE

This cake is the best cinnamon cake I have ever made. Every time I serve it, the compliments never end. Serve it warm, about 45 minutes out of the oven, for an even greater pleasure.

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
¾ teaspoon salt
⅔ cup shortening
1 ⅓ cups white sugar
1 ½ teaspoons vanilla extract
3 eggs
⅔ cup milk
½ cup white sugar
6 tablespoons butter
⅓ cup water
1 teaspoon vanilla extract
¾ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and lightly flour a 10 inch Bundt pan. Stir together the flour, baking powder, 1 teaspoon ground cinnamon and salt; set aside.
  • In a large bowl, beat shortening, 1 1/3 cups white sugar and 1 1/2 teaspoon vanilla until light and fluffy. Add eggs one at a time, beating for at least 1 minute after each egg. Beat in the flour mixture alternately with the milk. Pour batter into prepared pan.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack. Remove cake from pan while it is still warm, and poke holes around the top of the cake with a fork. Pour the warm cinnamon syrup into the holes and onto the top and sides of the cake.
  • To Make Cinnamon Syrup: In a saucepan, combine 1/2 cup white sugar, butter, water, 1 teaspoon vanilla and 3/4 teaspoons ground cinnamon. Heat and stir until butter melts.

3 cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon kosher salt
1 ½ cups Challenge Unsalted Butter, room temperature
1 cup granulated sugar
⅔ cup lightly packed light brown sugar
3 large eggs
1 ½ cups sour cream
2 teaspoons vanilla extract
⅔ cup all-purpose flour
1 cup lightly packed light brown sugar
1 tablespoon ground cinnamon
5 tablespoons Challenge Unsalted Butter, melted
½ cup powdered sugar
1 tablespoon Challenge Unsalted Butter, melted
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13-inch pan and set aside.
  • Prepare the Batter - In a large bowl whisk together the flour, baking powder and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl with an electric mixer, beat the butter and sugars on medium speed until light and fluffy; about 5 minutes.
  • Add in eggs one at a time, scraping down the bowl as necessary. The batter will appear to be a bit curdled, but it will come together once fully mixed.
  • Add in the sour cream and vanilla extract and mix until evenly incorporated.
  • Gradually add in the flour mixture and mix on low speed until combined; scraping down the sides of the bowl as needed.
  • Prepare the filling and topping - In a medium mixing bowl, use a fork to combine the flour, brown sugar, cinnamon and melted butter. You'll want this to be slightly clumpy for those yummy pieces of crumbs. Set aside.
  • Evenly spread half the batter into the prepared pan. Sprinkle half of the filling/topping mixture over the batter. Top with remaining batter and spread evenly. Finish with the remaining filling/topping mixture.
  • Bake in preheated oven for 45-50 minutes. Allow coffee cake to cool completely before drizzling on the glaze.
  • Prepare the Glaze - In a small bowl, whisk together the powdered sugar, melted butter, vanilla and 1 tablespoon milk. You want the glaze to be thin enough to drizzle over the cooled cake, but not watery. If the glaze is too thick after adding in the first tablespoon of milk, gradually add in a little more milk, ½ teaspoon at a time until you reach the desired consistency. Drizzle topping over cooled cake.

1/2 cup vegetable oil
2 ounces unsweetened chocolate
1 cup water
2 large eggs, room temperature

FROSTING:
1/2 cup butter
6 tablespoons 2% milk

1 cup chopped pecans

Steps:

  • In a small saucepan, combine the butter, oil and chocolate. Cook and stir over low heat until chocolate is melted. Remove from the heat. Add the water; pour into a mixing bowl. Cool to room temperature. Beat in the eggs, sugar and vanilla. Combine the flour, cinnamon, baking soda and salt; add to the chocolate mixture alternately with buttermilk. Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° until a toothpick inserted near the center comes out clean, 30-35 minutes. Remove to a wire rack. , In a small saucepan, combine the butter, milk and chocolate. Cook and stir over low heat until the chocolate is melted. Remove from the heat. Stir in confectioners' sugar and vanilla until smooth; fold in pecans. Spread over warm cake. If desired, sprinkle with additional chopped pecans.

These are the best pancakes that we've ever tried. It was originally just a pancake recipe passed down from my mother which we have enjoyed for a number of years. The only change we have made was adding cinnamon. We love to eat them hot with butter melting over them and smothered in Aunt Jamima's pancake syrup. Awesome for Saturday morning breakfast. And it only takes about 15 minutes! Fry up some bacon or Breakfast sausage to make it even better.
